This vegan hummus wrap is quick, simple and, best of all, healthy! Follow this easy recipe for a delicious lunch.

Vegan Hummus Wrap

wheat tortilla

hummus

tomato, sliced

avocado, sliced

spinach and mixed greens

salt and pepper

Spread the hummus into a long rectangular shape down the centre of the tortilla wrap.

Next, layer the sliced avocado and tomato on top.

Wrap the tortilla into a burrito shape and fold in the sides. Then, cut it in the middle and serve.

That's a great thing to do with leftover hummus. I prefer wraps to bread as there is more filling to bread content. Looks great.

Peanut dipping sauce: in a bowl, add 1/4 cup maple syrup, 1/4 cup olive oil, 1/4 cup smooth peanut butter, 1 tbsp rice vinegar, 2 tbsp lime juice, 1 tbsp soy sauce, 1 tsp sesame oil, 1 finely minced garlic clove and season with salt and pepper to taste. Whisk until the sauce is fully combined and creamy. You can make the dipping sauce up to 2 days ahead and store it refrigerated in an air-tight container.

Once wrapped, cut your wraps in half to expose the inside and make it easier to grab and dip.
