Vegan Ravioli

semolina flour

aquafaba (drained from one can of chickpeas)

Vegan Almond Ricotta Cheese

In a large bowl, mix semolina flour and all-purpose flour.

Drain a can of chickpeas and save the water - this is aquafaba. Set the chickpeas aside for another use. To the bowl, mix in aquafaba and water.

Mix until combined and knead with your hands for a minute until the dough is smooth. If the dough is too wet and sticky, add flour - one tablespoon at a time. If the dough is too dry, you can add more water - one tablespoon at a time.

Cover in plastic wrap and set dough to rest in the refrigerator for 30 minutes.

Meanwhile, make your Vegan Almond Tofu Ricotta Cheese. Set aside.

After 30 minutes of resting, remove dough from plastic wrap. Sprinkle a light layer of flour on a clean counter or table. Using a rolling pin, roll dough until smooth and thin.

Using a small cup or cookie-cutter, cut dough into circles. Ball up the unused dough and roll it out again, repeat until you run out of dough. (You can also cut them into even squares with a sharp knife or pizza cutter.)

Place a small amount of Vegan Almond Ricotta Cheese in the center of the dough. This depends on the size of your circle. We used about a teaspoon of ricotta for a circle that was 2.5 inches wide.

Spread a small amount of water around the outside of the dough with your finger. Place another dough circle on top and press around the edges to seal.

To cook - drop a few ravioli into salted boiling water for 6-7 minutes. They will start to float once they&#039;re almost finished. Remove with a slotted spoon. Don&#039;t overcrowd your pot, cook them in batches. Serve warm with your favorite sauce.

Vegan Chicken-Style Tofu Cutlets

Pre-heat Oven

If baking, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Press Tofu

Press the tofu block using a tofu press for 10 minutes. Once pressed, drain the tofu and cut into 8 slices.

Bread Tofu

Set-up 3 shallow bowls with your breading ingredients. In the first bowl, add the flour.In the second bowl, add the water and use a whisk to dissolve your bouillon cube or bouillon base, then add the cornstarch and whisk to combine.In the third bowl, add the breadcrumbs.Dip each tofu slice in each bowl, one by one. First in the flour, then the water/bouillon/cornstarch, then the breadcrumbs. Coat evenly.

Bake Tofu

Spray cooking spray evenly along the parchment paper. Place the tofu cutlets on the baking sheet. Then spray cooking spray lightly on top of the tofu slices. Bake for 30 minutes, flipping halfway through.

Pan-fry Tofu

In a large pan over medium heat, melt the coconut oil. Add each slice one by one but avoid over-crowding the pan. Pan-fry each tofu slice until golden brown on the bottom, then flip over and pan-fry on the other side. Place finished cutlets on paper towels to soak up excess oil.

Vegan Spaghetti &amp; Meatballs Recipe

marinara sauce or Easy Marinara Sauce

Boil 1/2 cup water. Place the oats in a bowl and cover with the boiling water. Soak 5 minutes until the water is fully absorbed.

Meanwhile, wash and dry the red potatoes, leaving the skin on. Chop them into quarters and place them in the bowl of a food processor. Pulse until the texture is evenly chopped and has a consistency like rice (scrape once and pulse again to ensure there are no large chunks). Transfer the potatoes to a clean, dry towel and squeeze out the moisture by wringing the towel a few times (using a dark towel is best because the red skin can color the towel). Then measure out 1 1/2 cups of the chopped potatoes (discard any remaining).

Peel the garlic. To the food processor, add the cashews and garlic and process until finely chopped. Add the potatoes, soaked oats, oregano, onion powder, chili powder, cumin, kosher salt, and black pepper. Pulse a few times until fully combined.

Form the potato mixture into about 1-inch wide balls by squeezing the dough together, then rolling it lightly, making about 28 in all. Place the balls on a parchment-lined baking sheet. When ready to fry, cover the entire bottom of a large frying pan with a layer olive oil and heat at just over medium heat. Place the balls into the oil; it should lightly bubble when the balls meet the oil (if not, adjust the heat). Fry the balls in two batches, turning each one frequently until all sides are golden brown, about 8 to 10 minutes per batch. Take care of the hot oil, as it may spit. Remove the balls to a plate lined with paper towels. (Alternatively, you can bake the balls in a 400F oven on a parchment-lined baking sheet. Bake 15 minutes, then flip and brush with olive oil; bake another 25 minutes until browned and crisp.)

Meanwhile, bring a large pot of salted water to a boil for the pasta. Boil the pasta until al dente, following the package instructions. If the pasta finishes before the meatballs, place it back into the pan with a drizzle of olive oil to prevent sticking.

Serve the meatballs with the pasta covered in high-quality marinara sauce (your favorite brand, or homemade if desired), and top with Vegan Parmesan.
