Vegan Meatloaf - Nut Loaf Recipe

nuts ((I use a combination of raw

sunflower seeds

tsp oil ((or use 1/4 cup broth))

onion

garlic

mushrooms ((cremini

butternut

tsp italian herbs ((1/2 tsp each thyme, ground sage, rosemary, oregano)

tsp smoked paprika

tsp black pepper

tsp each cinnamon and nutmeg

onion powder

tbsp soy sauce

flax eggs ((mix 2 tbsp flaxseed meal mixed with 5 tbsp water))

breadcrumbs ((use glutenfree breadcrumbs

ketchup

maple syrup

tsp apple cider vinegar

garlic powder

tsp sriracha (, optional)

Toast the raw cashews and sunflower seeds in the oven at 325 deg F (160 C) for 5 mins.&nbsp; Or toast on a skillet over medium heat until golden.&nbsp;Preheat the oven to 350 degrees F. (optional if using pre-roasted nuts).

Add the cashews and sunflower seeds to a food processor with the rest of the nuts and pulse to a somewhat coarse meal with a few chopped size pieces visible.

Heat a skillet over medium heat. Add oil or broth. Add onion, garlic and a pinch of salt and cook for 2 mins. Then add mushrooms and a pinch of salt and cook until some golden edges. 3-4 mins.&nbsp;

Add butternut squash and mix in. Add a splash of water, cover and cook until the squash is tender. Mash and transfer to a bowl. Add in the spices, salt and mix in. Add the chopped nuts and seeds, soy sauce, flax egg mix, breadcrumbs and mix well.&nbsp;

Taste and adjust salt, herbs and flavor. ** The flavor will get more pronounced on baking. If the mixture is too wet, add a tbsp or so flour. You want&nbsp; it to be just slightly sticky. If too dry or crumbly, add a splash of broth. If you like sweeter, profile, add a tbsp of tomato paste or some chopped dried fruit such as dried cranberries or apricots.. (this mixture can be used to make burger patties, pan fried or baked. Or can be stuffed into puff pastry for a puff pastry loaf or small hand pies).

Transfer to a parchment lined pan. Lightly press to shape and even it out. Do not pack too much.&nbsp;Bake for 25 to 30 mins.

Meanwhile, mix everything under the glaze. Taste and adjust if needed.

Take the loaf out of the oven. Spread the glaze over the loaf and then bake again for 20 to 30 mins. Let cool for 15 mins before removing from the pan. Then cool completely before slicing.&nbsp;Serve with gravy. or cranberry sauce.

Cook the brown rice according to the package instructions or use our Instant Pot method.

Place 1 1/2 cup walnuts and 1/2 cup cashews on a baking sheet and toast for 8-10 minutes, until lightly browned. Allow to cool.

Meanwhile, finely chop 1 onion and mince 3 cloves garlic. Clean and finely chop the mushrooms. Finely chop the 2 tablespoons fresh parsley. When the nuts have cooled, finely chop them with a knife or in a food processor.

In a large skillet, heat about 2 tablespoons olive oil. Add the onion and garlic and cook until translucent, about 3 minutes. Add the mushrooms, 1 teaspoon marjoram, 1 teaspoon thyme, and 1 teaspoon sage. Cook about 5 minutes, until the mushrooms are golden. Transfer to a large bowl.

In a small bowl, lightly beat together 4 eggs.

In the large bowl, combine the onion and mushroom mixture with the toasted walnuts and cashews, parsley, 1 1/2 cups cooked rice, 1 cup cottage cheese, 12 ounces Swiss cheese, beaten eggs, 1 teaspoon kosher salt, and 1/2 teaspoon freshly ground black pepper.

Butter a 9-inch loaf pan, line the bottom with parchment paper, and butter it again. Pour the mixture from the bowl into the pan.

Bake 1 hour until golden brown. Let cool in pan for 20 minutes, then invert loaf and remove from pan. Slice into pieces and serve warm. Leftovers can be stored for a few day in the refrigerator or a few months in the freezer (cut into pieces). Reheat in a 375F oven.

Add lentils to a medium-sized pot with 2 cups water. Bring to a boil, cover, and simmer for about 15-20 minutes, or until tender (but not mushy!) Drain excess liquid and move lentils to a large mixing bowl.

Chickpea Veggie Loaf - Vegan Meatloaf Recipe

chickpeas (or 1.5 cups cooked)

cannellini beans (or other white beans

cilantro

parsley

tsp cumin

lemon juice

Tbsp Tahini (optional)

tsp dried thyme (or rosemary

tbsp bbq sauce

hot sauce

tsp ketchup

Heat a skillet over medium heat. Add oil, onions and garlic and pinch of salt. Cook until translucent. Add celery, peppers, cranberries and cook for 3 minutes, * You can cook the veggies without oil. Cook onions and garlic in a splash of broth or water until translucent, then add other veggies.

