Easy to make and can be prepared ahead of time, this vegan chorizo recipe can be used to amp up any dish! Sprinkle it on pizza, tacos, in a burrito, in a bowl, on nachos, in rice, on top of roasted potatoes, on soup, in a stuffed pepper, or anywhere you like.

Vegan Chorizo Tofu Crumbles

light oil ((such as canola or vegetable))

soy sauce

apple cider vinegar

chili powder

smoked paprika

garlic powder

oregano

black pepper

cumin

coriander

cloves

block (350 grams) extra-firm tofu, (crumbled)

Preheat your oven to 350F (180C). Line a large baking sheet with parchment paper or lightly grease it.

Mix the oil, soy sauce, vinegar and all of the spices together in a large bowl.

Crumble the block of tofu with your fingers into the bowl with the seasoning. Mix the tofu crumbles with the seasoning making sure all of the tofu is evenly coated. Spread the tofu crumbles evenly over the prepared pan. Bake for 25 to 30 minutes, stopping to stir the tofu every now and then. Keep a close eye on it towards the end so that it doesn&#x27;t burn. You want the tofu to be nice and browned. The smaller crumbles will be darker than the larger crumbles, and that&#x27;s ok because it will provide a variety of texture. Enjoy hot or cold.

The classical Spanish sausage made vegan! Vegan chorizo can be eaten as is or fried and added to meals like pizza, paella or stews to make their flavour really shine.

Homemade Vegan Chorizo

onion (finely chopped)

tbsp refined coconut oil

garlic (pressed

tbsp smoked paprika

tbsp dried soy mince

On medium heat, fry the diced onion in the coconut oil until it&#039;s just starting to brown, about five minutes.

Stir in the garlic and take off the heat.

Transfer everything to a mixing bowl. Add the dry soy mince, soy sauce and water. Mix.

Add the smoked paprika, herbs, salt, cayenne pepper and black pepper. Mix again.

Add and stir in the vital wheat gluten, until it is all absorbed by the moist mixture.

Knead a bit to compact the dough as it comes together.

Mixing the dough

Split into individual portions, transfer each onto a piece of parchment paper (large enough to wrap the chorizo and tie the ends, about 20 x 25 cm / 8&quot; x 10&quot; each).

Use your hands to shape sausages out of the portions of dough. Don&#039;t worry if it&#039;s not too perfect, you&#039;ll tidy it up later.

Wrap the parchment around the sausage, trying to make it reasonably tight.

Twist the paper at one end of the sausage and bind it with a piece of string or a wire closure.

Before twisting the other end, just try and press the mixture inside the roll towards the first end, creating a compact and neatly round sausage shape.

Twist and tie the paper at the second end.

Shaping

When your sausages are ready to be cooked, cover the bottom of a saucepan (that can be used with a steaming basket or insert) with about 3 cm of water and insert the steaming basket / insert.

Put your chorizos in the steaming basket, put the lid on and bring the water to a boil.

Turn the heat down to a simmer and steam the sausages for one hour. After a while check that there is a gentle flow of steam coming out from the lid.

Pressure cooker method: You can steam the chorizo in a pressure cooker in a steaming basket and reduce the cooking time to 30 min.

Carefully take the chorizo out of the steaming basket. Before you unwrap the chorizo, let it cool down to room temperature to firm up.

The chorizo gets even firmer when refrigerated for a couple of hours or overnight, making it perfect for slicing.

Vegan Chorizo

This recipe for homemade vegan chorizo is the only one you will ever need. It is spicy and crumbly, with notes of clove and coriander.

block (12 oz.) Tofu, (extra firm)

½ lb. Mushrooms, (finely chopped)

Chile guajillo, (dried, seeded)

Chile ancho, (dried, seeded)

Chile de arbol, (dried)

Garlic

tbsp. Oregano, (dried)

Cumin, (ground)

Cloves, (whole)

tbsp. Paprika, (ground)

Coriander, (ground)

Apple cider vinegar

tbsp. Vegetable oil, (optional)

Remove tofu from package and place in between two small plates. Place a can on top of the plates and leave like this for 30 min.

Bring a small pot of water to a boil. Remove the stems and seeds from the chiles and discard them. Drop the chiles into the boiling water. Turn heat down to the lowest setting and let the chiles sit in the water for 10 min.

Remove the chiles from the water and place in blender. Reserve ½ cup of the chile soaking liquid.

Add the garlic, oregano, cumin, cloves, paprika, coriander, apple cider vinegar, and ¼ cup of soaking liquid to the blender and process until smooth. If necessary add the remaining ¼ cup of the soaking liquid to get things moving in the blender.

