A wholesome roasted garlic and potato soup. A smooth soup garnished with chunky roasted potatoes and savory parmesan cheese. Add some greens or pesto for a simple supper. Gluten-free recipe

Roasted Garlic and Potato Soup with Parmesan

garlic

olive oil

water or vegetable broth

Heat the oven to 400 (200C) degrees.

Put the garlic cloves in a small baking dish. Drizzle with olive oil, sprinkle with a pinch of salt and cover with a piece of foil. Roast until the cloves are soft and golden brown, 25-30 minutes.

Put 2 cups of the potatoes on a baking sheet. Add 2 tablespoons olive oil and 1/2 teaspoon salt and toss around to coat. Roast in the oven alongside the garlic until tender, about 40 minutes.

Heat a tablespoon of olive oil in a large pot or saucepan over medium-high heat. Add the leek and cook until softened. Add the roasted garlic, remaining raw potatoes, 6 cups water or broth and 1 teaspoon salt. Bring to a simmer and cook until the potatoes are tender, about 25 minutes.

Puree the soup with a hand blender or in a regular blender in batches (let it cool 10 minutes before putting in the blender) until smooth. Stir in 1/4 cup of the parmesan and the lemon juice.

To serve, put 4 or 5 roasted potatoes in each serving bowl. Ladle the soup over the potatoes. Sprinkle with additional cheese and some of the herbs.

Homemade Potato Soup

russet potatoes (peeled and chopped (3-4 large potatoes)

onion

celery (chopped)

vegetable stock

cheddar cheese (shredded)

Parmesan cheese (shredded)

sour cream

salt

pepper

red pepper flakes

Begin by chopping the onion and celery.&nbsp;

Heat a large pot on the stove over medium heat add the butter &amp; olive oil then add the onions &amp; celery - season with salt, pepper and red pepper flakes.

Next peel and dice the potatoes - add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes.&nbsp;

Add the vegetable stock and increase the heat to high. Bring to a boil - stirring quite often - this will release the starch in the potatoes and help thicken the soup. Depending on the size of the dice of the potatoes it will take 14-18 minutes. Cook the potatoes until they are fork tender. The stew will be quite thick.

Mash the potatoes with a potato masher. Make it as creamy or as chunky as you desire. 

Remove from heat and stir in both cheeses and the sour cream. That's it! So thick and creamy and an easy meal to put together in a short amount of time!

Easy Potato Soup

Thick and creamy potato soup recipe made with easy ingredients! (vegetarian friendly)

Potato Soup

yellow onion (finely diced)

garlic (minced)

oz vegetable broth

milk

heavy cream

all-purpose flour

oz sharp cheddar cheese (freshly grated)

Salt and pepper (to taste)

onion (for serving)

Melt the butter in a dutch oven

Add the garlic and onion and cook over medium heat for 5-10 minutes, until softened

Peel and dice the potatoes into small cubes (see pictures for size in the recipe post)

Add the diced peeled potatoes and vegetable broth and bring to a boil and boil until the potatoes are tender and easily pierced with a fork

Mix together the milk, heavy cream, and flour in a bowl or liquid measuring cup, then add it to the potato soup

Simmer the soup for 10 minutes, stirring often

Add the freshly grated sharp cheddar cheese and stir until melted and the soup has thickened

Salt and pepper to taste

Serve garnished with green onion and more cheddar cheese, or toppings of choice

This delicious healthy recipe for Potato Leek Soup is deceiving flavorful! A nourishing, soul-satisfying meal made with the humblest of ingredients. Serve with optional Leek oil and Crusty Bread.

Potato Leek Soup

3-4 large leeks, (4-5 cups sliced)

olive oil (or sub butter

garlic, rough chopped

fresh thyme (or 1 tsp dry thyme)

veggie broth or chicken stock

teaspoons salt,

cracked pepper

chives

Slice leeks into ¼-inch thick slices. Rinse under running water to remove dirt and sediment. Drain. ( The water will help soften the leeks as well.)

Heat oil in a heavy-bottom pot or dutch oven, over medium-low heat. Add rinsed leeks and garlic and thyme, sauté until tender, golden and fragrant, 8-10 minutes.

Add potatoes, stock, salt, and pepper. Bring to a boil, cover, turn heat to low and simmer, covered,  for 15-20 minutes, until potatoes are fork-tender.

Blend the soup

 When the potatoes are very tender, use an immersion blender and blend the soup until relatively smooth. TIP: Over blending may cause the soup to have a gummy texture.  Alternatively, blend in batches in a regular blender (remember, you don&#8217;t want to fill up a blender with hot liquid, or you will have a soup explosion- so blend in small batches, less than half full,  holding the lid down firmly covered with a kitchen towel. ) 

Return the blended soup to the pot, and whisk in the sour cream. Taste and adjust salt and pepper. Gently warm over low heat.

To serve, divide among bowls, drizzle with the leek oil, sprinkle with fresh chives or scallions.

My partner claims to hate leeks, so I told him was just potato soup and he said it was one of the best soups ever. I also really enjoyed it! I used rosemary instead of thyme but otherwise followed the recipe exactly, and it came out great!

I just made this and couldn't wait to have a cup. It's delicious and I'm sure will be even better tomorrow. I did not make any changes, and could have used more potatoes (only what I had)! The leek oil still needs straining, but I think that will be great too! Thank you!

Wonderful! What a perfect comforting soup for a cold rainy day (or really any day!). My husband couldn't stop commenting on how good it was. I made the leek oil and it made it so fancy! I served it with your Whole Roast Chicken and some toasted ciabatta. Completely delicious and impressive!

Delicious! I used my homemade chicken stock, and didn’t blend it up. I like the chunkiness of a soup. I used fresh thyme from my garden, and that was certainly an additional key to the deliciousness. I will make this again. So yummy!

Very delicious- can't decide if I prefer it blended or unblended. I have added a can of rinsed cannellini beans for extra protein.

This soup is something special and is elevated by the must have leek oil. Leek oil is one of my favorite discoveries. It is so bright and vibrant. So so good!

Outstanding! Used our garden potatoes, too many, so had to add some 1% milk, threw in some fresh parsley, butter and sour cream for the heck of it. (My folks don't care for thyme)....Best soup, ever! Will put some leftover kale in my daughter's as she loves kale!
