This Winter Salad is a hit of brightness during even the coldest of weather! Combine your favorite winter fruit (pears, apples, or oranges) with dried cranberries, pomegranate, and feta (or goat) cheese. Add some pumpkin seeds or some irresistible maple-cinnamon pecans on top and drizzle on the absolute best creamy maple vinaigrette!

Winter Salad

greens

pomegranate ((or 1 cup arils))

cranberries

oranges, pears, or apples ((whichever you like best!))

feta (or goat) cheese

pecans -- See Note 1

extra virgin olive oil

maple syrup ((Note 2))

white wine vinegar

garlic

full-fat, good-quality mayo ((like Hellman's/Best Foods))

MAPLE-CINNAMON PECANS: If making the pecans, start here. (See Note 1.)

DRESSING: Combine all the dressing ingredients into a jar with a lid. Season to taste with salt &amp; pepper (I add 1/4 tsp of each). Shake well to combine and place in fridge for now, shaking again before dressing salad.

SALAD: Add all the mixed greens to a large bowl and toss gently with about half the dressing or until nicely coated (Read Instruction #3 first). Add pomegranate arils, cranberries, and thinly sliced (or chopped) pears, apples or oranges. Drizzle on the remaining dressing (or to preference). Sprinkle candied nuts or pepitas and feta or goat cheese on top. Enjoy promptly!

STORAGE: This salad doesn’t sit very well with the dressing -- it wilts the toppings and greens quickly. If you aren’t planning to eat the entire salad in one sitting, toss and add dressing, nuts, and cheese to the amount you’ll be eating at this time and storing leftovers separately. Undressed, the salad stays fresh for 1-2 days in the fridge.

I love this winter salad recipe. It&#39;s festive, the flavors are addictive, it&#39;s got lots of texture and a fabulous citrus sweet and tangy dressing. Ready in 15 minute start-to-finish. Or, with shortcuts, only 5 minutes!

Festive Recipe for Winter Salad (15 Minutes)

romaine lettuce

pear,

roasted nuts (Note 4)

ricotta cheese, Optional ((or use goat cheese

orange, juice

Dijon mustard

maple syrup ((or honey))

apple cider vinegar ((or lemon juice))

kosher salt ((or more to taste))

pepper

olive oil

ROAST NUTS. Note 3

MAKE VINAIGRETTE DRESSING: Combine all ingredients in a jar or sealed container. Shake well until smooth and emulsified. Alternatively, whisk all ingredients together except oil. Slowly add a stream of oil while whisking until smooth.

ASSEMBLE WINTER SALAD: Cut or rip greens into small pieces and add them to a large bowl. Drizzle on dressing - you won&#39;t need it all. Scatter nuts, pears and pomegranate seeds evenly over lettuce. Add small little clumps of ricotta if desired (e.g. 1 teaspoon in size). Serve immediately. If forming into a wreath on a platter, you can serve the dressing in a small bowl in the center of the wreath.

This light and crisp winter salad is full of seasonal fruits and nuts like pears, cranberries and pecans and topped with a homemade vinaigrette.&nbsp;

Mixed greens

Pears (chopped)

Pecan halves

Cranberries

Blue Cheese (, crumbled)

vinegar

Dijon Mustard

Olive Oil

Salt

Sugar (this is optional)

In a large bowl add greens, pears, dried cranberries, and pecans.&nbsp;

In a small bowl whisk together the vinaigrette ingredients.&nbsp;

Pour vinaigrette over salad and toss

Top with crumbled blue cheese.&nbsp;

Thank you - this is gorgeous. We made this for our New Year's Day meal with family. Next time I make it, I'll use about half or less of the dressing. It was a bit too much vinegar, but how would we know that if we didn't try it to the letter of the recipe first. Will definitely make again and just go a bit lighter. Again - a truly lovely salad.

Love the ingredients….   but warning, this dressing is way too vinegry for our tastes!   By a LOT!!!!!
Talk about putting a pucker on your face!!!!    We added more olive oil AND sugar to save it for our liking!!!!!

I do not like blue che c you use feta cheese instead

Great Christmas salad. I used red pears, baby spinach and gorgonzola cheese. Kept the rest the same. Thanks for the idea. So simple to make. My family ate the entire dish.

I made this for a baby shower. It was great! I love the dressing too. I served it with blue cheese and feta cheese on the side per preference. It was easy to make and tasty.
