Bring this hearty and filling Vegan Cobb Salad to brunch, picnics, or potlucks. Made with tempeh bacon and red wine vinaigrette, it’s easy to customize and loaded with protein.

Vegan Cobb Salad

package tempeh, chopped into 1/2 inch pieces

olive oil

soy sauce

maple syrup

liquid smoke

garlic powder

red wine vinegar

garlic, minced

dijon mustard

oregano

salt

black pepper

romaine lettuce

cherry tomatoes, halved

avocados, sliced

red onion, sliced

sunflower seeds

chickpeas,

vegan cheese, I used Violife's Smoked Cheddar Block

In a large pan over medium-high heat, warm the oil then add the tempeh pieces and sauté for 3-4 minutes, stirring frequently.

Now add the soy sauce, maple syrup, liquid smoke and garlic powder to the pan and stir to coat the tempeh. Cook for another 1-2 minutes, then remove from heat and set aside.

Make the tempeh bacon

In a small bowl, whisk together the olive oil, vinegar, garlic, maple syrup, dijon mustard, oregano, salt and pepper. Or place all ingredients in a small mason jar with a lid and shake until combined.

Make the vinaigrette

Place the chopped lettuce in a large bowl or platter. Arrange the tomatoes, avocados, red onion, sunflower seeds, chickpeas, optional vegan cheese and tempeh bacon in lines over the greens.

Whisk or shake the dressing once more before drizzling over the salad. You may not need all of the dressing. Serve immediately.

Assemble

A vegan Cobb salad recipe that gives you all of the delicious flavors of a traditional Cobb salad along with 19 grams of plant-based protein! Vegan, gluten-free and a perfect meal-sized salad.

Make dressing: Make the dressing by whisking together all the ingredients in a small bowl or glass jar.

Cook tempeh bacon: Cook tempeh bacon following my homemade recipe or according to package instructions, if you haven’t already.

Combine ingredients: Add your greens to a bowl and arrange equal portions of chickpeas, tomatoes, cucumber, carrots, corn, red onion, tempeh bacon and cheese (if using) on top of the greens.

Add avocado and dressing: Just before serving, top salad with avocado and 2-3 Tablespoons of the red wine vinaigrette or your favorite dressing. Garnish with fresh dill, if using.

For mason jar salads: Add 2-3 Tablespoons of dressing to a wide-mouth quart size mason jar. Add ingredients in the following order: onion, carrots, cucumber, chickpeas, corn and tempeh bacon. Add greens and top with cheese. When ready to serve, shake mason jar and dump contents into a bowl. Top with avocado and garnish with fresh dill, if using.

This is SUCH a good salad. I have really been neglecting my health and this is so easy to meal prep and whip up during my lunch break while I work from home. Definitely a staple lunch for me.
