This Warm Quinoa &amp; Roasted Vegetable Salad combines the flavor of roasted veggies and nutty quinoa with a delicious homemade vinaigrette.

Warm Quinoa Roasted Veggie Salad with Homemade Vinaigrette

Whole Sweet Potatoes

Whole Zucchini

Baby Carrots

Broccoli Florets

Mushrooms

Salt

Black Pepper

Olive Oil

Quinoa

Cheese,

Extra Virgin Olive Oil

Red Wine Vinegar

Garlic

Honey

Dijon Mustard

Red Pepper Flakes

Remove skin from sweet potatoes and cut into cubes. Cut the ends from the zucchini and cut zucchini into cubes. Slice baby carrots and mushrooms in half (if not already cut). Add all veggies into a large bowl. Coat with salt, pepper, and olive oil shaking together until evenly coated.

Place all veggies on a baking sheet and bake at 425 degrees for 30 minutes. Set to the side.

Cook quinoa as instructed then place into a large bowl. Add roasted veggies into the same bowl with quinoa and toss together. Set to the side.

Add all vinaigrette dressing ingredients into a bowl and whisk until smooth.

Pour half of the vinaigrette in the bowl with quinoa and roasted vegetables. Gently fold until blended.

Serve warm salad on a large serving dish and top off with feta cheese (optional). The remaining vinaigrette can be served on the side.

Simple Weeknight Pineapple Quinoa Stir-Fry

½ tbsp neutral oil

½ medium red onion, diced

salt and pepper

green beans, sliced in 2” slices*

carrots, diced (about 2 medium carrots)*

cooked quinoa (usually 1 ½ cups raw)

peanuts (or cashews)

pineapple (can use canned or frozen)

tbsp tamari (or soy sauce)

peanut butter

½ tbsp sesame oil

tsp chilli garlic sauce

lime juice

maple syrup

water

Heat a deep skillet or wok and add the pineapple pieces. Heat until the pieces are slightly caramelized (for a quicker meal you can skip this step and just add the pineapple pieces at the end).

Remove the pineapple pieces and add ½ tbsp oil (or water/broth) to the same skillet or wok. Add the onion and cook 1-2 minutes until softened. Add the carrots and cook for an additional 3-5 minutes until slightly softened.

Meanwhile, mix the sauce ingredients in a small bowl.

Then, add the green beans to the carrots and onion and cook for 1-2 minutes until the beans turn bright green.

Add the quinoa and mix it with the veggies. Then, drizzle the sauce overtop and stir to combine. Stir in the pineapple and roasted peanuts and heat through for just a minute. The quinoa will continue to soften so I like to not keep it on the heat very long after adding the quinoa so the stir-fry doesn’t get mushy).

Best when fresh but this recipe keeps surprisingly well and also freezes really well! The peanuts will lose their crunch so either top up with fresh peanuts when you reheat or defrost this dish OR wait to add the peanuts until just before serving.

This warm quinoa salad is cozy and nourishing with roasted vegetables including kale, broccoli, sweet potatoes and chickpeas, with a delicious homemade vinaigrette drizzled on top.

Warm Roasted Veggie Quinoa Salad with Creamy Sesame Dressing

pumpkin seeds

vegan feta (crumbled)

lemon juice

tbsp water (add more if needed for desired consistency)

Pre-heat oven to 425F.

Start by making your broccoli and sweet potatoes. Chop sweet potatoes into 1 inch pieces and broccoli into small bite sized pieces. In a bowl combine sweet potatoes and broccoli and add olive oil, garlic powder, onion powder, salt, and black pepper. Mix until combined.

Bake for 20-25 minutes, stirring half-way through. Broccoli and sweet potatoes should be browned and crispy.

Roast Broccoli and Sweet Potatoes

In a small bowl whisk together tahini, toasted sesame oil, maple syrup, salt, lemon, and water. Add extra water if needed for desired consistency.

Make Creamy Toasted Sesame Dressing

In a large pan or pot add cooked quinoa, chopped kale, carrots, roasted sweet potatoes and broccoli and warm over medium heat for 5-10 minutes, covered and stirring every few minutes until kale is wilted.

Add in feta cheese, pumpkin seeds, and 1/2 of sauce and mix until combined.

Serve right away and drizzle more sauce on top. Add salt, pepper, more feta, or pumpkin seeds as desired.

Combine Quinoa Bowl

This vegan, gluten-free warm salad is the perfect side for holiday dinner, entertaining, and fall potlucks! Take advantage of seasonal flavors like butternut squash, kale, and pecans.

Warm Butternut Squash Quinoa Salad with Candied Pecans

butternut squash (cubed

cayenne

pepper

water (or broth)

kale (de-stemmed and chopped)

olive oil

Tablespoons balsamic vinegar

garlic (minced)

Maple Spiced Pecans

parsley (dried cranberries)

Preheat oven to 400ºF.

Combine cubed squash, oil, and spices (salt, pepper, cayenne) on large baking sheet. Toss together to coat. Bake on 400ºF for 25 minutes or until soft when poked with a fork.

Squash:

Thoroughly rinse 1 1/2 (1.5) cups quinoa. Add to a large pot with 2 1/4 cups (2.25) water. Bring to a boil, then reduce to a simmer. Cover and simmer for 15 minutes.

When the quinoa is done, remove from heat and immediately add the chopped kale to the pot (just on top of the quinoa, no need to stir) and cover for about 10 minutes, or until the kale has slightly wilted and turned bright green.

Quinoa + Kale:

Combine the dressing ingredients in a jar and shake vigorously to combine.

Dressing:

Combine all ingredients in a large bowl and stir well to combine. Top each serving with crispy candied pecans (they will lose their crisp if you stir them in too early).
