Tender, flaky Whole30 Salmon. Flavored with cilantro and lime and topped with an easy avocado sauce, this baked salmon recipe is quick and delicious!

cilantro (plus additional for serving)

tomato (seeded and small-diced, or 1 cup halved cherry or grape tomatoes)

Place a rack in the center of your oven and preheat the oven to 400 degrees F. Line a large rimmed baking sheet with aluminum foil or parchment paper. Arrange the salmon fillets in the center of the sheet.

In a small bowl or large measuring cup, whisk together the olive oil, garlic, lime zest, lime juice, salt, and pepper. Drizzle and brush generously over the salmon. (You will have some run off and down the sides, but brush what you can onto the fish.) Let the salmon stand at room temperature for 10 minutes while the oven finishes preheating.

Bake until the fish flakes easily with a fork and reaches an internal temperature of 145 degrees F, about 16 to 20 minutes.* Cover and let rest 3 minutes.

While the salmon bakes, prepare the avocado salsa: In a large bowl, stir together the avocado, lime juice, hot sauce, garlic, salt, pepper, and cilantro. With a fork, gently crush pieces of the avocado and stir. You want them to break down a little and make the salsa creamy, but you should have plenty of chunkiness remaining. Stir in the tomatoes. Taste and adjust seasoning as desired.

Transfer the salmon to serving plates. Serve hot, topped with avocado salsa and a sprinkle of fresh cilantro.

Lime and Garlic Salmon

Preheat oven to 400 degrees.

Rinse and pat dry salmon fillet.

Place on foil lined baking sheet.

Combine lime zest, lime juice, garlic, olive oil, parsley and jalapeño in food processor and pulse until well combined.

Pour over salmon.

Bake for 18-20 minutes or until salmon is cooked through.

Whole30 Baked Salmon with Gochujang Glaze is an easy Paleo Asian salmon recipe packed with flavor. 15 minutes of baking time for a healthy dinner fast!

Whole30 Salmon with Sweet Spicy Gochujang Glaze

tbsp Paleo Gochujang

2.5 tsp grated ginger

garlic (crushed, about 2 small cloves)

tbsp coconut aminos

sesame oil

(5.25 oz) Salmon fillets

scallions

Toasted sesame seeds (sprinkle, optional)

rice

Fresh shiitake (sauteed, see notes)

Preheat oven to 400F.

Follow the paleo gochujang recipe instructions to blend until smooth. Stir-in ginger, garlic, coconut aminos, and sesame oil. Mix well and set aside in a bowl.

Run your fingers through the salmon to check if there are remaining bones.

In a large baking sheet pan, line with parchment paper. Pat dry the fillets and place them skin side down and with some space in-between.

Use the back of a spoon to smother each fillet with about 1 tbsp gochujang glaze over the top and on both sides.

Bake about 10 to 14 minutes total. Check after 10 minutes.

The bake time will depend on the thickness of the fish. You can use a fork to gently flake the layers of flesh in the thickest part of the fish. The salmon should be opaque and easy to flake with a fork. For people who prefer medium-rare, look for a slightly pink/rare center.

Sprinkle with scallion and sesame seeds, if using.

Serve hot or in room temperature with cauliflower fried rice and sauteed shiitake.
