Over 40 best vegetable side dishes which are quick and easy to make, healthy and delicious, and vegetarian and gluten-free with lots of vegan sides too. My favorite are these easy roasted spring vegetables.

medium russet

lb. medium asparagus, ends trimmed and halved

5-6 radishes (1/2 lb.), ends trimmed and halved

tablespoons fresh garlic, finely chopped

tablespoons olive oil

teaspoon Italian seasoning

tablespoon soy sauce

tablespoon balsamic vinegar

In a large mixing bowl, add potatoes, carrots, asparagus, radishes, parsnips and garlic. Drizzle with olive oil and season with Italian seasoning, soy sauce, vinegar, salt, and pepper. Toss to combine until well coated.

Arrange the vegetable mixture in a single layer on a large half sheet baking pan.

Bake at for 30 to 35 minutes until tender and golden brown. Gently shake the sheet pan halfway through baking to ensure even cooking.

Thanksgiving Side Dishes: Cranberry Sauce 

cranberries, washed

maple syrup

apple,

salt

In a pot, cook cranberries, maple syrup and a pinch of salt over medium heat, until lightly simmering and cranberries begin to pop, about 8 minutes.  It is okay if cranberries are in different stages of breaking down.  Some will be popped, some will still be whole.

Remove cranberries from heat.  Add diced apples, orange zest and chopped orange.  Mix to combine.  It will thicken as it cools.

Refrigerate until serving.  This will keep 3 days in the fridge.

Tender glazed carrots with honey &amp; balsamic vinegar pan-roasted along with fresh thyme.   An easy one-pan side dish that only takes 20 minutes. Easy enough for a weeknight dinner and fancy enough to serve for a dinner party.  Pairs perfectly with turkey, chicken and lamb and duck.

Glazed Carrots With Honey &amp; Balsamic

carrots

tbsp honey

tsp fresh thyme (stems removed)

tsp balsamic vinegar

water

Wash and trim the carrots and ensure all pieces are similar in size.  If some pieces are bigger simply slice thicker carrots in half lengthwise.

In a large pan over medium heat add the carrots, honey, thyme, water and balsamic vinegar.  Stir and cover with a lid and let simmer for 10 minutes.

Remove lid add a pinch of salt and stir.  Let simmer for another 10 minutes stirring occassionally until carrots are fork-tender.  Serve immediately.

This was so easy to make and exactly what I was looking for. Omitted the thyme (didn't have any) but it's still delicious! Thanks for sharing.
