It’s not easy to find healthy vegan sausage made with whole foods. Now you can easily make it at home and even have enough for future meals! These vegan sausage crumbles are oil-free, soy-free, nut-free, and gluten-free, but FULL of flavor and nutrition!

Vegan Sausage Crumbles

cauliflower,

crimini mushrooms

carrots,

yellow onion, quartered

garlic,

sun-dried tomatoes

raw pepitas or walnuts

salt

Preheat the oven to 400F.

In a food processor fitted with an s-blade, process the pumpkin seeds (or walnuts) and sun-dried tomatoes until a fine meal forms, but be careful not to go so far as to puree into a smooth mixture.

Line two rimmed baking sheets with parchment paper.

Remove the pumpkin seed and sun-dried tomato mixture to a large bowl.

Remove the s-blade from the food processor and attach the grating disc.

Shred the cauliflower, mushrooms, carrots, onions and garlic. If you don’t have a shredding attachment, pulse small amounts at a time using the S-blade until finely chopped but not pureed.

Remove the shredded vegetables to the bowl containing the pepita/tomato mixture and stir to combine.

Add the spices into a small bowl and stir to combine.

Fit the food processor with the s-blade (no need to wash first). Add half of the mixture back into the food processor along with half of the spices.

Pulse to combine the spices into the mixture, being careful not to puree (leave some texture).

Remove the mixture to the prepared baking sheet and loosely spread out in an even layer. Repeat for the remaining mixture.

Place both baking sheets in the oven and roast for 25 minutes, stopping halfway through to stir so the crumbles bake evenly.

This recipe makes approximately 6 cups of sausage crumbles (after cooking), which can be further separated into 2 cup portions for freezing. One 2 cup portion is equivalent to 1 pound of sausage after cooking.

Cauliflower Taco Meat - Cauliflower Walnut Taco Filling

walnuts

onion

jalapeno (optional)

cauliflower

tomato

lime

juice of 1 lime

cilantro

black pepper and cayenne

cumin

coriander

garlic powder (onion powder)

oregano

tsp ancho chili powder

chipotle chili powder

cinnamon

Line a large baking dish with parchment. Preheat the oven to 375 deg F (190 C ).

Process the walnuts, onion and jalapeno until coarse mixture in a food processor.

Add cauliflower florets and tomato and pulse a few times to break some of the large cauliflower pieces.

Add the spices, salt, zest, 1 tsp oil and process until the cauliflower is evenly shredded.&nbsp; If using store bought chili blend,&nbsp; add 1/4 tsp or more chipotle chili flakes/powder and dashes of ground cinnamon, clove and black pepper for additional flavor.

Transfer the cauliflower walnut mixture to the parchment lined baking dish. Spread evenly.

Bake at 375 degrees F for 35 to 45 minutes. Move the mixture around twice in between. The onion should start caramelizing and the mixture should be crumbly but not overly dry. (taste the mixture carefully when moving it around the second time and add salt, spices if needed **). Bake until desired consistency.

Cilantro Avocado Cream: Blend all the ingredients with 1/3 cup or more water until smooth. Add more lime juice or salt to taste.

Assemble the tacos in warm tortillas with warm taco meat, salsa, avocado dressing, cilantro, jalapeno/pickled jalapeno and serve. Or add the taco meat to burritos, Nachos, Enchiladas, Salads.

Tacos need a filling that is flavorful, has texture, is easy and versatile. This Cauliflower Walnut filling fits perfectly! All the flavor, all the texture! Change up the spices and herbs for variation in flavor. 

Pulse the walnuts and onion in a food processor, then pulse cauliflower, spices. Then spread the mixture and bake until preferred consistency. No stove top cooking needed. 1 Processor to 1 baking dish.

Change up the flavors to preference. I use my own chili powder blend. Change that up with different Mexican chilies for  flavor variation. Add some bbq sauce for bbq crumble and clumpier. Use Cajun blend or Jamaican jerk blend. This taco “meat” is bean and lentil free. Add some spiced beans or refried beans to the tacos if you like.

CAULIFLOWER TACO "MEAT" - 1 PAN | Vegan Richa Recipes

This easy homemade vegan ground beef substitute is made with TVP and is a perfectly meaty sub for your favorite vegan ground meat. A great copycat recipe for all your favorite recipes you would usually use store bought ground or minced meat in. Use it to veganize any recipe calling for ground beef - from the best plant based lasagnas to tacos and everything in between.

Saute the veggies: Add the refined coconut oil to a large deep non stick pan and turn the heat to medium. Add the minced onions and garlic, stir. Then, add the chili powder, black pepper, cumin, and ground mustard. Stir again until everything is well-coated and continue sauteing for 3-5 minutes until the onions are translucent and fragrant.

Rehydrate the TVP: Next, add your TVP, water, beet powder, soy sauce, and miso paste. Stir thoroughly to incorporate everything (especially the miso paste). Then, turn the heat to medium-low and cook uncovered for 10, stirring often.

Store: This makes great leftovers! Store in an airtight container in the fridge for up to 1 week. To freeze, let the vegan ground cool completely before transferring to an airtight freezer-safe bag or container. Stored like this, it will be good for up to 3 months. We like to freeze this Vegan Ground Beef in our 1/2 cup or 1 cup Souper Cubes, so we can defrost only what we need.

This easy vegan ground beef recipe is made with TVP for the perfect meaty texture. It&#x27;s ready in 15 minutes, has over 14g of protein per serving, and is great in tacos, spaghetti, and more!

Vegan Ground Beef Crumbles (with TVP)

½ of a Vegan Beef Bouillon Cube ((5.5 grams)

½ tbsp tomato paste (26 grams)

Worcestershire sauce (18 grams)

tamari

garlic powder (3 grams)

onion powder (3 grams)

½ tsp smoked paprika (2 grams)

¼ tsp dried oregano (1 grams)

Prepare Vegan Beef Broth: In a glass measuring cup or bowl, combine ½ of a vegan Beef Bouillon Cube with 1 cup hot water. Stir until the bouillon mostly dissolves.

Add Flavorings: To the broth, add tomato paste, vegan Worcestershire sauce, and soy sauce. Stir well until the tomato paste is fully dissolved.

Rehydrate TVP: Place the TVP in a large bowl. Pour the flavored broth over it and let it sit for 5 minutes, allowing the TVP to absorb the liquid and rehydrate.

Cook TVP: Heat olive oil in a large non-stick skillet over medium-high heat. Add the rehydrated TVP and cook for 3-5 minutes, stirring occasionally, until it dries out a bit and starts to sizzle.

Season and Brown: Sprinkle garlic powder, onion powder, paprika, and oregano over the TVP. Stir to combine, then flatten the mixture in the skillet. Allow it to cook for 5 minutes without stirring too much to brown the bottom. Stir and continue cooking for another 5 minutes until the TVP is golden brown and slightly charred. Top with black pepper and salt to taste.

Serve and Enjoy: The vegan ground beef is ready to add to your favorite dishes like pasta, sloppy joes, meatloaf and more.This recipe makes slightly less than 2 cups (275g or 10oz) once cooked, which is roughly 3 large servings or 4 smaller servings.

Tried it! First taste after cooking was i over spiced. Letting it cool to room temp, I tasted again. Omgosh. Absolutely delicious.  I will make larger batches in the future.  Thank you.
