Minty Watermelon Cucumber Salad (Vegan)

olive oil ((if oil-free, omit))

Tbsp lime juice ((1 large, juicy lime yields ~3 Tbsp))

lime

tsp sea salt

maple syrup

cucumber,

red onion

mint leaves

- 1 thinly sliced jalapeño pepper ((or sub 1/4-1/2 tsp red pepper flakes))

pepitas pistachios

vegan feta crumbles

In a small bowl, whisk together the olive oil, lime juice, lime zest, salt, and maple syrup.

To a large bowl, add the watermelon, cucumber, red onion, mint, and jalapeño. Drizzle the dressing over the top and toss to coat. Add pepitas (or pistachios) and vegan feta (optional) and toss gently until just combined (avoid over-stirring). Taste and adjust as needed, adding more salt or vegan feta for saltiness, jalapeño for heat, lime juice for acidity, or mint for freshness.

Best eaten fresh — leftovers become soggy and mint discolors with time. Not freezer friendly.

Place the watermelon, cucumber and mint in a large bowl.

In a small bowl, whisk together the olive oil, lime juice and salt and pepper.

Drizzle the dressing over the melon mixture and toss to coat. Sprinkle with feta and serve.

Persian cucumbers (sliced)

red onion (thinly sliced)

feta cheese

mint leaves (plus more for garnish)

honey

salt

black pepper

Place the watermelon in a large bowl. Add the cucumbers, red onions, feta cheese and mint leaves around the watermelon.

In a small bowl, whisk together olive oil, lime juice, honey, salt and black pepper.

Pour the dressing over the salad ingredients and toss gently to combine.

Garnish with more fresh mint leaves, and serve cold.

Make the dressing: In a small bowl, whisk together the honey, lime juice, olive oil and pinch of salt. Set aside for a moment.

Make the Salad: In a large bowl or serving platter with sides, combine the watermelon, cucumbers, and fresh herbs.

Finish and Serve: Top the watermelon salad with the dressing and gently toss to combine. Top with the feta cheese and serve!

Made this over the weekend as a side dish for a group dinner. It was a huge hit and will add it to my summer recipes on repeat.

Absolutely fantastic. I'm 7 months pregnant in summer and this is perfect. Next time I will separate the feta and the salad and sprinkle it as much as I want (this way the feta doesn't get soggy). I also used red onion. It was great!

Great tasting salad. Next time will use a little less basil and chop both the mint and basil finer to be able to pick up on more of this flavors. Otherwise, really good.

Great salad.   I had to drain some juice as I had to make the night before but dress the day of.   So delicious.

Very tasty, mint was not over powering.  Half watermelon was more than the picture so will cut down to 1/4.  Hard to know what a serving size was as the dish was gone with only 4 people in a sitting.
