This white sauce Chicken Lasagna is so satisfying with layers of lasagna noodles and tender chicken in a creamy spinach sauce.

Chicken Lasagna Recipe

lasagna noodles (cooked al dente)

rotisserie chicken (or cooked from 2 lbs chicken breast)

olive oil

onion (finely chopped)

unsalted butter

all-purpose flour

chicken broth

oz fresh spinach (coarsely chopped)

tsp sea salt

tsp black pepper

garlic

ricotta

parsley

parmesan cheese

mozzarella cheese (12 oz

Preheat oven to 375˚F. Cook pasta in a large pot of salted water until al dente according to package instructions then drain hot water and add cold water to the pot to stop the cooking process and prevent noodles from sticking together. Shred 4 cups of chicken.

Cook Noodles &amp; Prep:

Place a pot or large saucepan over medium heat, add 1 Tbsp olive oil and saute onions for 3-4 minutes or until softened. Add 4 Tbsp butter and whisk in 1/3 cup flour. Continue whisking 3 minutes or until flour mixture is golden.

Add 2 1/2 cups chicken broth, 1 1/2 cups half and half, 2 tsp salt, and 1/2 tsp black pepper. Whisk until smooth and simmer 5 minutes until thickened to a light gravy consistency.

Add minced garlic and chopped spinach, and stir to combine then remove from heat.

Make the Belachamel (Spinach Sauce):

In a large bowl, whisk together: ricotta, egg, 2 cups mozzarella cheese, 1/4 cup parmesan, and 1/4 cup parsley.

Make the Ricotta Cheese Sauce:

Add a little bechamel sauce on the bottom of a 9x13 casserole dish, add 3 noodles, Add 1/2 ricotta sauce, 1/2 shredded chicken then ladle 1/3 of spinach sauce over the chicken.

Add 3 noodles, 1/2 ricotta cheese, 1/2 shredded chicken, and 1/3 spinach sauce

Add 3 noodles, remaining 1/3 sauce, and sprinkle on reserved 1 cup cheese.

Cover and Bake: Arrange 10-12 toothpicks over the top to keep the foil from touching the cheese then cover with a large sheet of foil. Bake on the center rack in a preheated oven at 375˚F for 45 minutes then uncover and broil 2-3 minutes to brown the cheese. Rest at least 10 minutes uncovered before slicing.

►1 1/2 cups half and half (or equal parts of heavy cream and milk)
►5 oz fresh spinach, coarsely chopped
►2 tsp sea salt
►1/2 tsp black pepper
►3 garlic cloves, minced

CHEESE SAUCE INGREDIENTS:
►15 oz ricotta
►1 large egg
►1/4 cup parsley
►1/4 cup parmesan cheese
►3 cups mozzarella cheese

Easy CHICKEN LASAGNA With Creamy White Sauce

This Low Carb and Keto Chicken Alfredo Zucchini Lasagna is a delicious alternative to traditional lasagna. Alfredo creates a white sauce that&#x27;s paired with a ricotta cheese mixture, chicken and zucchini slices.

Chicken Alfredo Zucchini Lasagna

chicken (store-bought)

zucchinis (about 2 pounds)

Parmesan cheese

(15.2-ounce) jar Bertolli® Creamy Alfredo with Cauliflower & Milk

mozzarella cheese (3 cups)

Remove white and dark meat from cooked chicken and shred into smaller pieces. Discard skin and set chicken pieces aside.

Wash and slice zucchini lengthwise into ⅛-inch thick pieces. Lightly sprinkle both sides with salt and let sit 10 minutes. Dab both sides with paper towels to remove moisture.

Broil both sides of zucchini slices 2-3 minutes to cook a bit and remove more moisture. Set aside.

In a small bowl, stir together ricotta, Parmesan cheese, and egg. Set aside.

Preheat oven to 375° F. Lightly grease a 10x14 glass baking or casserole dish. Spread ⅔-cup of sauce over the bottom.

Create an even layer of the prepared zucchini slices over the sauce. Top with half of the ricotta mixture, then half of the chicken, and half of the remaining alfredo sauce. Sprinkle with 1-½ cups of mozzarella cheese.

Top with remaining zucchini slices, repeating the process for the second layer.

Cover with foil (leave space between the top of cheese and foil). Bake for 20 minutes.

Remove foil and bake 20 minutes more or until cheese is melted and lightly browned.

Cool on a wire rack about 10 minutes before cutting and serving.

Vegan white sauce lasagna is layered with onions, mushrooms and spinach in a creamy white sauce and topped with vegan parmesan cheese. This is comfort food taken to the next level. Dig in and taste the splendor.

Vegan White Sauce Lasagna

onion

garlic (minced)

mushrooms (sliced thin)

(organic spinach)

shallot (minced (cut smaller than diced))

garlic (minced (fresh is best))

dry white wine

vegetable broth (divided)

raw cashews (or sub white beans, silken tofu

Nutritional Yeast

Dijon mustard

garlic powder

onion powder

According to the package instructions, cook lasagna noodles, or use pre-baked vegan lasagna noodles.

In a large skillet, saute the garlic and onions until translucent.

Add the mushrooms and continue cooking until brown.

If the mushrooms begin to stick, add a little vegetable broth and cook until the fluid dissipates.

Now add the spinach, a large handful at a time, stirring into the hot vegetables,

Continue adding spinach, and then add 1/2 cup vegetable broth, which will help wilt the remaining spinach.

Remove the onion, mushroom, and spinach mixture from the heat, and set aside.

Lasagna

In a skillet, saute garlic, shallots, and onions until translucent.

Add the wine and cook it down for about 5 minutes.

Add 1/2 cup vegetable broth, and continue to cook, reducing the heat to simmer.

In the meantime, combine the raw cashews (or substitute white beans, silken tofu, flour of choice, or gluten-free flour), nutritional yeast, garlic, onion powder, dijon mustard, and 1 1/2 cups vegetable broth in a high-speed blender.

Blend until smooth.

Now, turn the heat up to medium on the pan with the onion mixture.

Slowly add the contents of the blender, whisking as you add.

As the mixture heats, it thickens.

Remove the white sauce from the heat and allow it to cook.

White Sauce

In a 9 X 13-inch casserole dish, pour 1/2 cup vegetable broth in the pan&#39;s base.

Layer the cooked or pre-baked noodles, overlapping them slightly in the pan, and covering the bottom.

Pour a thin layer of white sauce on the noodles, and spread it across them. I use a one-cup measuring to make it easier.

Now, add a layer of mushroom spinach on top of the sauce.

Next, add another layer of noodles and continue the layering until the sauce is the top layer.

Layering the Lasagna

Sprinkle with vegan parmesan cheese

Optional

Preheat the oven to 350 degrees.

Cover and cook for 25 minutes; then remove the cover and cook another 10 minutes uncovered.

Or, cover and place in the refrigerator until ready to cook.

Bake ahead of time, cool completely, refrigerate until the next day, and reheat so the flavors develop.

Completely cooked, allow to set up, and cut pieces to freeze individually.
