This deliciously sticky vegan orange cake is incredibly moist, made with ground almonds and yoghurt, and finished with an orange drizzle syrup.

Sticky Vegan Orange Cake

oranges

250 g self-raising flour

tsp bicarbonate of soda

225 g caster sugar

g almonds

tbsp cornflour

ml oil

200 g dairy-free yoghurt (unsweetened)

orange

75 g icing sugar

Cut the oranges into slices about half a centimetre thick, removing any seeds.

Bring the sugar and water to a simmer in a large saucepan and add the orange slices.  Simmer for 15 minutes, turning occasionally to make sure they are all fully submerged.

Remove the slices from the syrup and set aside to cool.  Discard the syrup.

Grease a 23cm loose-based cake tin and line the bottom with baking parchment.

Arrange the orange slices in the tin, starting from the centre and working outwards, overlapping them slightly until all the slices are used up.

To make the orange slices:

Preheat the oven to 180C (fan) / 350F / Gas Mark 4.

In a large bowl combine the flour, bicarbonate of soda, caster sugar, ground almonds and cornflour.

In a jug, mix the oil and vegan yoghurt, then add the zest of the remaining orange (you will use the juice for the orange syrup).

Mix the wet ingredients into the dry until completely smooth.

Pour the batter into the tin over the orange slices, and gently smooth it to the edges of the tin.

Bake for 30 minutes or until an inserted knife or skewer comes out clean.

To make the cake:

In a small jug or bowl mix the juice of the orange with the icing sugar.

Microwave for 1 minute on full power (or simmer in a saucepan until slightly thickened) then set aside to cool for 5 minutes.

Use a cocktail stick or skewer to prick the cake all over (whilst it is still in the tin), then spoon over the orange syrup, reserving about 1 tbsp of syrup.

When the cake is completely cool, turn it out onto a serving plate.  Remove the baking parchment and brush the orange slices with the remaining orange syrup.

How to make your Vegan Orange Cake

This Vegan Orange Cake with Olive Oil is tender, buttery, and packed with orange flavor! It's the perfect vegan snacking cake to enjoy during citrus season.

Vegan Orange Cake with Olive Oil

(194 g) all-purpose flour

cornstarch

salt

baking soda

baking powder

(180 ml) non-dairy milk

olive oil

(102 g) cane sugar

(60 ml) freshly squeezed orange juice, strained*

applesauce

vanilla extract

almond extract

orange zest (about 1 orange)

Prep

Preheat the oven to 350F. Grease a 8 or 9” springform pan and set aside.

Dry Ingredients

Whisk the flour, cornstarch, baking powder, baking soda, and salt together in a large mixing bowl.

Wet Ingredients

In a smaller bowl, whisk the non-dairy milk, oil, orange juice, sugar, applesauce, vanilla, almond, and orange zest together, until the oil is emulsified. 

Combine

Slowly add the wet ingredients to the dry ingredients while whisking the two together. Mix well until no dry patches of flour remain, but be careful not to overmix; some small lumps are ok. Pour the cake batter into the prepared pan and smooth the top with a spatula. 

Bake

Bake in the middle rack of the oven for 30 to 32 minutes for a 9” pan, longer for a smaller pan. The cake is done when the top is golden and a toothpick inserted in the center comes out cleanly.

Cool &amp; Serve

Place the cake pan on a cooling rack and let the cake cool completely in the pan. Remove the cake and transfer to a serving platter, then dust with powdered sugar, slice, and serve. Store any leftovers at room temperature for up to 5 days, or freeze for up to 2 months.

This is so incredibly easy and delicious. I can’t wait to experiment with other flavors (grapefruit cardamom…?). This will definitely be my new go to cake for everything. My kids devoured it. I can confirm that dairy free yogurt worked as an excellent sub for applesauce. It cooked up perfectly. Perfect crumb. Perfect level of sweet. Really perfect in every way. I used an 8” pan and cooked it for ~ 10 minutes longer.

