Roasted cauliflower seasoned with Greek spices served with creamy dairy-free tzatziki, and fresh crisp veggies wrapped in warm flatbread – these vegan gyro wraps are easy, healthy and delicious!

Vegan Cauliflower Gyros

cauliflower

garlic cloves,

juice of large lemon

tbsp extra virgin olive oil

tbsp red wine vinegar

oregano

onion powder

tsp cumin

rosemary

salt

tsp black pepper

tsp smoked paprika

tsp coriander

cayenne pepper, optional

flatbread (or naan)

vegan tzatziki Sauce

cherry tomatoes, sliced

cucumber, sliced

red onion,

parsley

olives

Defrost the cauliflower overnight in the fridge or a few hours at room temperature. Cut up any larger pieces so that the florets are all roughly the same size for even cooking. Drain the cauliflower and dry it as much as possible on paper towel or a clean tea towel if necessary. Place in a large bowl.  In a small bowl, whisk together the ingredients for the marinade. Pour the marinade over the cauliflower and toss. Cover and marinate for a minimum of 30 minutes, but a few hours is best.

Preheat the oven to 425°F. Lightly oil a large baking sheet, or line it with parchment paper. Spread the cauliflower out on baking sheet, ensuring there&#039;s space between each floret. Once the oven has preheated completely, place the cauliflower on a middle rack and roast for 25-35 minutes, tossing once half way through. Prepare your toppings and tzatziki.

For the Cauliflower:

Warm the flat-breads by wrapping them in foil and placing them in the oven during the last few minutes of roasting the cauliflower.

Layer the cauliflower, tzatziki, veggies and olives down the middle of a warm flatbread. Fold the sides of the flatbread over the fillings. Wrap in parchment or foil to help make things less messy if desired. Store leftover cauliflower, toppings and flatbread separately - these wraps are best assembled just before serving.

Assembling the Gyro Wraps:

Vegan Gyros With Grilled Tofu And Tzatziki Sauce

tofu, pressed*

oil, I use grapeseed oil

tamari

balsamic vinegar

brown sugar, packed

tomato paste

garlic

pepper

dill

coriander

cumin

cinnamon

recipe 1o Minute Tzatziki Sauce

pitas, naan

-2 tomatoes, sliced

about half English cucumber,

lettuce, romaine or iceberg

red onion, thinly sliced in half moon shapes

hummus

black olives

French fries

herbs cilantro

First press the tofu (see notes) for 15-20 minutes then slice the tofu lengthwise so you have 2 thinner slabs cut each slab in half for a total of four pieces. Lay flat in a large freezer bag and pour over the marinade. Marinade for minimum 1 hour, overnight or up to a couple of days in the fridge.

While the tofu is pressing make the marinade: add ingredients to a bowl and whisk until the sugar has dissolved,

While the tofu is marinading prep the vegetables, set aside

Make one recipe of vegan tzatziki and set aside in the fridge until needed (or prepare a day ahead)

To grill the tofu

remove from marinade, oil both sides of tofu, I use a pastry brush and grill over medium heat on your preheated and oiled grill pan or bbq. (if using bbq make sure the grates are clean and oiled) Cook for 3-4 minutes per side or until you get some good char marks for extra flavour! Remove to plate and drizzle on more marinade (it’s so fabulous) Cut each tofu steak into 4 pieces.

To assemble the gyros

lay a pita on a piece of tin foil or parchment paper. Add some shredded lettuce down the middle followed by some grilled tofu, sliced tomatoes, cucumbers, onions and tzatziki sauce and a twist of cracked black pepper and salt or seasoning salt. Wrap up in the foil, twisting and folding up the end. Enjoy! Makes 4 Gyros. For step by step photos see above post.

This was wonderful, gyros and tzatziki both! We were thinking that we would like to try this marinade on seitan steaks, then cook them on the grill!

Just made these tonight and fell in love! The tofu is top notch on its own, when you add that tzatziki it takes it to the next level. A great flavorful meal I felt great about eating. I didn't have tomato paste and didn't want to add the sugar so I used 1 tbsp ketchup instead. Also cut the tofu into thinner slices, just my preference, they came out crispy and chewy and so flavorful. Definitely making this again. Also thinking the tofu would be awesome in a Greek salad
