Vegan Tikka Masala with Cauliflower ( stove top or Instant Pot )

coconut oil, olive oil

shallot – chopped

ginger

garlic cloves, rough chopped

cumin

coriander

turmeric

½ teaspoon paprika or chili powder

garam masala or curry powder

mustard seeds– optional

fennel seeds– optional

fenugreek leaves– optional

salt

diced tomatoes (or two medium tomatoes, diced)

coconut milk

red bell pepper – big diced

cauliflower – sliced into 1 inch pieces,

lemon

cilantro

Heat oil in a large heavy bottom pot or Dutch oven over medium high heat. ( see notes for Instant Pot)

Add shallot, ginger and garlic, and reduce heat to medium to prevent burning, stirring frequently about 3 minutes until fragrant and golden. Add spices, seeds and salt and lightly toast, while stirring 1-2 minutes, which will enhance their flavor.

Add diced tomato, cook 2 more minutes, then add the coconut milk and stir to incorporate, bringing to a simmer. Add cauliflower and red bell pepper, give a stir, cover and let simmer 10-12 minutes on medium low heat. Check the cauliflower &#8211; it should be just tender, and continue cooking uncovered until desired tenderness (the smaller you cut the pieces the faster this will cook).  Taste, add a squeeze of lemon juice. Add more salt if necessary.

Serve in bowls over rice or with naan or pita bread. Garnish with cilantro.

This was incredibly delicious. I wasn't sure about the tomatoes at first but I'm so glad I decided to give it a shot. The perfect spin on our curry night. I added zucchini and other veggies, will definitely be making again!

Thank you for sharing this tasty dish!  I followed the recipe except for the fenugreek leaves (will have to research those).  I also added some garbanzo beans for protein.  It is just perfect!  The spices are just right.

My entire family loved this recipe. I served it with basamati rice and naan bread. It was easy, quick and flavorful. I added asparagus and zucchini to it as well.  Yum!

This vegan keto butter cauliflower ticks all the boxes with its combination of spices, warming flavours and simplicity of ingredients.

cauliflower

400 ml canned full-fat coconut milk

g shallot (or white onion)

tbsp extra virgin olive oil

tbsp coconut oil (measured solid)

tomato paste

tsp garam masala

tsp medium chilli powder

Cayenne pepper

tsp salt

tsp minced garlic (optional)

Melt the coconut oil in a pot over...

Melt the coconut oil in a pot over medium heat, when it's warm add the finely chopped onion (and garlic, if you are using it) and cook, stirring frequently, for a couple of minutes.

Add the spices and the tomato paste: stir...

Reduce the heat and add in the same...

Reduce the heat and add in the same pot the coconut milk. Mix well and cook for approx. 10 minutes until you get a creamy sauce.

Add the cauliflower and cook for approx. 10 minutes or until tender. Add the olive oil and mix well.

Taste and adjust the amount of spices if...

Flaxseed oatmeal: Hot Diggity! Here's an effortless keto &amp; low carb alternative to oatmeal: flaxseed oatmeal! This flaxseed porridge is a breakfast with a boost, think: healthy fats, protein &amp; fiber without the carbs. Also it's supremely customizable on the flavor front.
The dream of breakfast is very much alive with flaxseed oatmeal.

Low Carb Flaxseed Oatmeal (Flaxseed Porridge)

flaxseed meal or 2.5 tablespoons whole flaxseeds

cup- 1 cup milk (more if you almond milk)

cinnamon

Measure your nuts and flaxseed meal (or whole flaxseeds) and add to a blender or food processor. Run about 30 seconds until a coarse meal/flour is reached.

Add your flaxseed meal base to a pot, add milk, cinnamon, and sweetener of choice and simmer over low heat for 3-5 minutes. This will cook and thicken quickly! Don&#8217;t walk away.

Adjust the consistency as needed depending on your taste- I use 3/4 cup but add more liquid to reach the consistency you desire. You can also use water instead of milk!

Microwave option

Follow step 1 but instead of adding to a pot, add ground nut/seed mix and all other ingredients into a bowl &amp; microwave for 1 minute. Stir and add liquid as needed, microwaving in 30-second increments until desired consistency is reached.

Tried this flaxseed oatmeal with regular milk and heated it on the stovetop. It was great and I will make again thanks. 

Do you think I can just pregrind the nuts/flaxseeds and cinnamon/ xylitol in advance for the week?

Have made this flaxseed oatmeal for breakfast several times this week.

Tried this once, plan to have it for breakfasts next week for my son and me. Once the nuts are ground up the oatmeal is a 3 minute breakfast in the microwave. PERFECTION!

I've been using this recipe to meal prep keto breakfasts and changing up the flavor by adding different toppings and nut butter, regular butter, nuts, and such. 

I'm having such a hard time keeping on with keto during all this but this recipe has helped me at least for the mornings! I have a ton of nuts and seeds on hand, and flax seeds. I can pretty much use any combination of nuts/seeds right? As long as the flaxseeds are there to thicken it all up it'll be fine? Thnx

I've been mixing yogurt and sugar-free chocolate chips in after cooking it up. This is a good low carb breakfast.

 I found I have to stir and thin it with more milk the next morning if I make a double batch. It seems to thicken up in the fridge overnight but is really lovely.

Works great subbing almond flour for almonds &amp; skipping the blender! I added 1/2 cup frozen blueberries (paleo) instead of stevia.

OMG! This is fantastic! I was nervous that it wouldn't taste very good. But it's so yummy!!! I'm a Keto girl and I was missing hot cereal in the mornings. Oatmeal etc. And this fixed that. I added real grass fed butter and a splash of heavy cream. Didn't have blueberries this time but I will try that next time. I'm in love with this recipe!!!! Thank you so much 💜

Just what I was looking for. I am on keto, so just wondering though, what are the net carbs in this? I’ve never seen more fiber than carbs in a recipe before? Thank you!

I made this often, I usually use a nut blend flour or almond meal, instead of grinding nuts.  I add dried cherries or blueberries and hemp seeds and make it with water.   I add a dash of cream before I eat it.   If I go backpacking I add powdered coconut cream.

In re net carbs:  the net carbs is the remaining sugars posted in the  nutritional information  -- 1.6 g. If you use different milk, read the label for carb information and make a change if necessary.
