whole30 chicken piccata

This gluten-free chicken piccata is a delicious &amp; healthy version of the classic Italian dish! A perfect Whole30 chicken recipe the entire family will love!

Gluten-Free Chicken Piccata

tbsp olive or avocado oil

chicken breasts*

egg, beaten

almond flour

coconut flour

garlic powder

tsp sea salt

tsp pepper

ghee

lemons (1 for juicing, one for garnish)

chicken broth

capers

arrowroot powder

water

Mix the almond flour, coconut flour, garlic powder, salt, and pepper in a shallow dish. Beat the egg in another shallow dish. Place side by side near the stove. Heat 2 tbsp of your oil over medium high heat in a large cast iron skillet. Meanwhile, dip your butterflied/sliced chicken breasts first in the egg, then dredge them in the flour mixture.

Add to the chicken to the hot pan and cook for 2-3 minutes per side until golden brown and cooked through. You may need to work in batches depending on the size of your chicken breasts. (I did two chicken pieces at a time, removed them, then added 2 more tbsp of olive for the 2nd batch of chicken). Remove from the pan and set aside.

Add ghee to the empty hot pan and scrape up any brown bits as it melts. Add in chicken broth, capers, the juice from one lemon, and the arrowroot powder/water mixture. Bring to a boil and reduce heat - let it simmer for about 3-5 mins. Add chicken back to the pan and keep on low until you're ready to serve. Enjoy!

Great recipe for Whole30! One of my originals when I did Whole30 years ago and still a family favorite! Great recreation. 

Did not make enough sauce, should probably be doubled. 
Are use King Arthur’s gluten-free flour instead of the almond flour and coconut flour and it worked well.

Made this tonight and it was EXCELLENT!! I absolutely love the sauce and am glad I ended up doubling the recipe. I used the jovial cassava spaghetti and served the chicken on top and topped with some of the extra sauce. Perfect!! My 5 year old cleaned her plate!! Thank you for a healthier alternative to one of my all time favorites! 

This tasted exactly like what you'd expect at your local Italian place, full of flavor and so delicious!

This is by far my favorite whole30 chicken piccata recipe! My only question— is the nutrition information for 1 serving or the full recipe (3 servings)?

I followed the recipe exactly and cooked the chicken in a cast iron past over medium-high, but the breading burned before the chicken reached 165 degrees. What did I do wrong?

This is a meal that stays on our regular menu rotation. It’s easy enough for a week night and all 3 kiddos love it!

Just made this for the first time and WOW. Hands down the best chicken picatta I have made (bonus that it is healthier too!) Run...don’t walk, and get the ingredients to make this ASAP!
