Vegan one pot creamy garlic pasta to meet all of your fettuccine alfredo needs with none of the extra dishes.

One Pot Creamy Garlic Pasta

olive oil

garlic (minced)

shallot (finely chopped)

low-sodium vegetable broth ((see notes))

plain, unsweetened non-dairy milk ((see notes))

oz dry fettuccine

black pepper, dried oregano and red pepper flakes (to taste)

chopped fresh basil or parsley (for serving)

Heat the olive oil in a large skillet over medium heat. If possible, choose a skillet that is wide enough to completely fit the fettuccine. Smaller pans will work, but require a bit more fuss to stir and submerge the pasta as it cooks.

Add the garlic and shallot to the pan along with a sprinkle of salt, and stir. Cook for about 2 minutes, stirring occasionally, or until the garlic is softened and the shallot is turning translucent; avoid browning.

Add the vegetable broth, nondairy milk, and salt, and stir. Add the dry pasta and gently prod it around to submerge it under the liquid. If not all of it fits now, you will need to gently push it into the pan after the submerged portion has softened later.

Bring to a boil, then reduce to a simmer. Stir occasionally, gently separating any pasta that starts to stick together. Cook for about 20 minutes, or until the sauce has thickened onto the pasta and the texture is to your liking. If too much of the liquid is cooking off, reduce the heat a little bit, and add more nondairy milk.

Adjust seasoning to taste, and serve with fresh herbs and other toppings if desired. Best served immediately, but leftovers will keep for 3-5 days in the fridge (cool completely to room temperature before boxing up and refrigerating).

Skinny Vegan Fettuccine Alfredo

coconut oil

tbsp. white onion, (diced)

garlic, (minced)

cauliflower florets

vegetable broth

unsweetened non-dairy milk, (I use cashew

cheese yeast

lemon

salt and pepper, (to taste)

fettuccine pasta, (about 1 inch in diameter)

salt

parsley, (minced)

cheese

Cook the fettuccine in salted boiling water for 10-12 minutes, until al dente. Drain into a colander, toss with 1 tablespoon olive oil, and set aside.

Heat the coconut oil in a large pot over medium-high heat. Once melted, add onions and garlic. Cook, stirring occasionally, until onions are translucent, about 5 minutes.

Add cauliflower florets and saute for another 2-3 minutes. Once slightly tender, add vegetable broth, cover and cook until cauliflower is soft all the way through, about 5 more minutes.

Transfer to a high-speed blender and add remaining Alfredo Sauce ingredients. Blend until completely smooth. Set aside.

Toss noodles with the Alfredo Sauce. Top with vegan parmesan, fresh parsley, and freshly ground pepper. Serve immediately.

Skinny Fettuccine Alfredo

This vegan almond milk alfredo sauce is creamy, dairy free, and actually  healthy from hidden veggies. A creamy plant-based dairy free vegan alfredo sauce without cashews.

Vegan Almond Milk Alfredo Sauce (NO Cashews)

lb Fettuccine noodles (gluten free, if desired)

zucchini

onion

garlic

mustard

almond milk

nutritional yeast

parsley (chopped)

Himalayan Sea Salt and Pepper to Taste

Cook pasta according to package instructions.  Drain and return the noodles to the pot.  Set pot aside for later.

Preheat the oven to 425 degrees Fahrenheit.  On a large sheet pan, add the peeled zucchini, onion, and garlic.  Pour the olive oil over the vegetables, add the ground mustard powder, and toss to combine so all the veggies are coated.

Roast in the oven for 40  minutes, flipping halfway.

Scoop the roasted veggies into a blender. Add the nutritional yeast and almond milk and blend on medium speed for 2 minutes.  The sauce should be thick and creamy.  Taste and add salt and pepper if needed.

Pour the sauce over the cooked noodles, and stir well to combine.  Heat on low for a few minutes to warm up the noodles.  Add fresh chopped parsley for garnish, and enjoy!

In a medium pot, bring 3 cups of water to a boil.

Add raw cashews to a bowl. Pour the boiling water over the cashews. Set aside to soak for 20 minutes. After, drain the water.

In a blender, add the soaked cashews, non-dairy milk, nutritional yeast, garlic, lemon juice, mellow white miso paste, onion powder, salt, and black pepper. Blend on high speed until completely smooth and creamy.

Cook the pasta according to the package instructions. After, drain the water and transfer the pasta back into the pot.

Pour the alfredo sauce over the pasta. Gently toss to combine and warm.

Serve fettuccine alfredo with fresh herbs of your choosing, such as basil or parsley. Enjoy!

Made this tonight, served it on chickpea noodles and steamed broccoli. My husband and I both loved it and have warm happy bellies:). Neither of us are vegan but it was absolutely delicious and will be in our regular comfort food rotation.

Geez Louise, that was one good bowl of pasta with YUMMY sauce. Literally, had only light in the fridge and was worn out after whole teaching day. It took seconds just to blend everything and mix. Two happy and full teachers sending hugs!

I gave up hope on bomb Alfredo sauce pasta.
Today I tried this recipe and OMG it was extremely good. I’m so happy you shared this. Mine wasn’t as  creamy it was more nutty since I used a food processor to blend the sauce so it reminded me of Parmesan cheese but still delicious

I sautéed the onions and garlic while the cashews were soaking, and added some veg. Easy and delicious.

My go-to vegan Alfredo sauce, it's amazing! Must have a high speed blender to get the perfect creamy consistency.
