This easy Mac &amp; Cheese is just 6 Smart Points per portion on Weight Watchers Blue, Green, Purple &amp; Freestyle plans. It is 2 SmartPoints per portion on the Purple plan if you use wholewheat pasta.

Mac &amp; Cheese with Butternut Squash

skim milk ((470 milliliters) skimmed or 1%)

water ((235 milliliters))

dry macaroni ((275 grams))

salt

tsp mustard

tsp nutmeg

tsp garlic granules

butternut squash ((400 grams) thawed & pureed)

reduced fat mature cheddar ((115 grams) grated)

Defrost the butternut squash chunks and puree using a hand blender. If you don't have a hand blender you can mash the butternut squash with a fork. Set aside.&nbsp;

Place the milk, water, macaroni, salt, mustard, nutmeg &amp; garlic granules in a large saucepan. Cook over a medium heat for about 3 - 4 minutes until the first bubbles just start to appear. Turn down the heat and cook for a further 10 - 12 minutes, stirring continuously. It is important not to let the mixture boil.&nbsp;

Once the mixture is thick and sauce like, add the pureed butternut squash and stir. Add half of the grated cheese and stir.&nbsp;

Tip into a casserole dish and top with the remaining cheese. Place under the grill until all the cheese has melted, is bubbling and has started to brown.&nbsp;

Weight Watchers Million Dollar Spaghetti Recipe

1.5 lb of 97% ground turkey or chicken breast

spaghetti sauce

oz of fat-free cream cheese

Fat-Free plain Greek Yogurt

½ lb 1% cottage cheese (equals 1 cup)

whole wheat pasta (zoodles, or tofu shirataki noodles)

cheddar cheese

Preheat the oven to 350 degrees.

Cook noodles to al dente.

Cook ground turkey until done and drain.

Combine cream cheese, yogurt, and cottage cheese until well blended

Mix the cream cheese mixture together with sauce,ground turkey and noodles.

Pour it into a 9*13 casserole dish sprayed with cooking spray.

Top with cheddar cheese.

Bake for 30 minutes covered. Remove cover and bake for another 15 minutes.
