One Pot Vegan Lasagna Soup

olive oil

yellow onion, diced

tomato paste

carrots,

garlic cloves, minced

Italian seasoning

black pepper,

sea salt,

(1180 mL) low-sodium vegetable broth

(710 mL) water,

(225 g) Campanelle pasta

(85 g) baby spinach

Vegan Ricotta

mozzarella cheese (optional)

basil

Aromatics: warm the olive oil in a large dutch oven or heavy-bottomed pot. Add the onion and a pinch of salt and sauté for 5 minutes, stirring occasionally. Add the carrots and stir in the tomato paste and sauté for an additional 3 minutes. Finally, add the garlic, Italian seasoning, black pepper, and 1 teaspoon salt. Sauté for one more minute, until the garlic is fragrant.

Make the Broth

Add the crushed tomatoes, diced tomatoes, and lentils to the pot. Pour in the vegetable broth and water and increase the heat to high. Reduce the heat to medium-high once the soup begins to boil. Simmer for 10 to 12 minutes, stirring the soup occasionally. The lentils should be almost fully cooked before proceeding. 

Pasta

Add the pasta to the pot and simmer for 5 to 7 minutes, stirring occasionally, or until the pasta is cooked to your liking. Reduce the heat to medium if the soup starts to splatter, but maintain a simmer. Turn the heat off and stir in the spinach until wilted. Season with additional salt and black pepper to taste, if necessary. If the soup is too thick you can thin it out with water (or more vegetable broth).

Serve

Divide the soup into serving bowls and top with 1-2 tablespoons of vegan ricotta, shredded vegan cheese, and fresh herbs (or as desired). Serve warm; leftovers will keep in the fridge for up to 5 days.

This healthy one-pot vegan lasagna soup recipe combines all the delicious flavors of traditional lasagna with the simplicity of soup. It&#39;s packed full of flavor and healthy vegetables, making it the perfect easy comfort meal. This lasagna soup recipe is vegan, gluten-free, oil-free, refined sugar-free, and high-protein.

Healthy One Pot Vegan Lasagna Soup

zucchini

mushrooms

onion

garlic

vegetable broth

14.5 oz can diced tomatoes

tomato sauce

garlic powder

tsp smoked paprika

lasagna noodles

water

textured vegetable protein

block extra firm tofu

almonds

yeast

tsp sea salt

In a large pot, sauté diced zucchini, diced mushrooms, chopped onion, and minced garlic in olive oil (if using) until softened.

Saute Vegetables:

Add vegetable broth then diced tomatoes, tomato paste, and tomato sauce to the pot. Mix well.

Create Tomato Base:

Stir in garlic powder, smoked paprika, nutritional yeast, and Italian Seasoning for additional flavor.

Add Spices:

Break up the lasagna noodles into small pieces and add the additional cups of water to the pot. Set the heat to medium heat and allow the broken lasagna noodles to cook until al dente.

Add Lasagna Noodles:

Once you have tender noodles, add the TVP to the soup. It doesn't take long to cook and only needs a few minutes to absorb liquid and flavor. Once incorporated, turn to low heat and allow to simmer for 15 minutes.

Incorporate TVP:

In a blender, combine the extra firm tofu, slivered almonds, sea salt, and nutritional yeast and blend until a smooth ricotta cheese texture has been achieved.

Prepare Tofu Ricotta:

Spoon the Homemade Vegan Ricotta Cheese on top of individual servings of the soup. Serve and enjoy!

Instant Pot Lasagna Soup - Vegan Lasagna Soup

water broth ((2.5 to 3 cups noodles

black and white pepper

pepper flakes (, i use about 1/3 tsp)

spinach (, optional)

garlic bread to serve (optional)

tomato fennel seeds (optional add ins)

Heat oil in Instant pot on saute mode. When hot, add onion, garlic and a pinch of salt. Cook for 2 mins, stirring occasionally. (See Recipe notes for Saucepan instructions )

Add veggies and mix in. Add red lentils, tomato purée, tomato, salt, seasoning, onion powder, garlic powder and mix in. Add a tbsp of tomato paste for additional tomato flavor (optional). Add lasagna sheets and water and mix in. (make sure to use small pieces and mix them in well else they tend to stick) 

Close the lid and Pressure cook on manual hi for 3 mins **. Let the pressure release for 10 minutes, then if there is still pressure in the pot, manually release carefully and open.

Mix in the black pepper, pepper flakes and nutritional yeast. Taste and adjust salt and flavor(italian herbs, onion/garlic powder). Add some more salt, broth, tang(lemon) if needed to balance.

Fold in the spinach if using. Let sit for a minute. Then serve with pesto/basil and/or vegan ricotta/mozzarella, and garlic bread. You definitely need some vegan cheese for a more lasagna like flavor. Fold in some into the soup while still hot and use more for garnish.

I love this recipe and have made it multiple times. However, we are trying to find more slow cooker rather than pressure cooker recipes to help time dinners. Can you recommend slow cooker heat level and timing for this recipe?

Another huge winner! I love how easy to customize based on what we have, w/o straying from the recipe. Adding red wine is nice but obv not necessary. And if we skimp on veg &amp; water, it gives "Hamburger Helper" - yay, nostalgia! This Instant Pot Lasagna Soup is hands down my FAVORITE pantry ready recipe!  It has such amazing flavors and is so easy to make.  I recommend you keep the pantry ingredients at the ready!

i absolutely loved this and so did my meat eating husband. Made exactly as directed however no carrots with the veg. I did use Rao's tomato basil sauce for the sauce component. I also used diced tomatoes from Aldi that already have garlic, basil and oregano in them... and therefore cut out the additional garlic and onion powder and Italian seasoning. I used "oven ready" lasagna noodles from Barilla and I stirred in a dollop of ricotta and a handful of shredded mozz (these were the real thing as i'm not strict on veganism). It was TO. Die. FOR! Can't wait for leftovers tomorrow. OH and a friend gave me some sourdough bread they made and I put that in the air fryer as garlic bread. Night night!!!

This soup is satisfying and comfort food made in 1 pot and ready within minutes. It comes together quickly with short active time. Make it in the Instant Pot (pressure cooker) or a Saucepan (see recipe notes on post), but definitely make it. I love the soup with some extra garlicky topping like garlic bread or garlic olive oil and some fresh basil or pesto. Lentils make up the protein. If using brown lentils, use cooked lentils. Veggie crumbles will also work wonderfully.

Heat the olive oil in a Dutch oven or large stock pot and add the onion, carrot and celery stalks. Cook over medium heat for 5 minutes, stirring occasionally, until the veggies soften a bit.

Stir in the broken lasagna sheets or pasta and cook for another 10 minutes or until the pasta is al dente. Add some extra stock if the soup starts to look too thick as the pasta expands.