Season the chile mixture with salt and pepper and pass through a fine strainer. Set aside.

Drain the water from the tofu and crumble with your hands into a large bowl. Pour half of the pureed chile mixture into the bowl with the tofu and stir to combine. Set aside.

Heat a large sauté pan to high heat and add 1 tbsp. of oil. Once the oil is hot add the finely chopped mushrooms and continue to cook until the mushrooms begin to brown, about 6-7 min.

Lower heat to medium-low and pour in the remaining half of the chile mixture. Stir and continue to cook for 3-4 minutes, until the mushrooms begin to absorb the chile mixture. Remove from pan and place in a large bowl.

Heat a non-stick sauté pan set to medium heat, add 1 tbsp. of oil. Add the tofu mixture and continue to cook until the liquid begins to evaporate and tofu becomes crispy, 7-8 minutes. You can make the tofu as crispy as you like. (Be careful not to overcrowd the pan or the tofu will never get crispy.)

Pour cooked tofu mixture into the bowl with the mushrooms and mix well to combine. Adjust seasoning.

De-stem and shake the seeds out of all the dried chiles. Add them to a pot, cover with water, and bring to a low boil. Reduce the heat and simmer for 10-15 minutes, or until the chiles are soft and pliable. Drain and add them to a blender.

In a dry skillet over low-medium heat, toast the whole coriander seeds until fragrant. Once toasted, add them to the blender along with cayenne, oregano, cumin, cloves, salt, pepper, soy sauce, apple cider vinegar, and water. Mix on high until smooth.

Pour the chile mixture through a mesh strainer into a bowl (make sure to work it through with a spoon or spatula). Set aside.

Heat 3 tbsp of coconut oil over low-medium in a small frying pan. Sauté the minced garlic for 1-2 minutes, then add in the dried TVP and stir to coat in the oil.

Add in half of the marinade and cook until most of the liquid is absorbed. Then, pour in the rest of the marinade and finish cooking until no liquid remains, about 10-15 minutes.

Serve your chorizo in recipes like papas con chorizo, quesadillas, soups, stews, sopes, empanadas, or tamales. Happy eating!

Easy Vegan Chorizo

extra-firm tofu ((organic, non-GMO when possible))

tsp chili powder ((or store-bought))

Tbsp smoked paprika

Tbsp tamari ((or soy sauce if not gluten-free))

Drain tofu. With clean hands or a fork, roughly crumble the tofu in a medium mixing bowl. Aim for pieces about 1/4 - 1/2 inch in size.

Add the chili powder, smoked paprika, cayenne, and cumin and carefully toss to evenly coat the tofu with the spices. Add the tamari, vinegar, maple syrup, and ketchup and toss one more time.

Heat a 10-inch nonstick or well-seasoned cast iron skillet over medium heat. Add 1 Tbsp (15 ml) avocado oil and place half of your tofu mixture into the skillet (amounts as original recipe is written // adjust if altering batch size). Distribute the tofu mixture evenly over the pan so it’s in one thin layer. Cook for 3-4 minutes, undisturbed. It should be sizzling and popping slightly — if it’s not, turn up the heat a bit.

Once the tofu is nicely browned on the bottom, use a spatula to flip sections as evenly as possible to brown the other side for another 3 minutes. Break up the tofu mixture slightly and toss to evenly brown all sides — about 2 minutes.

Place in a dish, set aside, and repeat with remaining oil and tofu mixture.

Best when fresh. Perfect for adding to bowls, burritos, tacos, or vegan paella. Store leftovers in the refrigerator for up to 3 days or freeze for up to 1 month. If you prefer sausage “patties” you can scoop the tofu before cooking and press into 2-inch rounds and freeze to cook later.

Easy Vegan Chorizo | Minimalist Baker Recipes

Spicy, savory, and oh-so-satisfying vegan chorizo sausage links that are gluten-free and soy-free. Just 10 ingredients and simple methods required!

Vegan Chorizo Sausage Links (10 Ingredients!)

Tbsp flaxseed meal ((ground flax seeds))

red kidney beans

½ cups rolled oats ((certified gluten-free as needed))

cremini mushrooms, roughly chopped

chili powder blend ((NOT chili flakes

tsp smoked paprika

- 1 tsp cayenne ((optional))

garlic, minced ((optional))

walnuts, finely chopped

Tbsp avocado oil ((for cooking))

Prepare flax eggs by adding flaxseed meal and water to a small bowl and stirring to combine. Let rest for 5 minutes to thicken.

