Easy vegetable sandwich made on stove top in a pan. This veg sandwich recipe is super quick to make even by a newbie as it only needs basic ingredients. These vegetable sandwiches can be enjoyed for breakfast or snack.

Veg Sandwich Recipe | Vegetable Sandwich

bread ((any))

tsps butter (or ghee (optional))

tbsp oil

½ tsp cumin (or jeera)

garlic (chopped garlic

turmeric (or haldi)

salt (as needed)

green chilies (chopped or ½ tsp chili powder)

mixed veggies (heaped, (carrot, onion, capsicum, corn,beans))

tomato (large, finely chopped mashed (about half cup))

tsp garam masala (or pav bhaji masala

coriander leaves

Add oil to the pan, add cumin and allow to splutter. Saute garlic until a nice aroma comes.

Next add tomatoes and sprinkle salt. Cover and cook until soft and mushy. If using red chili powder add it now and saute for a minute.

Add the veggies and begin to saute on a medium to high flame until half done or soft cooked to suit your taste. You can also cover and cook until soft.

Next add masala powder and coriander leaves. Stir and saute for a minute. If needed add more salt. Set this aside.

Preparation for veg sandwich recipe

For stove top grilling - Smear butter over the bread slices and toast them until golden on the outer side and until crisp on the inner side.&nbsp;Transfer the prepared veggies. If desired add cheese at this step.

Cover with another slice of bread and press down. If using cheese, turn on the flame to very low and heat until the cheese melts. Press down the bread with a wooden spoon. This helps the bread to stick to the stuffing. You can also grill this in a sandwich maker

For grilling in veg sandwich in toaster - Butter the bread slices on the outer side. On the inner side spread the veggie mix and cover with another slice. Grill it in a sandwich toaster until golden.

Serve veg sandwich hot.

Whip the ingredients for the scallion cream cheese together in a small bowl (I used a fork).

Lightly toast the bread. Spread the cream cheese over one side of each pieces of bread.

Pile the vegetables onto the bread, then close. Slice in half and enjoy.

Five Guys cheese veggie sandwich

butter

mayonnaise

Heat the oil and butter in a frying pan over a medium heat, and add the chopped onion, green pepper and mushrooms. Cook for 5 minutes or so, until fairly soft, but still retaining a bit of bite.

Cut the burger buns in half, and toast lightly (either in a toaster, or in a dry frying pan). Spread one half of each bun with mayonnaise, and the other half with ketchup.

Distribute the sautéed vegetables between the three buns, and top each with two slices of American cheese. Finish with some lettuce leaves and sliced tomato (or your choice of additional toppings). Replace the lid of each bun, and wrap them in foil to serve, if desired.

Bombay Grilled Sandwich is popular Indian street food from the city of Mumbai. This vegetable sandwich is made with green chutney, butter, veggies, cheese, and chat masala.

Bombay Grilled Sandwich

sourdough bread

tbsp butter, per sandwich (more if needed)

spoonfuls cilantro chutney (4 tsp per sandwich)

russet potatoes (boiled & thinly sliced)

plum tomatoes (thinly sliced)

cucumber (thinly sliced)

red onion (thinly sliced)

Mexican white cheese (1/3 cup per sandwich)

to taste (chat masala)

Chat masala

Boil 2 potatoes.

In the meantime, make the Cilantro Chutney.

Peel the potatoes. Thinly slice the potatoes, cucumbers, onions, and tomatoes.

Prep

Take 2 slices of sourdough bread (white bread works too). Spread a generous amount of butter on each slice of bread.

Top with a layer of chutney.

Top one slice of bread with potatoes followed by chat masala.

Now top with tomatoes.

A generous amount of cheese and chat masala.

Add sliced cucumbers.

Top with onion and more chat masala.

Close sandwich.

Assemble

Heat up a grilled castiorn skillet for 5 minutes on low heat.

Once hot place the sandwich on the skillet.

Spread butter on top or spray a little avocado oil. Cook for 5 minutes on one side.

Flip. Spread butter on top or spray a little avocado oil on this side. Cook on the other side for 5 minutes.

Flip again. Cook for 3 minutes.

Slice sandwich in half.

Grill

This recipe was AMAZING and so easy to put together!  I even opted out of the butter and potato for a healthier option and to save time on a quick work day lunch, and it tasted great; so, I can only imagine how yummy it must be with all the fixens :)  Will definitely be making this again for lunch!

So simple to put together especially if you use have frozen cilantro chutney ready to use. The sourdough bread makes a lot of difference in the recipe. We already had this for two meals in the day.

In this salad-inspired veggie sandwich, a rainbow of fresh vegetables add a vibrant array of textures and flavors. Whipped feta ties everything together, but feel free to swap in hummus for a vegan version.

Veggie Sandwich with Whipped Feta and Pepperoncini

feta,

Greek yogurt

lemon, (zested)

Extra virgin olive oil

whole-wheat bread, (lightly toasted)

carrot, (peeled)

red onion, (thinly sliced)

Greek peperoncini

Kalamata olives, (slivered)

basil

red wine vinegar

extra virgin olive oil

Kosher salt

English cucumber, (thinly sliced lengthwise)

beefsteak tomato, (cored and thinly sliced)

arugula

Make the whipped feta spread. In the bowl of a large food processor fitted with a blade, combine the feta, Greek yogurt, and lemon zest. Pulse to combine, then run the processor on low speed as you drizzle in enough olive oil to make a good consistency (about 2 tablespoons). Process until the feta is whipped to a smooth mixture.

Dress the veggies. Grate the carrot on the large holes of a box grater and transfer to a small bowl. Add the red onion, peperoncini, olives, and basil. Toss to combine, then stir in the vinegar and olive oil and season with a pinch of salt and plenty of freshly ground pepper.

Assemble the sandwiches. Spread the bread slices with Whipped Feta Spread (you may have some leftover, but it keeps for 3 days and makes a great dip for raw veggies or to spread on toast). Divide the slaw over the bottom half of each sandwich, then layer with tomato and cucumber slices. Pile on arugula and place the top halves of the bread slices on sandwiches. Press down firmly on each sandwich and slice in half with a serrated bread knife.

This is dannng good.  It all just goes together amazingly.  A bit messy to eat, but no one was watching me.  I ended up with a fork at then end, but with zero complaints and all praise.  Thank you!
