Green Goddess Quinoa Summer Salad - simple, healthy, and extremely adaptable to whatever veggies you have on hand! my family LOVES this recipe. vegetarian and can be made vegan.

Green Goddess Quinoa Summer Salad

quinoa (I cook mine in the rice cooker with broth)

cherry tomatoes

spinach leaves

(or more, to taste) Magic Green Sauce

Mozzarella cheese,

almonds

asparagus

chicken

Cook the quinoa in advance if you can &#8211; it tastes best when it&#8217;s had a few hours to cool.

Toss all ingredients together to combine! If the Magic Green Sauce is too thick to toss together with the other ingredients, just add a little water or oil to the bowl and it should toss together smoothly.

Weekends are meant for treats :) that's what I think anyway!

I like to get back into the swing of things on a Monday though and this looks perfect for it, especially as the sun is actually out right now here in England. Rare occasion!

I've actually never tried quinoa, but I am a major spinach addict.  This gives me a good excuse to try your salad.  Thanks for sharing!

Dang it...and I thought I was doing good with just eating a salad today that was topped with steak, every berry imaginable and avocado...with Parmesan cheese -_- ....Welllll at least I got the green part right HA.

I made this recipe last night and used some leftovers from my fridge including shredded chicken and spiralized zucchini.  I also substituted the pistachios in the Green Goddess dressing for cashews, since I recently made your Cashew Cream Sauce (omg so good I want it on everything!) and had leftover cashews.  A++!! This was divine! I will definitely be doing this again! Thank you for sharing your delicious recipes and accompanying them with such a joyful blog and stunning photography!

This Warm Quinoa &amp; Roasted Vegetable Salad combines the flavor of roasted veggies and nutty quinoa with a delicious homemade vinaigrette.

Warm Quinoa Roasted Veggie Salad with Homemade Vinaigrette

Whole Sweet Potatoes

Whole Zucchini

Baby Carrots

Broccoli Florets

Mushrooms

Salt

Black Pepper

Olive Oil

Quinoa

Cheese,

Extra Virgin Olive Oil

Red Wine Vinegar

Garlic

Honey

Dijon Mustard

Red Pepper Flakes

Remove skin from sweet potatoes and cut into cubes. Cut the ends from the zucchini and cut zucchini into cubes. Slice baby carrots and mushrooms in half (if not already cut). Add all veggies into a large bowl. Coat with salt, pepper, and olive oil shaking together until evenly coated.

Place all veggies on a baking sheet and bake at 425 degrees for 30 minutes. Set to the side.

Cook quinoa as instructed then place into a large bowl. Add roasted veggies into the same bowl with quinoa and toss together. Set to the side.

Add all vinaigrette dressing ingredients into a bowl and whisk until smooth.

Pour half of the vinaigrette in the bowl with quinoa and roasted vegetables. Gently fold until blended.

Serve warm salad on a large serving dish and top off with feta cheese (optional). The remaining vinaigrette can be served on the side.

This coleslaw uses a vinaigrette instead of mayonnaise to create a super healthy veggie salad dish

green bean

white cabbage

white onion

carrots

sunflower oil

tbsp cider vinegar

tbsp caster sugar

celery seeds

tbsp wholegrain mustard

<p>Cook the green beans for 1 min in boiling salted water, then drain and rinse under a cold tap. Place in a large bowl with the cabbage, onion and carrot.</p>

<p>In a small saucepan, bring the dressing ingredients to the boil. Add a pinch of salt, remove from the heat, let cool for 5 mins, then toss with the salad before serving.</p>

This marinated veggie salad with cucumbers, tomatoes, green pepper and red onion has bright, fresh flavors and tons of crunch. It’s perfect as a side dish for spring and summer get togethers!

Cover and chill for at least 2 hours before serving to allow the veggies to marinate in the dressing. Stir again before serving.

Calabacitas is loaded with onions, peppers, zucchini, corn and tomatoes and then covered in melted cheese, it’s the definition of a comforting side dish that’s still mostly healthy!

red bell pepper (diced)

orange bell pepper (diced)

zucchini (diced)

yellow squash (diced)

yellow corn

green chiles

cherry tomatoes (halved)

salt and freshly cracked black pepper

In a large cast iron skillet, heat the vegetable oil over medium high heat. Add the onion and poblano pepper and sauté for 4-5 minutes until the onion is translucent. Add the garlic and stir to combine.

Add the various bell peppers, zucchini and yellow squash and cook for another 5 minutes until the zucchini and squash are slightly soft. Stir in the corn and green chiles and continue to sauté for a few minutes more until the corn is warmed through. Remove the skillet from the heat and add the tomatoes, stir to combine.
