Delicious buckwheat chocolate hazelnut bliss balls with cooked buckwheat, roasted hazelnuts, and dark chocolate.  Seriously addictive bite-sized treat everyone will love.

Buckwheat Chocolate Hazelnut Bliss Balls

g buckwheat

almond milk

dates

hazelnuts

100 g dark chocolate (85% cacao)

g coconut cream (the thickened cream from a can of coconut milk)

raw cacao powder

Soak buckwheat in water for 3-4 hours. Once the buckwheat has been soaked, rinse it well, and let it drain thoroughly.

Put it in a large pan or a medium pot with 300 ml almond milk. Bring to a boil. Reduce heat to low, cover and cook for approx. 15 minutes (make sure you don&#039;t overcook it). Remove from heat. If there is any liquid left, drain it well and let it cool down completely.

How to cook buckwheat

Melt coconut cream and chocolate over low heat in a medium pot. Set aside and let it cool down a bit.

Combine buckwheat and drained dates in the blender. Blend until you get a thick paste. If the paste is too thick to blend, add 1 tablespoon of almond milk.

Transfer this thick paste to a bowl, add in melted coconut cream and chocolate, raw cacao, and ground roasted hazelnuts and mix everything briefly with a hand mixer until all is well combined. Adjust sweetness if needed.

Place the chocolate mixture in the fridge overnight to firm up. In the morning, scoop out portions of the mixture with a teaspoon and roll them into balls with your hands.

Dip the balls in chocolate or toss them in cacao powder to coat.

Keep the balls in the fridge.

These homemade vegan Ferrero Rocher truffles are truly a delight! With a crunchy chocolate shell on the outside and a smooth and creamy chocolate hazelnut cream on the inside, they are a delicious treat - and perfect to give away to a loved one as a homemade, edible gift. Best stored in the fridge. 

Vegan Ferrero Rocher

hazelnut butter (90 g)

dairy-free cream (85 ml)

milk

maple syrup (30 ml)

tsp sea salt

hazelnuts (extra for chopping)

Create the creamy chocolate filling: Roughly chop the vegan milk chocolate and place it into a heat-resistant bowl. In a separate saucepan, carefully bring the dairy-free cream to a light simmer. Pour the hot cream over the vegan chocolate and set it aside for roughly 5 minutes to allow for the chocolate to melt in the hot liquid. After a few minutes give the mixture a stir and your vegan chocolate ganache is ready to go! To create the vegan Ferrero Rocher filling, stir in the hazelnut butter, maple syrup, and sea salt until smooth. Then set the bowl aside in the fridge for 20 minutes.

Piping into silicone pan: Transfer the creamy chocolate filling into a sphere mold silicone pan. This is easiest to do with a piping bag, but you can also use a spoon. The mix should be enough to create about 20 Ferrero Rocher.  Place a blanched hazelnut into the center of each chocolate sphere. Then transfer the silicone pan into the freezer for 4 hours or overnight.

Shape the Ferrero Rocher: Remove from your freezer. Your Ferrero Rocher filling should now be firm enough to carefully shape it with your hands. Remove the chocolate balls one by one and gently roll them between your hands to create a smooth round shape. Try to work quickly to avoid the chocolate melting between your fingers. Transfer the chocolate back into the freezer for another hour after this until they are solidly frozen.

Coating your Vegan Ferrero Rocher: Melt the rest of the chocolate over a double boiler - if you&#39;re looking to temper your chocolate, please read the notes above. Roughly chop the remaining hazelnuts and place them into a small bowl. Carefully remove the chocolate balls from the silicone pan and gently press them into the roughly chopped nuts. Transfer the chocolate hazelnut ball into the melted chocolate, and carefully lift with a slotted spoon or fork and place on a nonstick surface. Repeat until all chocolate balls are coated and transfer to the fridge for the chocolate to fully set.

Storage: For best results, store these vegan Ferrero Rocher in an airtight container in the fridge. If you would like to store your Ferrero Rocher at room temperature without the chocolate coating melting, you can temper your melted chocolate before creating the coating (please see notes above).

These vegan chocolate truffles are rich and luxurious with a decadent chocolate ganache center smothered in dark chocolate. The perfect dessert for all occasions!

Coconut Cream ((240 milliliters))

Cocoa Powder ((22 grams) Unsweetened, for rolling)

tsp Coconut Oil

Prepare the chocolate ganache. Add the chocolate to a mixing bowl.

Heat the coconut cream to a simmer (you can do this either on a stove top or in the microwave, just be very careful if doing it in the microwave not to overheat and boil it over).

Pour the simmering coconut cream over the chocolate pieces in the mixing bowl. Leave to sit for around a minute to melt, then mix it into a chocolate sauce.

Place into the fridge to set. This will take a few hours (2-3 hours, you'll know it's set when you stick a knife into it and it's solid all the way down).

When set, use an ice cream scoop or a spoon to scoop out even amounts of the ganache and drop it into the cocoa powder, then use your hands to roll it into a ball. The cocoa powder will stop it from sticking to your hands. Place the balls onto a parchment lined baking tray.

When all the balls are rolled, place into the freezer to harden.

Prepare the chocolate coating. When the balls are nice and hard, add the chocolate to a microwave safe bowl and microwave in 30-second intervals bringing out to stir every 30-seconds until completely smooth and melted. Add in your coconut oil and stir in.

Drop the balls into the chocolate one by one and use two teaspoons to manoeuvre the balls in the chocolate and back onto the parchment lined baking tray. Decorate with chocolate shavings.

Return to the fridge for the chocolate to set and enjoy!

switched it up quite a bit, but solid basic recipe with delicious results.

These are amazing! I love chocolate orange so I added  the peel of an orange to the coconut cream while it was heating, then let it infuse for about half an hour, and 1 tsp of Cointreau to the chocolate ganache and It was delicious but subtle, so may try more orange next time. Such a decadent, smooth and creamy ganache! Will definitely be adding this to my vegan treats list! ( Thank you so much for listing the ingredients in grams!)

Being newly vegan, I've been able to find/make vegan versions of pretty much everything I love. When I received a bunch of Lindor truffles for Christmas from my students, I immediately rolled my eyes.  Great, good luck finding a vegan version of this.  But I wanted it so badly, I did a quick search and found this recipe, and I'm so glad I did.  

This was amazing.  Has perfect hard outer shell and creamy soft ganache inside.  I was nervous about them tasting too coconutt-y  (I'm not a fan), but it didn't taste like that at all. Process was very time-consuming but worth it.  I should probably invest in a mini cookie scoop to cut down on time and mess.  Will definitely be giving these as my Valentines gift!

Vegan Chocolate Truffles - Loving It Vegan

These Vegan Chocolate Truffles are the most delicious treat - they're melt-in-your-mouth silky, super creamy, perfectly sweet and most importantly, undetectably dairy-free.

cashew nuts (soaked

cocoa powder

maple syrup

vanilla extract

Salt (to taste)

cocoa powder (for dusting)

Drain soaked cashews and add to a food processor along with all the other ingredients*.

Whizz until completely smooth.

Taste and adjust flavour accordingly.

Put the mixture (keeping it in the food processor but you can transfer to a bowl if you wish) into the fridge and leave for 2 hours to harden – the mixture should be hard enough to easily shape into balls.

Sprinkle cocoa powder onto a plate.

Use two teaspoons to make teaspoon-sized balls of the mixture, then use your hands to roll the mixture in the cocoa powder.

Repeat for the rest of the mixture.

Keep truffles in an airtight container in the fridge for up to 5 days.
