You won't even miss the meat in this easy vegetarian bolognese sauce! This meatless meal has all the traditional flavors you'd expect from a classic bolognese, but it's loaded with veggies, walnuts, and quinoa!

Vegetarian Bolognese

olive oil

yellow onion, diced

celery

carrots

garlic,

thyme

teaspoon dried rosemary

oregano

red wine

can crushed tomatoes

can whole San Marzano tomatoes

milk

Parmesan cheese

toasted, finely chopped walnuts

tri-color quinoa

Kosher salt

cracked pepper

Parmesan rind (optional)

al dente spaghetti noodles

parsley

grated Parmesan

Heat oil in a large pot over medium-high heat. 

Add onion, celery, and carrots along with a large pinch of salt and pepper. Cook, stirring occasionally for 10 minutes. 

Add garlic, thyme, rosemary, and oregano and cook for 1 minute, stirring frequently. 

Add red wine and deglaze the pot, scraping all the yummy bits off the bottom.

Then add whole San Marzano tomatoes, crushing them with your hands as you add them. 

Add whole milk, Parmesan, walnuts, and uncooked quinoa along with a couple large pinches of salt and pepper.

Bring to a simmer over medium-high heat. Add Parmesan rind. 

Cover and reduce heat to medium-low. Simmer, covered, for 30 minutes. 

Serve with spaghetti noodles and garnish with chopped parsley and grated Parmesan cheese. 

Wonderful!  Made this as the sauce for a spinach lasagna and my kids really enjoyed it.  Even my picky youngest child liked it on spaghetti!  My family and I are trying to go meatless more and this recipe really hit the spot!
