These are the most delicious Vegan Pecan Bars in the world, with a caramel pecan filling and shortbread crust. Better than pecan pie, with no corn syrup!

Vegan Pecan Bars

all purpose flour

Preheat the oven to 350 degrees F and line a 9 x 13 inch pan with parchment paper.

Prepare the crust: In a large bowl, combine the flour, sugar and salt. Cut in the vegan butter with a pastry cutter, or two knives. The mixture will look like fine crumbs. Place in the prepared pan and press down evenly with your hands to form the crust. Bake for 10 minutes, then remove from oven and set aside while you make the topping.

Make the topping: In the same large bowl you made the crust in, stir together the brown sugar, brown rice syrup, non-dairy milk, melted vegan butter, cornstarch and vanilla until well combined and smooth. Fold in the pecans, then pour over the crust. Use a spatula to spread it out as evenly as possible.

Bake in the oven for 25-30 minutes, until the pecan topping is bubbling. Remove from the oven, and let cool at room temperature for 30 minutes, then place in the refrigerator for at least 2 hours to set.

Carefully lift the parchment paper with the bars out of the pan and slice into bars with a large sharp knife. I like to cut off the edges as well because they get very hard. Store leftover bars in the refrigerator for 5-6 days.

These Vegan Vanilla Pecan Bars taste like vanilla cake and pecan pie combined. They are a dense, fudgy dream bar that is sweet, moist and will remind you a little of both cake and pie. These are topped with a wonderful creamy cashew icing!

Vegan Vanilla Pecan Bars

(100 grams) certified gluten-free rolled oats, not instant

(56 grams) pecan pieces

(40 grams) coconut sugar

Sprout Living "Vanilla Lucuma" Epic protein powder

fine sea salt

(40 grams) pure maple syrup

(30 grams) unsweetened apple juice

(30 grams) pure maple syrup

(15 grams) unsweetened apple juice

Add the oats to a food processor and process until a fine flour forms. Add the pecans and coconut sugar and process again until it is finely ground.

Add the protein powder and salt and process once more until just blended.

Add the cashew butter, syrup, apple juice and vanilla extract to a small bowl and whisk until smooth. Pour over the dry ingredients into the food processor. Process until it all comes together in one large bowl and is chunky. As soon as it does this, stop so it doesn't turn into a butter.

Line a 9x5 loaf pan with plastic wrap (or use a smaller one for thicker bars) and press the mixture out evenly to the corners. Flatten with a spatula.

Combine the cashew icing ingredients and spread out over the bars. Sprinkle coconut sugar over the top. Place in the freezer until firm and set. Cut into 8 bars. Keep them stored in the freezer or fridge. The icing will be softer in the fridge and I prefer the texture from the freezer. If you leave them out for an extended period of time at room temperature, they will soften more.

These Vegan Pecan Pie bars are only 6 ingredients, no-bake, oil-free, chewy and soft and take just a few minutes to prepare. A quick version of pecan pie with the addition of delicious chocolate chips!

Vegan Pecan Pie Bars (Gluten-free and No-Bake!)

(176 grams) pecan halves

(48 grams) gluten-free oats

mesquite powder coconut sugar

(60 grams) pure maple syrup

Add the pecans, oats, mesquite powder (or coconut sugar) and salt to a food processor and process just until powdery, but still with some pieces, about 10 seconds. (See above photo)

Add the syrup, vanilla and chocolate chips and pulse until large clumps form and the mixture holds when pressed together with your fingers.

Line a 9x5 loaf pan with parchment paper. Alternatively, you can double the batch and use an 8x8 pan.

Press the mixture into the pan, spreading out evenly to the corners. I used the back of my spoon to smooth it flat and press down flat and hard. Place another piece of paper on top and press down really hard.

Place in the freezer for about an hour before slicing. Slice into 7 bars and wrap individually in plastic wrap and they will hold their shape best that way. Keep stored either in the fridge or freezer, as they will soften some at room temperature.
