A simple, creamy and delicious Instant Pot vegan mac and cheese that you and your picky eaters will love! It&#039;s cheesy, it&#039;s EASY and comes together in no time at all!

Instant Pot Vegan Mac and Cheese

raw cashews*

water (divided)

yeast

tbsp apple cider vinegar

sea salt

onion powder

smoked paprika

lb (16 oz) macaroni pasta

Add all the ingredients (EXCEPT the pasta AND using ONLY 2 cups of the water) to a high speed blender and process until smooth and creamy. Transfer to your Instant Pot and add the remaining 3.5 cups of water and stir. Then place the pasta on top and gently push it down into the sauce.

Close the lid and ensure the valve is set to the sealing position. Then cook on high pressure for 4 minutes (it will take about 10 minutes to reach pressure) and quick release immediately once the timer is complete. Open the lid once safe to do so, give everything a good stir, and serve.

Instant Pot Directions

Bring a large pot of water to boil and cook your pasta according to package directions. Then drain and return to the pot.

Meanwhile, add the cheese sauce ingredients (using ONLY 2 cups of the water) to your blender and process until smooth. Pour the sauce over your drained pasta, mix well, and serve.

I'm finally getting around to thanking you for this wonderful, easy and delicious recipe, which I've made countless times over the past couple of years. It is my go-to recipe when I'm feeling the need for some comfort food or want a fast and easy dinner or lunch. The only negative I can think of is that I can never ever limit myself to one serving and tend to overstuff myself every time I make it 😋.

This is BY FAR the best vegan mac and cheese I’ve ever made!!! And I have tried so many. I’m so happy to find this and it will be on our regular rotation for sure. Five stars for sure.

This was so easy and delicious! My 7 year old had seconds and then asked for more for her bedtime snack. Win! I added peas after the pasta was cooked. I also got the burn notice (8qt IP) but just turned it off and set a timer for ten minutes. Pasta was definitely done, it probably only needed 4-6 min. I’ll make it again for sure! Served with a little kimchi salt for some spice, and added a clove of garlic to the blender sauce as others had suggested. I think this is the best vegan Mac and cheese recipe we’ve tried!

Vegan Instant Pot Mac And Cheese

cauliflower (use stems too) (0.90)

water

oat milk (unsweetened) (1.18)

yeast (2.28)

tsp ground turmeric (0.02)

tsp ground paprika (0.02)

salt (0.01)

raw cashews (2.60)

lemon juice (0.19)

tsp msg (optional) (0.02)

oz whole grain macaroni pasta (0.99)

peas (0.14)

Put the chopped cauliflower and 1 cup of water in the Instant Pot and cook with high pressure for 7 minutes. Do a quick release when done. Drain the excess water and set cauliflower aside.

Meanwhile, into a blender add: 2 cups oat milk, 6 tablespoons nutritional yeast, 1/4 teaspoon turmeric, 1/8 tsp of paprika, 1 teaspoon of salt, 1/4 cup of cashews, 3 teaspoons of lemon juice and 1 teaspoon of MSG. Add in the cooked cauliflower and blend at high speed until totally smooth. If your blender is small you may need to do it in two turns. It will make about 6-5 cups of sauce.

After you have cooked the cauliflower and removed it from the Instant Pot, add in 16 oz of macaroni pasta and 4 cups of water to the Instant Pot. Put the lid on, set the valve to sealing, and pressure cook (or press Manual) for 2 minutes. Do a quick release when done.

Pour the sauce over the cooked macaroni in the Instant Pot and stir to combine well. Stir in frozen peas if desired. The sauce will seem thin at first, but will thicken up after 5 minutes.
