vegetarian green enchiladas

Deliciously creamy, mildly spiced vegetarian green enchiladas! The spinach and green chili cream cheese filling keeps these enchiladas as green as can be - and extra nutritious too! They are simple to assemble with frozen spinach and sure to be an easy crowd pleaser!

Vegetarian Enchiladas Verdes with Spinach

olive oil (for cooking)

onion

garlic (crushed)

coriander

tsp cumin

oz spinach

cream cheese

shredded cheese

oz canned diced green chilis

corn tortillas

green enchilada sauce

If you are preparing your own enchilada sauce, do that first and let it sit while you prepare the filling.

Saute the onions over a low-medium heat until soft. Add the garlic, cumin and coriander and saute for another minute, until fragrant.

Add the spinach and use a wooden spoon to break it up and mix it in with the onions and garlic. Season well - the spinach filling benefits from a good amount of salt and pepper.

Add the cream cheese, green chilis and HALF of the shredded cheese. Mix through until the cream cheese has melted in. (The cheese doesn&#39;t need to be fully melted).

Cover the bottom of a pan with a layer of enchilada sauce. Then fill 6-8 corn tortillas with the spinach filling, roll and place into the pan. (If your tortillas are smaller, you will use more.)

Pour the remaining enchilada sauce over the top and then cover the pan with foil and bake for 20 minutes.

Remove the foil, cover with the remaining cheese and bake (uncovered) for another 10-15 minutes, until the cheese is bubbling and browned.

Serve.

Fresh, bright and mildly spicy green chile sauced enchiladas are a hearty and satisfying meal the whole family will love.  Easier to make than you&#39;d think and the flavor beats any vegetarian enchiladas I&#39;ve eaten in a restaurant!!  Perfect to make ahead and an easy vegetarian freezer meal.

Vegetarian Green Chile Enchilada Recipe

grapeseed oil

½ red onion (diced)

corn

chilies

cilantro (chopped)

lentils

cumin

oregano

½ teaspoon smoked paprika

cheddar or monterey jack cheese (shredded)

Sour cream and chopped cilantro

Heat

Heat canola oil in a skillet over medium high heat.  Add the onions and cook for 5 minutes until softened.

Cook

Add the corn, green chiles, cilantro, lentils, cumin and oregano and mix well.  Let cook for 5-8 minutes over medium heat for flavors to meld.  Taste and add salt and pepper to taste.  Turn off and set aside.

Make the filling

Preheat

Preheat the oven to 350° F while you fill and roll the tortillas.

Prep casserole dish

Spray a 13 inch baking dish with oil, spread a thin layer of enchilada sauce over the bottom of the pan.

Setup workspace

Set up your workspace to roll the enchiladas with the corn tortillas, sauce and filling.

Heat tortillas

Heat the tortillas in a lightly oiled skillet over medium heat.  Add 1-2 tortillas to the pan and heat until slightly soft and you are able to roll without them breaking.

Top the heated tortilla with 1 tablespoon of green enchilada sauce followed by a heaping spoonful of the filling.

Roll

Roll up the enchiladas and place them seam side down in the casserole dish. Repeat until all the tortillas are rolled.

Pour sauce

Pour the remaining sauce over the top of the enchiladas and sprinkle with the cheese.

Bake

Bake uncovered for 15 minutes or until the cheese melts, the sauce is bubbly and enchiladas are heated through.

Serve

Serve up with chopped cilantro and a dollop of sour cream.

Roll the tortillas

I am scared of doing any enchilada recipe because I cook 1 big meal on Sundays and then eat leftovers the rest of the week. This is because I am single and it is too hard to make a different thing every night and not have a bunch of unused ingredients from a bunch of different dishes just sit in the fridge and may not be used before they go bad.  I would love to make enchiladas, but I haven’t been able to figure out a way to keep the enchiladas from getting soggy and gross.  

Do you have any suggestions for that?
