Banh Mi recipe

bread rolls ((Note 1))

tbsp pork or chicken pate ((Note 2))

mayonnaise ((Note 3))

Cha Lua Vietnamese pork loaf OR chicken loaf ((Note 5))

coriander/cilantro sprigs ((Note 7))

cucumbers (, finely sliced lengthwise into long strips)

onion

red chillies (, finely sliced (or more!) (or less...))

tsp Maggi Seasoning (, for drizzling (Note 8))

carrots

(375 milliliters) hot water (, boiled)

(100 grams) white sugar

tsp salt

(185 milliliters) rice wine vinegar ((sub apple cider vinegar))

Pork meatballs for Banh Mi ((Note 9))

rotisserie chicken ((Note 10))

Split rolls down the centre of the top (see video).

Spread 1.5 tbsp pate on one side, then 1.5 tbsp mayonnaise on top.

Layer in the hams, cucumber slices and green onion.

Stuff in plenty of carrots and coriander sprigs.

Sprinkle with fresh chilli - as much as you dare!

Drizzle with Maggi Seasoning (about 1/2 tsp per roll).

Close sandwich together and devour!

Banh Mi pork meatballs - for each Banh Mi, use 3 meatballs. Shake off excess sauce, split warm meatballs in half then stuff into Banh Mi in place of the ham.

Shredded cooked chicken - use in place of ham. I often use store bought rotisserie chicken for convenience!

Variations:

Dissolve  salt and sugar in the hot water, then add rice vinegar.

Add carrot, then let stand for at least 1 hour - carrot should be a bit tangy, a bit floppy but still with a soft crunch.&nbsp;

Drain and use per recipe.

Pickled Carrots

Vietnamese Banh Mi Sandwich

fish sauce

lime juice

sugar

garlic, (minced)

jalapeno

salt

chicken breasts ((3-4 breasts))

water

rice vinegar

red pepper

carrots, (sliced thin on the bias)

daikon radishes, (sliced thin on the bias)

sub rolls

mayo

cucumber, (sliced thin)

cilantro leaves, (or mint)

jalapeno (for extra heat (optional))

For the chicken: In a baking dish, mix the fish sauce, lime juice sugar, garlic, jalapeno and salt. Add the chicken breasts to the dish, cover, and refrigerate at least 1 hour. Longer is better!

For the pickled vegetables: Stir the hot tap water and sugar in a medium bowl, until the sugar dissolves. Add the vinegar, salt, crushed red pepper, sliced carrots and radishes. Cover and refrigerate for at least 30 minutes.

Heat the grill to medium. Grill the chicken breasts for 5 minutes per side. Remove from heat and cover the chicken with foil to rest for 5 minutes. Open the sub rolls and grill the insides for about 1-3 minute—until toasted.

Drain the pickled veggies. Slice the chicken into thin pieces.

Spread mayo over in the sub rolls. Layer the cucumbers, chicken, pickled veggies, cilantro leaves and jalapeños in the rolls. Serve immediately!

This recipe for a banh mi sandwich starts with a crusty french roll that&#039;s then piled high with tender slices of pork, pickled vegetables and fresh herbs for a hearty meal that&#039;s full of flavors, colors and textures!

Banh Mi Sandwich

pork

soy sauce

brown sugar

lemongrass (minced)

garlic

sesame oil

vegetable oil

salt and pepper

daikon radish (shredded

carrot

French rolls

mayonnaise

cilantro leaves

cucumbers

chilies

Place the soy sauce, fish sauce, brown sugar, lemongrass, garlic, sesame oil and vegetable oil in a large bowl.

Whisk to combine. Add the pork and toss to coat.

Cover and refrigerate for at least 30 minutes or up to 1 day.

For the pork

Combine the rice vinegar, sugar, water and salt; stir until thoroughly mixed. Add the carrots and daikon radish and toss to coat. Let sit for at least 10 minutes.