Drain the chickpeas and beans really well. In a food processor, process the chickpeas, beans, cilantro, parsley and half of the cooked veggie mixture. Pulse, process until the mixture is half mashed and half coarsely chunky. You can add a handful of greens in as well at this step. .

Transfer to a bowl. Mix in the chia seed meal into the bbq sauce + lemon juice in a small bowl and let it sit for a minute. Add spices, tahini, bbq sauce mixture, leftover veggies to the beans bowl. Mix in. Add in the breadcrumbs and mix in. The mixture should be like a veggie burger mixture. If too wet, add more breadcrumbs. If too dry, add a tbsp of aquafaba (chickpea brine). or 1 tsp chia/ flax seed meal mixed in 1 tbsp water. Taste the mixture and adjust salt, spice, seasoning.

Transfer the mixture to parchment lined loaf pan with parchment sheet hanging out to make it easy to remove the loaf. Even it out(by lightly pressing. too much pressing will make a mashed texture loaf )  If you don&#x27;t have a pan, use a parchment lined baking sheet and shape into a rectangular log.

Prepare the glaze by mixing everything and spread over the loaf.

Cover the loaf with parchment, bake at pre-heated 400 degrees F / 200ºc for 20 minutes. Remove the cover and continue to bake for another 15 to 25 minutes, till toothpick from the center comes out clean. Bake longer for taller loaf or if you want crispier edges.

Cool for 15 minutes, then remove from the pan. Cool almost completely and slice with a serrated knife.

Or shape into balls and bake for 15 minutes, then flip and bake for another 10-15 minutes. Serve with cranberry sauce, gravy, mashed potatoes or other sides of choice.

Cook some veggies. Pulse the chickpeas and beans, add spices, shape and bake. You can also shape the mixture into fat balls or patties and bake. Use your favorite glaze or my spicy bbq sauce glaze. Serve with cranberry sauce or gravy, some mashed potatoes, other sides and the menu is done! I used up some leftover slices in tacos with guacamole and sprinkled with chipotle pepper.

Nothing quite says comfort food the way meatloaf does, and you’re going to love this simple recipe for our super tasty vegan meatloaf! Packed with protein and flavor, serve it as-is with a hefty side of mashed potatoes and corn, or top it with tomato sauce and serve it with a side of pasta and garlic bread. Any way you serve it, it’s an amazing family dinner. Oh, and it makes great sandwiches!

Saute the onions and garlic in the olive oil on medium high heat for 1 minute. Add paprika, ground mustard, basil, onion powder, and salt. Stir well to coat and continue to saute for another 2-3 minutes.

The Best Vegan Meatloaf

Rehydrate the soy curls. Add the soy curls to a bowl and cover them with hot water. Let the soy curls rehydrate for 15-20 minutes. Drain the soy curls and rinse them a couple of times under cold water. Doing so will get rid of the soybean flavor. Next, squeeze the soy curls with your hands to remove most of the moisture. Set aside.

Preheat the oven to 350 °F (175°C).

Sauté the aromatics. Heat a tablespoon of oil in a non-stick skillet over medium heat. Once hot, add the minced garlic and shallots, and sauté for 2-3 minutes.

Next, add the sliced mushrooms and cook for another 3-5 minutes. Remove from heat and set aside.

Process the beans. To a food processor fitted with the “S” blade, add the cooked white beans, water, oil, nutritional yeast, soy sauce, ketchup, sugar, dark soy sauce (if using), vegan Worcestershire sauce, onion powder, black pepper, smoked paprika, liquid smoke, and salt.

Process for 15-30 seconds or until the mixture is smooth. Be aware that it will be very liquid. It is normal.

Add soy curls, herbs, and mushrooms. Next, add the rehydrated soy curls, fresh parsley, and sautéed mushrooms. Pulse a few times until the mixture resembles ground meat. Do not process too long, or you will lose the meaty texture.

Add the gluten and breadcrumbs. Transfer the “ground meat” mixture to a large mixing bowl. Add the vital wheat gluten and the breadcrumbs to the bowl.

Stir to combine. Using a spoon or spatula, stir until the vital wheat gluten is fully incorporated. The mixture will appear dryer and should hold together.

Transfer to a loaf pan. Line an 8×4-inch loaf pan with parchment paper. Transfer the mixture to the pan and lightly pack it. Flatten the top into an even layer.

Bake. Cover the loaf pan with two layers of aluminum foil. This will help in retaining the moisture of the meatloaf. Transfer the pan to the oven and bake covered for 1 hour.

Prepare the glaze. In a small bowl, whisk together the ketchup, sugar, yellow mustard, Worcestershire, and onion powder.

Glaze. After one hour, remove the foil from the meatloaf and spread the ketchup glaze on top of the meatloaf. Bake uncovered for another 20 minutes or until the glaze has thickened and has become sticky.

Serve. Let the meatloaf cool for about 10 minutes before transferring it to a serving plate.