Drain and rinse the kidney beans, and pat dry with a kitchen towel or paper towel.

In a food processor or blender, pulse the oats until they form a coarse flour — there should not be any whole oats visible.

Add the beans and mushrooms to the oats and pulse a few times to break the beans and mushrooms into smaller pieces. Then add the flax eggs, chili powder, smoked paprika, cayenne (optional, start with the lesser amount), ketchup, garlic (optional), and salt and pepper. Pulse to fully combine, but avoid processing it into too smooth of a paste — leave some chunks for texture. Taste and season with more salt and pepper as needed, more paprika for smokiness, or cayenne for heat. Transfer to a bowl and stir in the chopped walnuts until fully combined.

Scoop 2 tablespoons of the mixture and form into a mini sausage link shape. If it is too sticky, run your hands under some water and try again with slightly wet hands. Using 2 tablespoons will make ~16 sausages, or you can also use a 1/3-cup measurement to make 8 sausages about 6 inches long (amounts as recipe is written // adjust if altering number of servings).

Once formed, place sausages on a plate lined with parchment paper and chill in the refrigerator for 20-25 minutes, until firm and not sticky to the touch.

While your sausages chill, bring a few inches of water to a boil in a large pot with a steamer insert. Remove your sausages from the refrigerator and wrap each sausage in a small piece of parchment paper, twisting the ends to seal. Place sausages in the steamer basket and steam for 30 minutes, until firm and cooked through. Add more water at the 15-minute mark (or as needed) to avoid scorching your pot.

If freezing for later, cool completely and transfer to the freezer. Otherwise, to cook and brown the sausages, heat a large cast iron skillet over medium heat and add 1 Tbsp (15 ml) oil to the pan. Remove the sausages from the parchment paper, add as many as will fit in the pan comfortably, and fry for 5-10 minutes, turning every once in a while until all sides are slightly browned. Repeat with more oil and sausages. You can also cook the sausages on a grill if desired!

Enjoy these on their own or with your favorite breakfast or brunch items. They’d be especially delicious with our Southwest Tofu Scramble, Perfect Roasted Potatoes, Corn Tortillas, and Mango Habanero Hot Sauce.

Store leftovers in a sealed container in the refrigerator for up to 5 days or in the freezer for up to 1 month. They can be cooked on the stovetop directly from frozen.

In a large bowl, add the TVP, as well as the sundried tomatoes if they need to be rehydrated (see notes). Don't stir them together. Pour the boiling hot vegetable broth onto the mixture and let sit for at least 10 minutes to rehydrate.

If rehydrating the tomatoes, remove them now, finely chop them, and return them to the bowl. Stir in&nbsp;the red wine vinegar, tomato paste, and tamari to the mixture. Measure out all of the spices into a separate bowl.

Heat the olive oil in a large skillet or saucepan over medium heat. Add the onion and garlic, and cook for about 3 minutes, stirring frequently, until softened. Add all of the spices and stir well. Cook for just 30-60 seconds or until fragrant.

Add the entire bowl of soyrizo TVP mixture to the pan and stir well. Cook over medium heat, stirring frequently, for about 5 minutes or until excess liquid is cooked off.&nbsp;Enjoy on tacos, on pizza, as a dip, in chili, or in any other way you please!

Chorizo con papas, or sometimes called papas con chorizo, is an incredibly easy Mexican dish that you can use to make tacos, tortas, gorditas, and so many more delicious foods.

Chorizo con Papas or Papas con Chorizo Made Vegan

The first step after chopping up the potato bits, it’s to boil them until they begin just to soften. Drain and set aside.

In a very large pan heat up the oil then add the chopped onion. Sprinkle with a pinch of salt and sauté until soft and translucent.

Once the onion is nice and soft you can add the minced garlic. Sauté for a couple of minutes. Stir now and then to prevent it from burning.

Now you’re ready to add the vegan chorizo. Mix until it’s completely combined with the cooked onion and garlic. Sauté until the chorizo is nice and crispy. If you don’t like it a little crispy then just cook for about 8 minutes or less.

Now you’re going to add the boiled potato pieces. Mix until well combined with the chorizo mixture.

Once everything is well combined you can sprinkle in some more salt. Give the ingredients another good mix. Sauté for 10 more minutes.

After the 10 minutes, you can carefully taste the chorizo con papas and see if it needs more salt or not. If so add it slowly because remember you can’t remove the saltiness!

The chorizos and papa looks amazing! We ate this a lot in my household, and I am excited to try it with my own vegan twist to it.