This is delicious! I thought it was great on its own but I added a simple icing (powdered sugar/milk/orange zest) for my kids and everyone loved it.  I will definitely be baking this again!

This cake was delicious! I topped it with sliced almonds before baking and it turned out amazing, my non-vegan family loved it and I will definitely make it again in the future since it was such a crowd-pleaser.

I've never had good luck baking vegan cakes, but this turned out perfectly!  I baked it in a loaf pan, and it came out super fluffy and soft.  The subtle orange color and flavor makes it extra fun :)

I’ve made this recipe three times now. If you want to impress guests, make this cake. Despite the simple and affordable ingredients, this cake tastes totally luxurious. Bakes up perfectly in a pie dish.

Have made this cake twice now and love it! Unfortunately I can't get the cake as nice as yours but there are 1 or more cracks in it. I follow the recipe closely and everything is at room temperature. Do you have any other tips for preventing those cracks? And which non dairy milk do you recommend in this recipe?

Absolutely one of the best dessert recipes I’ve ever made. The flavor is so rich and the cake turns out having a wonderful texture just as described, slightly dense but so moist. And it is so easy to put together! I have already baked this cake twice and am looking forward to baking it again soon!! HIGHLY recommend!

I used sunflower oil and baked the batter in a greased muffin tray, no paper cups. They were incredibly good! Next time i might add some ground almonds for texture or choc chips! Can't wait to bake them again!

So good! Made this as an upside down cake using blood orange slices and it looked and tasted beautiful. I tried it with cardamom added to the sugar and omitted the almond extract and it was amazing!! 12/10 recommend! New fav potluck crowd pleaser :)

Vegan Orange Olive Oil Cake

A soft, sweet and light orange cake made with fresh orange juice and whole wheat flour. This eggless orange cake recipe is easy to follow and a bit healthy, suitable for both vegetarians and vegans alike.

Orange Cake (Eggless, Vegan & with Whole Wheat flour)

Orange Juice

sunflower oil oil

orange zest

cornstarch ((cornflour) or eggless custard powder)

Preheat your oven to 180 degrees Celsius/356 degrees Fahrenheit. 

Sieve whole wheat flour with the corn starch (or custard powder), a pinch of salt, baking powder and baking soda. Keep this sieved mixture aside.

In a bowl add the sugar and oil. You can also use softened butter instead of oil.

With an electric beater or hand beater or a wooden spoon, beat this mixture of oil/butter and sugar for a few minutes until well blended. Set aside. I have made this cake with jaggery too. So you can add powdered or grated jaggery instead of sugar.

Now make the fresh orange juice. You can extract the juice with a handheld juicer or in an electric juice or blender. For the blender method, blend the orange segments (with seeds removed) and strain the juice to filter out the fibers. I have used three medium oranges to get a bit more than 1 cup juice.

You can use packaged juice too.

Measure and add 1 cup of the orange juice to the sugar and oil mixture. If using whole wheat flour, then 1 cup of orange juice works well and if using all purpose flour, then you can add about ¾ cup of orange juice.

Mix very well until all the sugar is dissolved.

Now add the sifted flour mixture and orange zest. To get a more dominant flavor of oranges, add a bit of orange extract or essence.

Mix everything very well with a wired whisk. There should be no lumps in the cake batter.

Making batter

Pour the batter in a lined or greased cake tin of about 7×4 inches. Use a spatula to scrape the batter from sides and add it to the cake pan.

Tap the pan from the sides or tap the bottom of the pan on the countertop, so that excess air bubbles are released and the batter becomes even in the pan.

Bake the cake in a preheated oven for 180 degrees Celsius/356 degrees Fahrenheit for 30 to 35 minutes.

Check the cake by inserting a bamboo skewer and it should come out clean. If it has any batter on it, bake the cake for some more minutes.

Place the cake on a wired tray or rack to cool it completely at room temperature.

Later gently remove it from the pan. Slice the eggless orange cake and serve as a sweet dessert or with tea or coffee. You can wrap the remaining cake or store in an tight container and keep in the fridge for about a week.
