This virgin margarita tastes just as good as the real thing! This mocktail is tangy and lightly sweet, with a secret ingredient that takes it over the top.

Virgin Margarita

(2 tablespoons) fresh lime juice

(1 tablespoon) fresh lemon juice

maple syrup or simple syrup

pickle juice (optional but recommended!)

tonic water

For the garnish: Lime wheel

Cut a notch in a lime wedge, then run the lime around the rim of a glass. Dip the edge of the rim into a plate of flaky sea salt (or for a festive look, use Margarita Salt).

In the serving glass, stir together the lime juice, lemon juice, maple syrup, and pickle juice (adds just the right funky flavor to mimic tequila). Add the tonic water and ice. Garnish with a lime wheel and serve.

Prepare your glasses by going around the rim of each glass with a lime wedge to moisten the rim. Place some coarse salt on a small plate and dip the rim of each glass into the salt, turning the glass to coat the entire rim in salt.

Combine simple syrup, lime juice, orange juice, mango nectar and sparkling water in a pitcher and mix with a spoon or whisk until all ingredients are combined.

Fill each glass with ice cubes and pour margarita right on top of ice, filling each glass to just below the salted rim. Garnish glasses with fresh lime slices and enjoy!

Frozen Virgin Margarita Recipe

limeade (such as Minute Maid)

lime juice (from 6 limes)

lemon juice (from 2 jumbo lemons)

pulp-free orange juice

Angostura orange bitters

salt

ice (enough to make it thick and frozen)

lime

Simple Syrup:

Pour 1 cup of water (236 ml) into a small saucepan over medium high heat, then mix in 1 cup of sugar (200g) until it dissolves.  Pour it into a shallow container and put in the freezer for 10 minutes to speed up the cooling process.

Rim Glasses:

Wash and dry 9 limes and 2 lemons.  Grate the zest of one lime, then mix it with the margarita salt and spread on a plate.  Wedge the lime and run a wedge around the rim of the glass, then twirl the rim in the salt until coated.  Repeat with the remaining glasses.

Juice:

Roll 6 limes on the counter, applying pressure with your hand to soften them.  (Set aside the other three for garnish.)  Cut the rolled limes in half and microwave them on high for 30 seconds to make them easier to juice.  Juice the limes and lemons with a citrus press.  You should have ½ cup of each lemon and lime juice.

Blend:

Blend together all the ingredients except the sparkling water in the blender, then blend in enough crushed ice to make the drink thick and frozen.  You should have nearly 9 cups.  If you have a small blender, do this step in two batches.

Finish:

Pour the sparkling water into the margarita mixture.  It will fizz a little!  Stir until mixed, then carefully pour the margaritas into the prepared glasses.

Garnish:

Thinly slice a lime crosswise, then make a small slit in each slice so it sits nicely on the rim of the glass.  Set the lime wheel on the rim of the glass, then serve the margarita immediately.  You can also freeze the drinks in the glasses for up to 2 hours.

Preheat oven to a high broil. Place an oven rack on the very top shelf just below the broiler element, leaving just enough space to fit a baking sheet. Optional: Line your baking sheet with foil for easy cleanup. Place jalapeños cut side down on the baking sheet and broil for 4-5 minutes, watching closely, until the outside of the  jalapeños begin to blister and blacken. You want them ~50% charred. Remove from the oven and set aside to cool.

In a blender, combine the water, passion fruit purée, agave nectar, lime juice, and cooled jalapeños. Blend on high until smooth with no chunks of jalapeño remaining. Taste and adjust as needed, adding more passion fruit or lime for tartness or more agave for sweetness.

To enjoy, strain into a jar or pitcher to save for later use, or strain directly into serving glasses over ice. Leftovers keep for 2-3 days in the refrigerator or in the freezer for up to 1 month. This would also be delicious as popsicles!
