Whipped shortbread cookies are light as air with a delicious buttery flavor. They melt in your mouth because they're so soft, and only require a few simple ingredients.

Whipped Shortbread Cookies

unsalted butter

sugar

all-purpose flour

cornstarch

salt

vanilla extract

sprinkles

Preheat the oven to 300F degrees and line cookie sheets with parchment paper or baking mats.&nbsp;

In a large bowl beat the butter and powdered sugar until very fluffy and aerated (at least 5 minutes.

Mix in the flour, cornstarch, salt and vanilla extract.&nbsp;

Dust your hands with cornstarch, then form the dough into balls about 2 teaspoons to 1 tablespoon in size.

Place on the lined cookie sheets and press down the top of each cookie with the tines of a fork dipped in cornstarch (this prevents sticking). Add a few sprinkles to the top of each cookie.

Bake for 14-16 minutes, or until the tops look set.&nbsp;

Preheat oven to 300°F. Line cookie trays with parchment paper and set aside.

In a stand mixer using the paddle attachment, beat butter for 5 minutes. Time it if necessary - you must not skip the amount of time. Scrape down the sides of the bowl. Add the sifted Confectioner&#39;s sugar. If using vanilla, add now. Beat the mixture for 3 more minutes. Scrape down the sides of the bowl once more.

In a large mixing bowl, sift flour and cornstarch together. Be sure to press all lumps through the sifter to eliminate them.

Add the flour and cornstarch mixture into the butter. Whip until combined, about 1 to 2 minutes. Remove the bowl from the stand mixer.

Use a small scoop to scoop up some dough. Put the dough in your hand and use both hands to roll between your palms into a ball. The dough balls should be the same size or slightly smaller than a grape for bite-sized cookies. Repeat with remaining dough spacing cookies about 1/2-inch apart on the cookie sheet(s). There is very little &#39;spread&#39; with these cookies.

Dip a fork in some cornstarch. Press the tines of the fork into the tops of the cookies, re-coating the fork as necessary. Do not stress if the cookies appear to &#39;crack,&#39; as it only adds to the character. Sprinkle the cookies with candy sprinkles, sugar sand, or top with a single glacé cherry.

Bake cookies for 19 to 21 minutes. There will be little to no &#39;spreading.&#39; Cookies are done when they begin to ever so slightly turn gold around their bottom edge.

Allow cookies to cool directly on baking sheet.

Whip the butter and icing sugar together well. Once it looks all deliciously creamy, resist from eating it by the spoonful, and get your flour ready.

Start the mixer and slowly add in the flour, until it has all been added in. Then you can proceed to let your mixer do all the work for you and whip it for 6 minutes. You are wanting lighter than air shortbread here.&nbsp;

Using a small cookie scoop, scoop the dough out onto an ungreased baking sheet. You can also use a cookie press and make shaped cookies!

Top with sprinkles or a piece of Christmas cherry.&nbsp;

Bake them in a 275 degree oven for about 30-35 minutes; you want to dry out the shortbread in essence, not bake it, thus the low temperature. (If you have a warm kitchen or live in a warm climate, cool the cookies in the fridge then bake. They won't flatten out).

Easy Whipped Shortbread Cookies

1c Butter, room temperature

Sugar

1c All purpose flour

1/2c Cornstarch

Glace cherries (optional)

These Whipped Shortbread Cookies are so buttery, light and fluffy!  A classic holiday cookie.

Using a stand mixer on high speed, cream together the butter, icing sugar and vanilla, until fluffy.

NOTE: If you are using a vanilla bean instead of the vanilla extract, slide a knife along the outside of the vanilla bean to reveal the centre, then gently scrape out the centre of the bean, then add the centre to the ingredients as listed above. Don&#8217;t add the bean pod.

At this point you will have to scrape the sides of the bowl often to make sure all the ingredients are being whipped.

When the batter is ready, it should be white and fluffy.

Drop the cookie dough by the tablespoonful onto a parchment paper lined cookie sheet.

Bake for 10 minutes, careful not to let them brown.

3-Ingredient Whipped Shortbread Cookies

(227 grams) unsalted butter, room temperature

(65 grams) powdered sugar

vanilla

(225 grams) all-purpose flour

Preheat oven to 300F and line two baking sheets with parchment paper.

Using an electric mixer or stand mixer with a paddle attachment, beat the butter and powdered sugar until light and fluffy, about 3 minutes. Add the vanilla if using and beat for another minute.

Stir in half the flour until just combined. Repeat with the rest of the flour.

Lightly dust your hand with powdered sugar and roll the dough into 1&#8243; balls (about 1 tablespoon each). Use the tines of a small fork dipped in powdered sugar to slightly flatten the cookie dough. Add some sprinkles on top if desired.

Bake for 12-15 minutes or until the edges just start to brown. Depending on the size of your cookies, it could take up to 25 minutes. Let cool completely on baking sheets.

Amateur baker here... Discovered this recipe on the 19th Dec 2022 and already have made 4 batches of these in 5 days... They're amazing! Thank you so much for sharing this! Absolute game changer!

So simple, so good! Used vanilla bean paste and a little bit of almond extract. Rolled in sprinkles for half the batch, made a small dip in the middle and put in 1/4 tsp of guava jam for the rest. These make excellent shortbread jam thumbprints but are also delicious on their own. Baked my 1" flattened cookies for about 15 minutes.

So good and easy to make! Thank you for no corn starch recipe. These cookies can bake at higher temperature just fine. I baked mine at 350F, for about 15 min.
