Vegan Sushi Bowl featuring nutritious black rice, veggies and spicy creamy dressing for a light and healthy lunch or dinner! Great for meal prep too!

Vegan Sushi Bowl + Dynamite Sauce

black rice (or rice of choice *see notes)

carrots

cucumber, chopped

avocado, sliced

radishes, thinly sliced

nori sheet, cut into strips, optional

pickled ginger, optional

sesame seeds,

(1/4 cup) tahini

water, + more as needed

lemon apple cider vinegar

sriracha, sambal oelek or chili garlic (or your favorite hot sauce)

salt

VEGAN SUSHI BOWL + DYNAMITE SAUCE

Black rice: Rinse rice well under cool running water using a fine mesh sieve. In a small saucepan, bring rice and water to a boil, cover, reduce heat to simmer and cook for 25 minutes without disturbing. When done, remove lid and let rest about 10 minutes, fluff with fork. Please check your package for cooking directions just in case, this was mine.

Dynamite sauce: In a small bowl, mix all the dressing ingredients together, cover and set aside. Add more water to thin your dressing, add more tahini to make it thicker.

Assemble sushi bowl: To serve, add 1/3 of the rice into your serving dish and arrange the prepared vegetables over top or to the side. Drizzle with dynamite sauce and add a sprinkle of sesame seeds. Enjoy your deconstructed sushi bowl in all its creamy gloriousness!

Leftovers can be kept in the refrigerator for up to 3 &#8211; 4 days.

Dynamite Sushi Bowls! just like a dynamite roll, but easier and healthier with tofu, avocado, cucumber, ginger, brown rice, and spicy mayo. Vegetarian / easily made vegan.

Dynamite Plant Power Sushi Bowls

extra firm tofu

soy sauce

rice vinegar

agave

minced garlic

white or brown rice

cucumbers

avocado

sesame seeds

greens – I used microgreens

pickled ginger

soy sauce + wasabi for topping

sriracha + mayo

TOFU: Press the tofu to eliminate excess moisture. Cut into small cubes and marinate in the soy sauce, vinegar, agave, and garlic while you prep the veggies and other ingredients.

BOWLS: Prep all the veggies, rice, and toppings.

TOFU AGAIN: Heat a little bit of oil in a skillet. Drain off excess marinade and add tofu to the hot pan, shaking or stirring gently every so often to keep it from over-browning. When the tofu is browned, add to the bowls and serve.

ASSEMBLY: Divide the tofu, rice, and veggies into bowls. Top with soy sauce, spicy mayo, sesame seeds, and pickled ginger!

haha I am so glad I am not the only one that likes sushi but totally runs from raw fish...and I am glad Sage's tofu urges didn't cause this lovely recipe to not be posted!
