Briam is a Greek slow-cooked roast vegetable dish. No need to fry, no need to stir and you can use any vegetable you have in the fridge. It's also vegan and gluten-free! Serve it as a side or main course.

Cornish briam (roasted vegetable traybake)

150 milliliters/¼ pint extra virgin rapeseed oil

400 grams/14 ounces carrots, sliced lengthways

courgettes (about 400 grams/14 ounces), sliced lengthways

onion,

5-6 garlic cloves, sliced

300 grams/10½oz Tenderstem broccoli

tomatoes

parsley,

thyme, leaves picked

200 milliliters/⅓ pint passata

salt and black pepper

150 grams/5½oz young broad beans, podded

150 grams/5½oz peas, podded

grams/5½oz soy beans

spring onions, sliced on an angle

olive oil

purple asparagus spears,

lemon, juice only

shallots,

mint leaves, 10 torn, 5 shredded

chervil

watercress

pea shoots

sea salt and black pepper

Dijon mustard

tbsp red wine vinegar

walnut oil

300 milliliters/10½oz extra virgin olive oil