For the pickled vegetables

Heat an outdoor grill or indoor grill pan to medium high heat. Add the pork in a single layer to the pan. You may need to work in batches. Cook for 3-4 minutes per side or until browned. You can also do this in a pan on the stove if you don&#x27;t have a grill.

Repeat the process with any remaining pork.

Place the pan in the oven and cook for 6-8 minutes longer, or until desired level of doneness.

Remove the pork from the oven and let it rest for 5 minutes. Thinly slice the pork.

Spread the mayonnaise evenly over the bottom pieces of bread. Divide the sliced pork evenly between the sandwiches.

Top the pork with the picked vegetables, cucumbers, cilantro leave and chiles (if using).

Place the top piece of bread on and serve immediately.

All the familiar flavours of Banh Mi - pate, mayo, fresh herbs and pickled vegetables - but with shredded chicken instead of mystery pink cold cuts. :)Don&#39;t skip the pickled vegetables. They totally make it.For lemongrass grilled chicken, use the chicken in this recipe in place of the shredded chicken, and skip the Maggi seasoning.

Chicken banh mi (Vietnamese sandwich)

white radish ((daikon), peeled, cut the same as carrots (Note 1))

white sugar

tsp cooking / kosher salt

rice wine vinegar ((sub apple cider vinegar))

crusty white rolls (~ 20cm/8" (Note 2))

salted butter

120 grams/ 4 oz chicken pate

egg mayonnaise

(400 grams/ 14 ounces) shredded chicken

cucumber (, thinly sliced lengthwise (2 slices per Banh Mi))

(lightly packed) coriander/cilantro sprigs

Maggi seasoning (per Banh Mi (Note 3))

Pickle - In a large bowl, dissolve the salt and sugar in the hot water. Stir in vinegar. Add carrots and daikon - they should just about be covered.

2 hours - Leave for 2 hours until slightly floppy. Drain well then use per recipe.

Pickled vegetables:

Split the bread roll in half but don&#39;t cut all the way through.

Butter - Spread the lid with butter.

Pate then mayo - Spread the base with 1 to 2 tablespoons pate (be generous!), then 1 1/2 tbsp mayonnaise.

Chicken &amp; Maggi - Pile on shredded chicken, drizzle with 1/4 tsp Maggi seasoning (you can always add more later).

Fresh stuff! Stuff with pickled vegetables, 2 slices of cucumber, 3 slices of green onion and coriander. Finally, sprinkle with as much chilli as you dare. Jam the lid down and devour!

This Vietnamese Pork Belly Banh Mi recipe is the ultimate sandwich upgrade. With crispy crackling, creamy pâté, and crunchy pickled veg, it's perfect for picnics, parties or anytime cravings.

Vietnamese Pork Belly Banh Mi Recipe | Marion&#039;s Kitchen x SBS Food

For the quick pickled carrot:

tbsp white sugar

Step 1

Using a Stanley knife and ruler, score the pork belly skin at 1cm intervals. Be careful not to cut too deep; just the surface. Rub 2 tablespoons of salt generously into the score marks and all over the skin. Place the pork belly uncovered in the fridge overnight. This step helps draw out moisture for ultra-crispy crackling.

Step 2

Preheat your oven to 220°C. Pat the pork belly skin completely dry with paper towel. If needed, use scrunched foil underneath to help level out the meat so it cooks evenly.

Step 3

Place pork belly on a rack in a roasting pan. Roast for 20 minutes, then reduce the heat to 150°C and cook for another 20 minutes, or until the crackling is blistered and golden.

Step 4

Combine the carrot, vinegar, salt and sugar in a bowl. Toss to mix, then set aside for at least 15 minutes. Chill in the fridge if prepping ahead.

Step 5

Once cool enough to handle, slice the pork belly into thin slices.

Step 6

Slice the rolls open and spread pâté on one side and mayonnaise on the other. Layer on pork slices, pickled carrot, cucumber, chilli (if using) and coriander sprigs. Serve immediately or wrap in baking paper for a picnic-ready feast.
