My husband says these sous vide Vietnamese pork chops are the best pork chops he&#x27;s ever eaten. Period. Tons of flavor, moist and tender. His words.

Vietnamese Pork Chops (Sous Vide)

bone-in rib pork chops,

garlic powder

olive oil

soy sauce (low sodium is fine)

brown sugar ((honey

tbsp fish sauce (Note 1)

ginger

tsp red chili flakes

cilantro

tbsp lime juice (1 large lime or 2 smaller)

tsp garlic

cornstarch

HEAT SOUS VIDE BATH: Heat sous vide water to 142F.

MAKE MARINADE: Combine all marinade ingredients in glass measuring cup (not including fresh garlic, lime juice and cornstarch). Marinade will measure about 1/2 cup. You will use 1/4 cup (half of it) to add to the pork chops to sous vide cook; the other half for grilling/broiling.

PREPARE PORK CHOPS: Season pork chops on both sides with salt, pepper and garlic powder. Place in large zipper lock bag (or in two medium ones). Pour in half of the marinade (1/4 cup). Massage to distribute evenly. Reserve remaining marinade to make glaze.

COOK SOUS VIDE: Place unzipped bag of pork chops into water until top of bag is just above water line. Air will be pushed out. Then zip up bag. Let bag go - it should sink below water line. Cover (if using an oven-type sous vide machine) or follow manufacturer&#x27;s instructions. Cook for 1.5-4 hours (I cook thick chops for 2.5 hours or thinner ones for 1.5-2 hrs).

MAKE GLAZE: While chops are cooking sous vide, add lime juice, minced garlic and cornstarch to remaining marinade. Stir well to combine. Microwave for 45-60 seconds to thicken glaze. If too thick, add a touch of water.

FINISH PORK CHOPS: Heat grill to high (~500-550F). Remove chops from bag. Pat dry with paper towel. Brush glaze on both sides and edge of chops. Leave 1 tablespoon for serving. Note 2 to broil. Spray with oil to prevent sticking. Grill chops for 40-60 seconds per side to create grill marks. Brush the remaining tablespoon on the top side of chops. Sprinkle with chopped cilantro if desired and serve.

Vietnamese pork chops recipe (with lemongrass)

Economical pork shoulder is a tough cut of meat that&#39;s tenderised using a touch of baking soda. Even if you overcook these pork steaks, they are still tender inside!Use to make the popular Vietnamese rice noodle salad, Bún thịt nướng, or serve with coconut or jasmine rice and Asian slaw for a lovely dinner.

Vietnamese Lemongrass Pork steaks (tenderised!)

tbsp oil ((canola, vegetable, peanut))

tsp baking soda/bi-carb (, for tenderising (Note 4))

Cut pork - Cut into 8 equal, thinnish slices of pork. I find it easiest using the knife on a 45° angle, but if you have the right shape piece you can just cut straight down.

Pound each steak to 5mm / 0.2&quot; thickness using the scary side of a meat mallet (jagged, not flat), using go-between (Note 5) or a freezer bag to avoid damaging the meat. (You can use baking paper for rolling pin or the flat side of the mallet.)

Marinade - Mix the marinade ingredients in a bowl, it will fizz when the baking soda is added! Add pork then toss well to coat using tongs. Transfer to a ziplock bag and marinate for 24 hours.

Remove pork from the marinade and brush off the lemongrass pieces. Discard marinade - it&#39;s done its job!

Cook - Heat a cast iron skillet over high heat until you see wisps of smoke. Add 1 1/2 tbsp oil, then cook half the pork for 1 1/2 minutes on one side and 1 minute on the other side until nicely charred. Remove onto a plate. Scrape pan clean of loose black bits then cook the remaining pork.

Serve! Make Pork Noodle Bowls (bun thit nuong) or serve with rice and a side salad - see note 6 and in post for suggestions!

NOTE - The thin pork steaks are beyond well done in 2 1/2 minutes but it doesn&#39;t matter because the baking soda keeps them tender. It will be blushing pink inside due to the baking soda (same happens with beef). You could cook them for another 5 minutes and they will still be tender inside. Miracle!
