This recipe for Vegan Smoked Salmon  is a great alternative to traditional lox. Thin strips of carrot are marinated in sauces and spices to make the perfect compliment to a bagel or served as a healthy vegan appetizer with crackers. Perfect for a Christmas breakfast or party food.

Vegan Smoked Salmon (Carrot Lox)

carrots (220 grams)

Sea salt

soy sauce ((

olive oil

lemon juice

smoked paprika

garlic powder

maple syrup

black pepper

Bagels

Vegan Cream Cheese

Dill

Preheat the oven to 350f (175c) and line a baking sheet with baking paper.

Peel the carrots and roll them in lots of salt, then place on the baking tray and bake for 30 minutes, turning occasionally, until soft. Allow them to cool.

Rub the salt off the cooled carrots, then use a vegetable peeler to cut the carrots into ribbons.

In a medium bowl, combine the carrot smoked salmon marinade ingredients.

Add the carrot lox strips to the bowl of marinade and refrigerate overnight or a minimum of 30 minutes (the longer the better as it gives more time for the flavors to infuse the carrots).

Serve on a bagel with vegan cream cheese and top with a sprig of dill.

Vegan Lox (Carrot Smoked Salmon)

This homemade vegan carrot lox with healthy omega 3 fats is easy to make and just as flavorful as real smoked salmon! It makes a great vegan fish alternative that will definitely surprise your family and friends at your next weekend breakfast or brunch!

Vegan Carrot Lox

carrots (300 g)

tsp liquid smoke

tsp tamari or soy sauce

tbsp rice vinegar (* see notes)

neutral oil (e.g. canola or sunflower oil)

¼ tsp sea salt (or

maple syrup (optional)

nori

Use a vegetable peeler or mandoline to slice the carrots lengthwise into thin ribbons.

Place carrot ribbons in a steaming basket or heatproof sieve in a large pot with a bit of water. Place lid on top and steam for about 5 minutes until carrots are soft but not mushy. Adjust time as needed.

Gently remove carrots from basket and place in a bowl. Allow to cool slightly but not completely. (They should be still warm when tossed with the marinade.)

Stir together the ingredients for the marinade. Then add to the warm carrot ribbons and gently toss to coat.

Transfer to an airtight container or ziplock bag along with the nori sheet and seal tightly.

Refrigerate overnight to allow the carrots to absorb the flavors.

Serve as desired, such as on toasted homemade bagels with vegan cream cheese or cashew ricotta fresh dill, and a squeeze of lemon juice.

Beet Salmon / Vegan Lox

chioggia beet ((about 3 cups))

Tbsp tamari sauce

Tbsp vegetable oil

tsp salt

food coloring

Peel and slice the beet thinly (about ¼&quot; thick). Add them to a pot and cover with water. Boil until beets are fork-tender, about 20 minutes.

Meanwhile, blend all the marinade ingredients together in a glass dish.

When the beets are cooked soft but not falling apart, drain them and let them cool 5 minutes. Then add them to the marinade dish, coating each piece well with marinade.

Cover the dish air-tight and let rest in the fridge at least 2 days. They will turn completely pink. Serve on bagels or rye bread with vegan cream cheese and garnish with fresh dill. Store beet salmon in the fridge up to 2 weeks tightly covered.
