This vegetarian wife saver breakfast casserole is perfect for Christmas morning — just prepare it the night before and bake in the morning!

Vegetarian Wife Saver Breakfast Casserole

eggs

cheddar cheese (shredded)

red pepper (finely diced)

green pepper (finely diced)

½ tsp black pepper (ground)

onion powder

mustard powder

milk

Worcestershire sauce

hot sauce

¼ cup chives, chopped (optional)

Cornflakes

butter (melted)

Butter a 9x13 inch baking dish generously, or spray it with cooking oil.

Cut and fit 5-6 slices of bread (crusts removed!) to fill the entire bottom of dish.

Add half the shredded cheddar cheese and all of the diced peppers on top of the first layer of bread. Cut and fit the remaining 5-6 slices of bread to completely cover the peppers and cheese. Then, add the other half of cheese on top.

In a large bowl, whisk together your eggs with the pepper, mustard powder, onion powder, chives, Worcestershire sauce (if using), and hot sauce. Add the milk and whisk until well combined. Pour the egg mixture evenly over the casserole.

Cover your casserole dish with tin foil and pop it into the fridge to rest overnight (or for AT LEAST an hour)

In the morning, remove the casserole from the fridge and take off the tin foil. Then, preheat your oven to 350F.Melt your butter, and combine it in a bowl with the Cornflakes. Add this mixture evenly over the top of the casserole.

Bake the casserole in your preheated oven (on the middle rack) until the casserole is set and lightly browned — about 60-70 minutes. Let casserole stand for 10 minutes before cutting and serving.

Large Eggs

Salt

Pepper

Onion Powder

Milk

Salted Butter (melted)

Cornflakes (crushed)

Spray a 9x13 inch casserole dish with cooking spray.

Cover the bottom of the baking dish with 8 slices of bread, crusts removed.  Every baking dish is different so tearing your bread is necessary to cover the bottom evenly. It is alright if they go up the sides slightly.

Evenly sprinkle the cubed ham over the bread to make the next layer.

Next, lay out all the slices of cheese in one even layer over the ham until covered.

Top the cheese with the remaining 8 slices of bread, essentially making one large sandwich.

Next, beat eggs, salt, seasoning salt and pepper together in a bowl.

Whisk in the onion powder and milk until thoroughly combined.

Pour the egg/ milk mixture over the entire casserole, soaking the layers.

Cover the baking dish with foil and place it in the fridge overnight.  This gives the bread and other ingredients a chance to soak up the egg/milk mixture and seasonings for several hours. (Plus it means all the heavy lifting is done the day before you plan to serve it!)

In the morning, preheat the oven to 350 degrees.

Crush the cornflakes slightly and spread them in an even layer over top of the casserole.

Melt ½ a cup of butter and pour it over top of the crushed cornflakes.

Leave the dish uncovered and bake for 1 hour until golden and bubbly.

Let the casserole sit for 10 minutes before serving, it will be piping hot right out of the oven.
