The most important thing you need to know about this light sauce is that it comes together with just three ingredients and less than 10 minutes on the clock. 

Velouté Recipe

unsalted butter

all-purpose flour

chicken broth

salt

black pepper

Melt 1 tablespoon unsalted butter in a medium saucepan over medium heat. Add 1 tablespoon all-purpose flour, and cook, whisking constantly, until frothy but not darkened in color, 1 to 2 minutes.

While whisking constantly, slowly pour in 1 cup low-sodium chicken broth and keep whisking until smooth. Bring to a boil over high heat. Reduce the heat to maintain a simmer and cook, stirring occasionally, until slightly thickened enough to coat the back of a spoon, 2 to 3 minutes. Season with1/4 teaspoon kosher salt and a few grinds of black pepper. Taste and season with more kosher salt as needed.

70 à 80 g de farine

litre de bouillon de volaille

une noix de beurre

cuiller à soupe rase de Maïzena (facultatif)

Fondre le beurre dans la casserole à feu doux comme pour démarrer un roux


Hors du feu ajouter la farine en une seule fois.


Mélanger au fouet et laisser un peu cuire le mélange farine/beurre jusqu'a ce qu'il devienne mousseux mais sans colorer.


Le roux est prêt, il a pris un peu de corps et il a blanchi.


Mouiller avec le bouillon en une seule fois et mélanger au fouet. Cuire jusqu'à épaississement (10 a 15 minutes environ) à feu modéré sans cesser de remuer.


Crémer dès la liaison obtenue et cuire doucement quelques minutes.


L'ajout de crème rendra la sauce plus liquide, plus fluide.


Une liaison de dernière minute à la fécule ou Maïzena délayée dans un peu d'eau froide apportera une brillance particulière à votre sauce sans altérer la texture ou le goût.


Le nappé est parfait, la brillance irréprochable.

In a saucepan, melt the butter over medium heat. While stirring, slowly add the flour to the butter. Keep stirring to ensure the butter fully incorporates and doesn&#8217;t form lumps. Keep adding the flour until the mixture creates a loose paste.

Slowly pour the chicken stock into the saucepan with the roux, whisking continuously. Once added, the chicken stock should not have any lumps of roux in it. Bring the mixture to a simmer and let it reduce, frequently stirring, for 20-30 minutes. You can tell it&#8217;s done once the sauce coats the back of a spoon and is glossy and velvety in appearance.

Pour the sauce through a fine-mesh sieve (or cheesecloth) into a bowl. The sauce will keep well in the refrigerator for up to three days, or you can freeze it for up to three months.

I did see the movie, twice in the theater, and now I own it. So, I guess you could say, I love it! This sauce sounds amazing. Like you, I have never made it - and now, you've inspired me to try. Thank you for this recipe - it makes me happy!

Veloute sauce is an easy French sauce that has just three ingredients!

La plus douce façon de goûter le chou-fleur et d'en redemander.

Velouté de chou-fleur

Chou-fleur (frais)

Oignon jaune

gou. Ail

Bouillon de légumes (cube)

càs Parmesan (râpé)

Lavez puis coupez le chou-fleur en sommités. Coupez les sommités en 2 ou en 4 selon leur taille. Coupez le tronc en petits cubes.

Faites fondre une noisette de beurre dans une casserole, sur feu vif. Ajoutez les oignons et l'ail râpé. Faites-les rissoler 1 à 2 minutes, en mélangeant.

Baissez le feu à moyen puis ajoutez le chou-fleur. Faites revenir le tout 5 minutes, jusqu'à ce que le chou-fleur soit légèrement doré.

Ajoutez le bouillon de légumes et 200ml d'eau par personne. Portez à ébullition, puis baissez le feu et couvrez. Laissez mijoter 15 minutes.

Ajoutez le parmesan râpé et mixez le tout pour obtenir un velouté onctueux. Ajoutez un peu d’eau, si nécessaire.

Servez le velouté de chou-fleur dans un bol ou une assiette creuse. Re-assaisonnez selon vos goûts et ajoutez un peu de crème, pour les plus gourmands. C'est prêt !
