Vegetarian Baked Ziti

lb. ziti pasta

olive oil

onion,

garlic,

tomato paste

oregano

tomatoes

c. fresh ricotta

spinach,

lemon

red pepper flakes

Kosher salt

black pepper

basil,

c. grated Parmesan

c. mozzarella

It’s really good but I definitely had to tweak it a lot. The sauce is really bland so I added some wine (actually the husband did haha) and a lot more seasoning. I also sautéd the spinach and let it cool before adding it to the ricotta. I would definitely make it again but with the tweaks again.

My modifications/additions:
-6 garlic cloves
-2 zucchini, sliced thick and in half
-1 orange bell pepper, chopped
-1 can garbanzo beans
-entire small ricotta container
-entire bag mozzarella
-3tbsp tomato paste
-extra can diced tomatoes
-extra seasoning to make up for extra vegetables

It was delicious and fairly healthy for a pasta dinner. The whole family enjoyed!

Definitely had to tweak the recipe to add more seasoning and added more mozzarella.Other than that followed the recipe.  Came out delicious. My picky kids loved it

Great recipe! I made it without the lemon and with half they amount of dried basil and it was still excellent.

Vegetarian Baked Ziti That Won't Make You Crave Meat Whatsoever

With just 3 ingredients and about 5 minutes of prep, this Dump-and-Bake&nbsp;Wagon Wheel Pasta Casserole is an easy and&nbsp;healthy vegetarian dinner that's perfect for busy weeknights!

Dump-and-Bake Wagon Wheel Pasta Casserole

(about 5 cups dry) uncooked mini wheels pasta

(about 25.5 ounces) marinara sauce

water

salt

basil (optional)

mozzarella cheese

Parmesan cheese; chopped fresh parsley or basil

Preheat oven to 425 degrees F. Spray a 9 x 13-inch baking dish (or two 8-inch square baking dishes) with cooking spray.

In the prepared dish (or in a separate bowl), stir together dry (uncooked) pasta, marinara sauce, water, salt and basil (if using). Cover tightly with foil.

Bake (covered) for 25 minutes.

Remove dish from oven, take off cover, and give the pasta a stir. At this point it should be almost done, but still a bit firm ("al dente").

Sprinkle the grated mozzarella cheese over the top of the casserole. Return the dish to the oven (uncovered) for an additional 5-10 minutes -- or just until the cheese is melted and the pasta is tender.

Garnish with optional grated Parmesan cheese and fresh herbs, if desired.
