This coconut curry is the easiest one we’ve ever made, but mixes it up with the top brass. You won’t find a better effort vs taste curry ANYWHERE!

Vegan Coconut Curry

brown rice

olive oil

broccoli ((or use green beans))

spring onions

sweet potato

carrot

zucchini

lemongrass

curry powder

tbsp yellow curry paste ((or red

coconut milk

chickpeas ((15 oz = 435 grams, drained and rinsed))

maple syrup

salt

lemon ((juiced; lime works too!))

cashews ((roasted;

If serving with rice, get that cooking now according to package instructions.

Grate the sweet potato and the carrots.

Chop the spring onion, broccoli, and zucchini.

Add the olive oil to a large pan and fry all the veg on a medium heat. This needs about 5-7 minutes.

Next, add the curry powder and curry paste, and the beaten (smack it with a heavy spoon a few times to let out the flavour) lemongrass.

Drain and rinse the chickpeas.

Stir and fry for another couple of minutes then add the coconut milk, chickpeas, lemon juice, maple syrup and salt. Let it simmer for another 5 minutes.

Alright, that&#x27;s it. Take out the lemongrass. Serve with rice and top with roasted cashews or peanuts. Easy. Awesome.

No Effort Vegan Coconut Curry | Done in 25 minutes

This easy Thai Yellow Curry is made with chicken and vegetables and served over steamed rice. This recipe can easily be made vegan or vegetarian! 

Yellow Curry

onion (, chopped)

chicken breasts

gold potatoes ((or about 10 baby gold) ½’’ cubed)

carrot (, thinly sliced)

yellow curry paste (*or homemade curry paste)

ginger

garlic

coconut milk ((2- 13.5 ounce cans))

cornstarch

fish sauce ((optional))

lime juice

brown sugar

rice (,

cilantro rice

Heat the oil in a large pot over medium low heat. Add the onion and saute for a few minutes until softened. Add the chicken, carrots, potatoes and cook for a minute or two. Add ginger, garlic and curry paste and saute for 3 minutes.

Add 1 ½ cans of coconut milk to the pot. Stir cornstarch into remaining ½ can of coconut milk and add to the pot.

Bring to a boil. Reduce heat and simmer for 20-30 minutes or until the chicken and potatoes are cooked through.  Adjust the thickness of the curry by adding more water to thin, if needed.

Stir in the fish sauce, brown sugar and lime juice. Simmer 5 more minutes.

Serve with any type of rice (white, brown, and jasmine are my favorites) or over zoodles, spaghetti squash or quinoa.

Vegan Yellow Curry w/ Soy Curls Chicken

cooked rice, (equals 1 cup uncooked)

soy curls

tbsp. coconut oil, (divided)

white onion, (diced)

garlic, (minced)

ginger,

cumin

coriander

cayenne

all-purpose flour

(15 oz)can full-fat coconut milk

vegetable broth, (divided)

juice of 1 lime

cilantro, (minced)

Marinate the soy curls in 4 cups of vegetable broth for at least 30 minutes. Once they have doubled in size, stain the soy curls through a fine mesh strainer, reserving at least one cup of the marinade, and set aside.

Cook the rice according to package instructions.

While the rice cooks, prepare the yellow curry. Dice and mince the onion, garlic, and ginger. In a  skillet, heat 1 tablespoons of coconut oil over high heat. Once the oil is hot, add the soy curls. They should sizzle as it hits the pan. Sauté for about 5 minutes until they begin to brown on all sides. Add 1 cup of the marinade and bring to a heavy simmer. Simmer until all the marinade has evaporated. This allows the flavor to aborb fully into the soy curls. Transfer the soy curls to a plate and return the pot to the stovetop.

Heat the remaining 2 tablespoons of coconut oil in a large skillet over medium-high heat. Stir in the onions and garlic and saute for 3-5 minutes, until the onions are translucent and fragrant. Add the ginger and sauté for an additional minute. Add the spices and flour, stirring frequently to fully coat the onions.

Add the coconut milk and vegetable broth and bring the curry to a boil. Boil for 2 minutes, stirring constantly, until it begins to thicken. Remove from heat and stir in maple syrup, lime juice, cooked soy curls, and cilantro. To serve, evenly divide the rice between 4 bowls. Top with yellow curry, fresh cilantro, and roasted peanuts.

Vegan Yellow Curry Recipe

yellow curry paste (see notes)

firm tofu (cubed)

Press the tofu to remove excess moisture, then cut into small cubes. Heat a small amount of oil in a non-stick skillet over medium heat. Sauté the tofu cubes, turning occasionally, until they’re crisp.

Pour a quarter of the coconut milk into a large wok or pot. Allow the milk to reduce, stirring occasionally. When you notice the oil beginning to separate from the milk, proceed to the next step.

Add the yellow curry paste to the reduced coconut milk. Cook and stir until the mixture becomes aromatic.

Add the remaining coconut milk, palm sugar, salt, potatoes, carrots, and onions. Reduce the heat to low and let the curry gently simmer for about 8 minutes, or until the vegetables and potatoes are tender.

Add the fried tofu, stir to combine, and then remove from the heat. Serve immediately with rice. Enjoy!
