Watermelon Feta Salad

Tbsp basil (thinly sliced)

½ Tbsp extra virgin olive oil

tsp flaky sea salt

tsp black pepper

Combine all ingredients in a large bowl, then gently toss to combine. Taste and adjust seasonings as needed. When ready to serve, garnish with a little extra feta cheese and flaky sea salt on top.

Minty Watermelon Cucumber Salad (Vegan)

In a small bowl, whisk together the olive oil, lime juice, lime zest, salt, and maple syrup.

To a large bowl, add the watermelon, cucumber, red onion, mint, and jalapeño. Drizzle the dressing over the top and toss to coat. Add pepitas (or pistachios) and vegan feta (optional) and toss gently until just combined (avoid over-stirring). Taste and adjust as needed, adding more salt or vegan feta for saltiness, jalapeño for heat, lime juice for acidity, or mint for freshness.

Best eaten fresh — leftovers become soggy and mint discolors with time. Not freezer friendly.

Note: This salad is best made just prior to serving. Prepare one hour or less before your meal.Cut rind from the watermelon, then chop the fruit into 1 inch chunks. Place chunks in a colander to drain as your chop.

Made this over the weekend as a side dish for a group dinner. It was a huge hit and will add it to my summer recipes on repeat.

Absolutely fantastic. I'm 7 months pregnant in summer and this is perfect. Next time I will separate the feta and the salad and sprinkle it as much as I want (this way the feta doesn't get soggy). I also used red onion. It was great!

Great tasting salad. Next time will use a little less basil and chop both the mint and basil finer to be able to pick up on more of this flavors. Otherwise, really good.

Great salad.   I had to drain some juice as I had to make the night before but dress the day of.   So delicious.

Very tasty, mint was not over powering.  Half watermelon was more than the picture so will cut down to 1/4.  Hard to know what a serving size was as the dish was gone with only 4 people in a sitting.

If you love watermelon, you have to try this Watermelon Feta Salad! It could be the ultimate summer salad, made with juicy watermelon, crisp cucumber, fresh herbs, creamy feta, and a simple honey lime dressing that ties it all together!

½ seedless watermelon, (peeled,

(100 g) feta cheese, (crumbled)

Mix honey lime dressing.

In a small bowl, whisk together the honey, lime juice, olive oil, and kosher salt until smooth and well combined. Set aside.

Honey Lime Dressing

Combine watermelon, cucumber, mint, and basil.

In a large bowl, combine the watermelon, cucumber, mint, and basil. Gently toss to distribute the herbs evenly.

Drizzle dressing over salad.

Drizzle the honey lime dressing over the watermelon mixture and gently toss again to coat.

Sprinkle feta over salad. Serve.

Sprinkle the crumbled feta over the top and serve immediately.

Watermelon Strawberry Salad is a delicious light, refreshing summer salad loaded with fresh sweet strawberries, juicy watermelon, and feta cheese and topped with Lime Honey Dressing.

Watermelon Strawberry Salad (With Feta &amp; Honey Lime Dressing)

strawberries (chilled, tops cut off)

mint (chiffonade or chopped fine)

watermelon (chilled, seedless if possible, cubed)

In a mason jar (or a small bowl) mix the salad dressing ingredients, shake well and set aside.

Trim the strawberries and cut them into 3 or 4 slices.

Cut the watermelon into 1 to 1 ½ inch cubes and arrange it on a serving platter together with strawberries. Gently stir in the chopped mint, crumbled feta cheese, and chia seeds. To finish, drizzle with the salad dressing, more fresh limes, and add sea salt flakes (delicious!) and pepper as needed. You only need a little. Enjoy right away!

I like the watermelon salad. I added blueberries to it this time. I put  little more honey in it to make it a little bit sweeter. It isn’t mushy. I take it on the school bus and eat between my runs. Put the dressing on when I’m ready to eat. My friend and I really enjoy it.
