vegan yellow curry

This coconut curry is the easiest one we’ve ever made, but mixes it up with the top brass. You won’t find a better effort vs taste curry ANYWHERE!

If serving with rice, get that cooking now according to package instructions.

Grate the sweet potato and the carrots.

Chop the spring onion, broccoli, and zucchini.

Add the olive oil to a large pan and fry all the veg on a medium heat. This needs about 5-7 minutes.

Next, add the curry powder and curry paste, and the beaten (smack it with a heavy spoon a few times to let out the flavour) lemongrass.

Drain and rinse the chickpeas.

Stir and fry for another couple of minutes then add the coconut milk, chickpeas, lemon juice, maple syrup and salt. Let it simmer for another 5 minutes.

Alright, that's it. Take out the lemongrass. Serve with rice and top with roasted cashews or peanuts. Easy. Awesome.

Enjoy this delicious and easy Vegan Yellow Curry tonight! This recipe uses soy curls for an incredible chicken replacement that 100% vegan! Made in just one pot in under 30 minutes for a better-than-takeout family dinner.

Vegan Yellow Curry w/ Soy Curls Chicken

cooked rice, (equals 1 cup uncooked)

soy curls

tbsp. coconut oil, (divided)

white onion, (diced)

garlic, (minced)

ginger,

cumin

coriander

cayenne

all-purpose flour

(15 oz)can full-fat coconut milk

vegetable broth, (divided)

juice of 1 lime

cilantro, (minced)

Marinate the soy curls in 4 cups of vegetable broth for at least 30 minutes. Once they have doubled in size, stain the soy curls through a fine mesh strainer, reserving at least one cup of the marinade, and set aside.

Cook the rice according to package instructions.

While the rice cooks, prepare the yellow curry. Dice and mince the onion, garlic, and ginger. In a skillet, heat 1 tablespoons of coconut oil over high heat. Once the oil is hot, add the soy curls. They should sizzle as it hits the pan. Sauté for about 5 minutes until they begin to brown on all sides. Add 1 cup of the marinade and bring to a heavy simmer. Simmer until all the marinade has evaporated. This allows the flavor to aborb fully into the soy curls. Transfer the soy curls to a plate and return the pot to the stovetop.

Heat the remaining 2 tablespoons of coconut oil in a large skillet over medium-high heat. Stir in the onions and garlic and saute for 3-5 minutes, until the onions are translucent and fragrant. Add the ginger and sauté for an additional minute. Add the spices and flour, stirring frequently to fully coat the onions.

Add the coconut milk and vegetable broth and bring the curry to a boil. Boil for 2 minutes, stirring constantly, until it begins to thicken. Remove from heat and stir in maple syrup, lime juice, cooked soy curls, and cilantro. To serve, evenly divide the rice between 4 bowls. Top with yellow curry, fresh cilantro, and roasted peanuts.

This simple vegan Thai yellow curry has bold flavours and loads of protein. It’s easy to make in one pot and tastes much better than takeout!

Make this vegan yellow curry recipe with tofu, vegetables, and a rich coconut milk sauce. Gluten-free, meal-prep friendly, and ready in under 30 minutes!

Vegan Yellow Curry Recipe

yellow curry paste (see notes)

palm sugar

potato (small cubes)

carrot (small cubes)

onion (sliced)

firm tofu (cubed)

Press the tofu to remove excess moisture, then cut into small cubes. Heat a small amount of oil in a non-stick skillet over medium heat. Sauté the tofu cubes, turning occasionally, until they’re crisp.

Pour a quarter of the coconut milk into a large wok or pot. Allow the milk to reduce, stirring occasionally. When you notice the oil beginning to separate from the milk, proceed to the next step.

Add the yellow curry paste to the reduced coconut milk. Cook and stir until the mixture becomes aromatic.

Add the remaining coconut milk, palm sugar, salt, potatoes, carrots, and onions. Reduce the heat to low and let the curry gently simmer for about 8 minutes, or until the vegetables and potatoes are tender.

Add the fried tofu, stir to combine, and then remove from the heat. Serve immediately with rice. Enjoy!

This supremely-dope Thai yellow curry has crispy tofu, soft potatoes, and a solid lineup of veggies swimming in a rich coconut milk broth. Bold curry paste, fresh Thai basil, and a little lime juice pull it all together for a straight-up flavor bomb that’s BEGGIN’ to be poured over rice.

Vegan Yellow Curry

lemongrass (optional, but recommended)

lime leaves

yellow curry paste

turmeric

water

carrots (sliced

yukon gold potatoes (peeled & cut in 1 inch wdeges)

green beans (ends trimmed)

bamboo shoot strips (drained and rinsed)

orange bell pepper (diced)

400 ml. Coconut milk (full-fat)

brown sugar (coconut sugar, or palm sugar)

salt (or

Thai basil leaves (chopped)

Jasmine Rice

Cilantro leaves

Thai green chilies (sliced)

Heat a dutch oven or wok over medium-high heat and add the olive oil. After 90 seconds when the oil is hot, add the tofu in a single layer and cook until golden brown on all sides, turning occasionally. Transfer to a plate and set aside.

Trim off any dry external leaves from the lemongrass, cut it into 3 inch sections, and smash the lemongrass with the side of a heavy knife or cleaver so that when it cooks it releases its oils into the curry.

Reduce the heat to medium and add the coconut oil to the pan. After 90 seconds when the oil has melted, add the lime leaves and lemongrass. Stir in the yellow curry paste and turmeric and cook for 30 seconds, stirring continuously.

Pour water, carrots and potatoes, then bring to a simmer over medium heat. Cover and cook until the potatoes are just fork-tender.

Once the potatoes are soft, add the green beans, bamboo shoots, and bell pepper. Stir well and cook, uncovered, until the vegetables are tender but not lifeless.

Stir in the coconut milk, brown sugar, lime juice, and salt.

Return the fried tofu to the pan along with the Thai basil and cook for 2 more minutes, allowing it to absorb the flavors.

Serve hot with jasmine rice, garnished with cilantro and sliced Thai green chilies if desired.

This is so good I had to cook another batch of rice. The tofu and potatoes are my fave!!
