Place the beef bones in a large stock pot, then add enough cold water to cover by 2 inches (5 cm). Bring the mixture to a boil over high heat and cook for 10 minutes to blanch the bones and remove any impurities.

Set a rack in the upper third of the oven and preheat the broiler.

Drain the bones in a colander and rinse under cold running water. Return the blanched bones to the stockpot.

Meanwhile, arrange the ginger, garlic, and onions cut-side up on a rimmed baking sheet and broil on high until the aromatics are deeply charred in spots, 5 minutes. Remove from the oven and add to the stockpot with the bones.

Meanwhile, combine the cinnamon sticks, peppercorns, and star anise in a medium skillet over medium-high heat and toast, shaking the pan occasionally, until the spices are darkened in spots and extremely fragrant, about 5 minutes. Add the toasted spices to the stockpot.

Season the brisket liberally with salt and add it to the stockpot.

Fill the pot with enough cold water to cover everything by 1 inch (2 cm). Bring to a boil over high heat, then reduce the heat to medium to maintain a gentle simmer, skimming off and discarding any fat that floats to the top as needed, until the brisket is fork-tender, 2-3 hours.

Using tongs, transfer the brisket to a plate and let cool completely. Refrigerate the brisket until ready to serve.

Continue to simmer the broth to get as much flavor out of the bones as possible, 3-4 hours more.

Using tongs, remove and discard the bones and aromatics. Slowly strain the broth through a fine mesh strainer set over a large pot. Skim and discard the fat from the broth, then stir in the fish sauce. Taste and add more as desired.

Thinly slice the brisket. Very thinly slice the raw sirloin steak against the grain.

Divide the noodles among 6-8 large bowls, then top with the brisket and raw steak. Ladle the hot broth over the noodles and meat and serve immediately with the bean sprouts, onion, jalapeño, Thai basil, lime wedges, hoisin sauce, and Sriracha alongside.

tamarind paste (or tamarind concentrate) or sub lime juice

Vietnamese Hot and Sour Soup

In a Medium pot, heat oil over medium high heat, add diced onions. Saute until tender, stirring often, about 4 &#8211; 5 minutes. Turn heat to medium, add garlic, and mushrooms.

Saute until mushrooms are just tender, about 3-4 more minutes. Add tomatoes, sugar, salt and pepper. Saute until tomatoes begin to melt, about 2-3 minutes.

Add stock and soy sauce (optional). Add tofu and tamarind paste ( or lime juice). Bring to a boil, and let simmer for 3-4 minutes. Taste for balance. Add salt to taste.

Serve in a bowls with chopped cilantro and chives and chili flakes.

Tried it. Really good. I added fish sauce to it too.

I've used the base of this soup many times now, can I change up the vegetables a bit each time. I always add pineapple too! This is so delicious!

Delicious soup!  I added a dash of fish sauce which I think really enhanced the flavor and used about 2-3 tablespoons of sour tamarind pulp, which I made from boiling  the tamarind (after removing from pods)  and  straining.   I also feel like it needed a little more sugar.

Made this soup as the weather is getting colder.  I did not have taramind paste so I used lime juice.  I was hoping for a more tart/sour taste.  Will either add more lime juice or buy some tamarind paste.
MSO does not like tofu so I made it with shrimp instead.  Good soup.  Will make again in the future.

Toast: Heat the instant pot on the saute...

Toast: Heat the instant pot on the saute setting. When hot, drop the spices listed under 'spice ball' into the pot, stirring often, allow them to toast for 2-3 minutes or until fragrant. Place the ingredients into a spice ball (affiliate link) so that it's easy to remove later. Add the halved onions and ginger root to the pressure cooker and allow them to sear for 6-8 minutes. You want to flip them once or twice about halfway through.

chicken pho: Pour in 9 1/2 cups of water. Using a wooden spoon, scratch the bottom of the pot to help loosen up all the brown bits left behind. Add chicken, spice ball, fish sauce, 1 tablespoon of sugar, and salt. Cover the instant pot; seal the vent. Cook on manual high pressure for 25 minutes and do a quick release. When the instant pot says there are 2 minutes of cooking time left, prepare an ice water bath (lots of ice in a large bowl with cold water.) Remove the chicken to the ice water bath. Skim any scum from the surface of the broth. Strain the broth into a large pot or measuring cup. Rinse out the instant pot insert, then pour the broth back in. Allow the broth to simmer on the saute setting if you want to concentrate the flavor a little more. Taste and adjust with additional sugar or salt to taste. Remove the skin from the chicken and shred or slice the chicken while the broth is simmering.

Phở Gà Recipe (Vietnamese Chicken Phở)

On a sheet pan, roast the aromatics in the middle rack of an oven on 375°F to 400°F for 15-30 minutes or until dark brown but not blackened.

Wrap the spices in foil and bake 350°F for 5 minutes (or roast on a pan medium heat until lightly browned and aromatic).

