Coconut Mint Chip Shake

coconut milk

baby spinach

banana (frozen)

mint leaves (stems removed (about 10–15 sprigs))

tsp agave nectar

tsp pure peppermint extract

chocolate chips

Combine all of the ingredients except for the chocolate chips in a blender.

Blend until smooth.

Pour into a chilled glass and garnish with chocolate chips.

Add bananas to a food processor and process until broken up into little pieces. Add peanut butter and process again.

As mixture starts to come together, add the milk a splash at a time, allowing mixture to get more smooth between each addition.

Once the mixture is totally smooth, add a dash of cinnamon and process for another 10 – 15 seconds. Taste and add a dash of maple syrup if needed (only if your bananas aren&#039;t totally ripe).

Transfer milkshakes into two jars. Top with peanut butter and a little quinoa. Stir gently with a knife so you get that swirling effect.

Place the plant-based milk, cinnamon, vanilla, and hemp seeds (if using) into a blender and mix until a milky consistency forms. Add in the coffee and sliced bananas and continue mixing until smooth.

Add in the ice last, and blend on high until there are no chunks remaining. Taste for sweetness and add your favorite plant-based sweetener (if using). Pour into a glass and enjoy with a straw.

To a high-speed blender, add coconut milk first, then the frozen banana and ice cream.

Blend on high speed until smooth and creamy, and no chunks of banana remain. Taste and adjust the flavor and consistency if needed, adding more ice cream for sweetness or coconut milk to thin it out.

Serve right away in a glass and top with whipped cream if desired.

ICE CUBES: At least 6 hours before you wish to enjoy your shakes, prepare the chocolate coconut milk ice cubes.

For the ice cubes, place the coconut milk, cashew butter, maple syrup, cocoa powder, vanilla, and salt into a high-speed blender and blend until smooth — about 1 minute. Taste and adjust, adding more cocoa powder or maple syrup if desired. Transfer the mixture to an ice cube tray — it should make ~14-16 standard-size ice cubes. Freeze for at least 6 hours.

MILKSHAKE: To a high-speed blender, add all of the coconut milk ice cubes, along with 1/2 cup (120 ml) of dairy-free milk (amount as recipe is written // adjust if altering batch size). Pulse or blend until all of the ice cubes have completely broken down and you have a thick, smooth consistency. You may need to stop and stir a few times to get it moving, or add more almond milk 1 Tbsp (15 ml) at a time until it mixes more easily. Use the blender’s tamper if needed, pressing down to help it mix.

Once you have achieved a thick and smooth consistency, serve and enjoy immediately!

You can freeze leftovers back into an ice cube tray for another milkshake, or into popsicle molds for a creamy, chocolaty treat!
