Crispy, thin, gluten-free crackers reminiscent of Wheat Thins! Just 7 ingredients and 1 bowl required for these delicious snacks. Perfect for dipping in hummus, nut butters, and more!

1-Bowl Vegan Gluten Free Crackers

DIY Gluten-Free Flour Blend*

almond meal* ((or sub gluten-free oat flour*))

tsp baking powder

Tbsp flaxseed meal

tsp fresh chopped rosemary

tsp sea salt

garlic powder ((optional))

water

Preheat oven to 325 degrees F (165 C) and line 1 large or 2 small baking sheets with parchment paper (adjust number of baking sheets if altering batch size).

Add dry ingredients to a food processor or a mixing bowl and process or whisk until thoroughly combine.

Then add oil and pulse/use a pastry cutter or fork until crumbly.

Add cold water 1 Tbsp at a time, pulsing/stirring until it forms a semi-sticky dough that’s moldable with your hands and not crumbly. It shouldn’t need more than 5 Tbsp (amount as original recipe is written // adjust if altering batch size).

Remove from processor or mixing bowl and form into a loose ball with your hands. Transfer to a clean surface lined with parchment paper. Lay another sheet of parchment paper on top and use a rolling pin to roll the dough out into a rectangle slightly less than 1/8th inch thick (see photo).

Use a knife, a pizza cutter, or a small cookie cutter to cut the dough into squares (or circles). Makes about 60 squares (amount as original recipe is written // adjust if altering batch size).

Transfer the dough (still on the parchment) to a baking sheet and pop in the freezer for about 10 minutes to stiffen. This will help them firm up and become easier to transfer to the baking sheet.

Once firm, use a spatula to carefully separate the crackers to ensure they aren’t touching or too crowded. This will help them bake evenly.

Bake for 16-22 minutes or until slightly golden brown (be careful not to burn). Remove from oven and let cool.

Enjoy immediately. Store leftovers covered at room temp for up to 1 week or in the freezer for 1 month.

Gluten Free Garlic Herb Crackers

fine sorghum flour

Tablespoons golden flaxseed

coconut sugar ((or Stevia for sugar-free))

baking powder

garlic powder

marjoram

basil

salt

½ Tablespoons cold water

Salt

Preheat oven to 350 degrees F.

In a medium bowl, stir together the flour, flaxseed, coconut sugar, baking powder, garlic powder, marjoram, basil, and salt.

With a fork, cut the coconut oil into the flour mixture until crumbly. Stir in the cold water until a crumbly dough forms.

Press the dough together into a disc and place between 2 pieces of parchment paper. Roll out the dough until it's about 1/16- to 1/8-inch thick (I roll mine out to 1/16 inch). Once it's rolled out, sprinkle lightly with the salt if you like.

Place the rolled dough along with the bottom piece of parchment paper together onto a baking sheet. Bake for 10 minutes.

Remove from the oven and cut into 1-inch pieces, separating the crackers so they can get crisp. Try to cut them as uniform as possible so the crackers can cook evenly.

Return the crackers to the oven, and bake for 10 minutes more. Some of the crackers from the inside of the dough will seem soft at first, but they will get crisp as they cool. If your dough is thicker, they will need a few more minutes to cook (start with 2 minute increments).

Allow to cool completely before putting in an an airtight container. Enjoy!

TB Vegan/Soy-Free Butter (cold, cubed)

In a large mixing bowl, combine all the ingredients except the water.

Knead the cold butter into the dough ingredints and then start adding the 4 tablespoons of water, one-by-one, until the the dough is no longer dry.

Take your cracker dough and roll it out between 2 non-stick silicone baking mats or parchment paper to about 1/8-inch thickness.

Cut about 40, square 1-inch by 1-inch crackers, using a round wheel pizza slicer or sharp knife, re-rolling the dough as needed.

Space the crackers out on a silicone baking mat or parchment paper lined baking sheet and bake them 10-20 minutes. Just until they are golden brown around the edges.

Remove then crackers and let them cool completely before storing them in a airtight, sealed food storage bag or container for up to 4 weeks.

These crunchy homemade sweet potato crackers pack a lot of flavour and are a perfect addition to your next (vegan) cheeseboard! They are created with raw sweet potato and flavoured with balsamic vinegar, peanut butter and maple syrup, making them a wonderful sweet and savoury option that works wonderfully alongside (vegan) cheese, chutneys and Co.These potato crackers are easy to make from scratch with just simple ingredients and equipment required, and they are baked crispy in the oven.

Homemade Sweet Potato Crackers

potatoes

garlic

peanut butter

120 g milled flaxseeds

tsp fine sea salt

tsp black pepper

tbsp balsamic vinegar

maple syrup (or agave nectar)

Grating

Start by shredding the sweet potato into a medium-size mixing bowl. Finely grate the garlic and add it to the bowl, then add in the smooth peanut butter, flaxseeds, salt, pepper, balsamic vinegar and maple syrup.

Resting

Combine everything into a firm dough and set it aside for at least 15 minutes. In the meantime, preheat your oven to 100°C (212°F).

Rolling

Divide the dough into 2 parts for easier handling and roll each half into a firm ball with your hands. Place each ball onto non-stick baking parchment or silicone baking mat, place another sheet on top and use a rolling pin to roll out the dough to roughly 1mm thickness. Carefully remove the sheet on top and use a pizza cutter to gently score the sweet potato dough to pre-cut the shape you want your crackers to be in.

Baking

Transfer the sweet potato crackers to the oven and bake them in the middle of a fan-assisted oven at 100°C (212°F) for 30-45 minutes, rotating the trays halfway through for an even bake.

Cooling

Remove your crackers from the oven once the crackers begin to look dehydrated in the middle and the edges begin to brown. Allow for the crackers to cool for 30 minutes before removing them from the parchment.

Serving

Serve the crackers alongside your favourite cheeses and chutneys!

Easy Herb Crackers

all-purpose flour

rosemary

thyme

onion powder

tsp sugar

tsp miso

butter

tbsp white vinegar (or balsamic vinegar)

Preheat oven to 350 °F (175°C) and line a baking sheet with parchment paper.

To a mixing bowl, add the flour, dried herbs, onion powder, garlic powder, sugar, salt, and baking powder. Stir to combine.

Add the miso, softened butter, and vinegar. Knead until it forms a dough. Feel free to use your hands to mix everything together. The dough should be soft and just very slightly sticky. If it appears too sticky, add a few extra tablespoons of flour. On the opposite, if the dough appears too dry, add an extra teaspoon or two of vinegar.

Place the dough on a sheet of parchment paper and slightly flatten it with your hands. Top with another sheet of parchment paper and flatten the dough into a 1/8-inch thickness (2-3mm) using a rolling pin.

Using a sharp knife or a pizza cutter, cut the dough into small rectangles of about 1x1-inch. Carefully transfer the thin rectangles to the prepared baking sheet. Note: the crackers won&#39;t spread, so there is no need to leave a lot of space between each one.

Bake for 13-14 minutes or until crackers are slightly golden brown. Remove from the oven and let cool for at least 30 minutes before enjoying!

Serve crackers with vegan cream cheese, hummus, or as a savory snack with drinks! These crackers will keep for up to 4 days stored in an airtight container at room temperature.