Aromatics and spices

Add the aromatics, spices, and all soup ingredients into a large stock pot and bring to a boil on high heat. Once it hits a boil, lower the heat to maintain a low boil and cook the chicken for 25-40 minutes until the chicken is cooked all the way through. You can use a thermometer to make sure the internal temperature reads 165°F (or the juices run clear when you cut into the deepest part of the chicken).

Remove the chicken once done and rinse under cold water for one minute to cool. This will prevent the chicken from getting dark. Once the chicken has cooled, shred the meat into bite-sized pieces.

Cook the rice noodles according to package instructions only just before you’re ready to serve it. Cooking the noodles usually take about 5 minutes after boiling the water.

To assemble, start with portioning the noodles into a bowl, and then add the soup, shredded chicken, and accoutrements on top. The proportions of this entire recipe is purely a personalized one, but check the photos as a guide.

Phở gà

This Vietnamese classic dish consists of a rich broth infused with spices and served with vegan beef, rice noodles, and fresh herbs! This recipe is as close to authentic as possible!

Vegan Phở

vegan beef slices (soaked for 20 minutes)

sautéed mushrooms

fried tofu

onion (thinly sliced)

Start by charring the onion and shallots: heat a non-stick skillet over medium-high heat. Once hot, add the halved onion and shallots, cut side facing down. Char them for 3-5 minutes or until almost black. Note: you can also char them under the broiler in an oven.

Transfer the charred onion and shallots to a large pot. Add the sliced carrots, daikon radish, salt, and sugar. Cover with the water and bring to a boil. Let simmer uncovered for 30-35 minutes.

In the meantime, char the sliced ginger in a non-stick skillet over medium-high heat for 2-3 minutes. Add the whole spices and toast them for about 1 minute. Transfer the spices and ginger to a tea bag or cheesecloth closed with a string.

After 30-35 minutes, turn off the heat and add the spices tea bag to the broth. Let infuse for about 10 minutes.

Remove the spices bag, onions, and shallots from the broth. Add the mushroom seasoning and vegan fish sauce if using. Taste and adjust the saltiness and sweetness if needed.

At this point, you can also remove the carrots and radish or leave them in the broth to serve later. Note: If planning to keep broth for one day in the refrigerator, I recommend removing all of the vegetables, otherwise they will soak up some liquid, and you will end up with less broth.

Broth

Drain the vegan beef slices and rinse them under cold water a couple of times. Squeeze to remove as much moisture as possible.

Transfer the beef slices to a bowl and add the sugar, soy sauce, and ground black pepper. Stir to coat. Let marinate for at least 30 minutes or overnight in the refrigerator.

Heat a tablespoon of oil in a non-stick skillet over medium heat. Once hot, add the vegan beef slices and cook for 3-5 minutes on each side or until slightly golden brown.

Vegan &quot;Beef&quot;

Bring a large pot of water to a boil. Once boiling, cook the rice noodles according to the package instructions and drain well.

Add a handful of raw bean sprouts to each bowl. Top with the cooked rice noodles, sautéed vegan beef slices, fried tofu, and sautéed mushrooms if using. Garnish each bowl with 2 tablespoons of chopped green onions, a few leaves of Thai basil, onion slices, and chopped cilantro. Pour in the piping hot broth over the noodles and serve immediately!

The broth will keep for up to 5 days in the refrigerator.

This was honestly the best vegan pho i have made.  I have been searching for a recipe i liked for a few years now and i made this on the weekend - lucky i made a double batch of broth because i have enjoyed this throughout the week.  Kids and Hubby agree this is a winner hands down and I will be making the broth regularly to have pho on hand.  Thankyou so much!!!!

Vietnamese Ground Pork &amp; Chrysanthemum Greens Soup (Canh Tan O/Cai Cuc Nau Thit Bam)

lb chrysanthemum greens/Rau Tần Ô/Caỉ Cúc

sea salt

chicken bouillon powder (optional)

Sprinkle ground black pepper

Prepare the ingredients

Peel and finely chop garlic and shallot. Discard any woody stems of the chrysanthemum greens. Snap by hand or cut into bite-size pieces. Set all ingredients aside.

Pan fry the aromatics

Add vegetable oil to the bottom of a heavy-bottom small pot. Heat on medium-low. Add garlic and shallots. Pan-fry until fragrant (about 5 seconds).

Ground pork

Add ground pork and toss in the garlic and shallot mixture for 5 seconds. Add water and bring the pot to a low simmer and cook for 8 minutes. Occasionally skim off the foam with a spoon or fine mesh, if needed.

Season stock

Season to taste with salt, sugar, fish sauce, and chicken bouillon powder.

Add chrysanthemum greens and serve

Add greens and cook for 1 minute on a rolling boil (high heat). Transfer to a serving bowl and garnish with a sprinkle of ground black pepper.
