This is an easy and quick recipe for apple chickpea salad. Pan-roasted chickpea is combined with apples, celery and served with avocado peanut butter dressing.

Apple Chickpea Salad

tbsp Extra Virgin Olive Oil

Chickpea ((400 grams))

Paprika

Lemon (, juice only)

Fresh Flat Leaf Parsley

Medium Apples

Celery Stalks ((about 5 ounce 150 g))

tbsp Peanut Butter

Ripe Avocado

tbsp Soy Sauce (, optional)

Water

In a frying pan/skillet, heat the oil. Add the chickpeas and roast for about 4 minutes, tossing it from time to time. Add paprika, and toss the chickpea around until completely coated.

Roast for about a minute before turning off the heat. Combine this with lemon juice and roughly chopped parsley. Season it with little salt and a pinch of pepper.

Peel (optional) and coarsely grate the apples, thinly slice the celery. Throw these into a serving bowl altogether with the roasted chickpea. Give it a stir.

For the dressing: Combine all the ingredients in a food processor until smooth.  Add more liquid, if needed.

Eat a healthy salad every day with this tasty everyday salad recipe! This easy salad is vegan, low carb, gluten-free and paleo and takes only about 10 minutes. This is also a great side dish to serve with lunch or dinner.

Summer Vegetable Salad has a deliciously tangy basil vinaigrette. This vegetarian salad recipe is perfect for a summer side or potluck dish!

Summer Vegetable Salad

grape tomatoes (halved)

cucumbers (quartered lengthwise)

onion

basil (chopped)

red wine vinegar

dijon mustard

salt and pepper (to taste)

In a large salad bowl, add the tomatoes, cucumbers, onion and corn.

In a separate small bowl, add the vinegar, oil, mustard and basil. Season with salt and pepper, then whisk to combine until emulsified.

Pour the dressing over the vegetables and gently toss to evenly coat the vegetables.

So fresh and vibrant! The basil vinaigrette really brings everything together. I’ll be making this all summer long.

I think this would be a great picnic side! I've been testing out recipes to take on a picnic and this was by far my favorite.
