The night before, put apricots and orange juice in a bowl and set aside.

To make the dough, put flour, 1 tsp salt, butter, milk, yeast and egg in a bowl, and mix together to form a dough. Turn the dough out onto a lightly floured surface and knead for 6 mins.

Transfer dough to a mixing bowl. Cover, then set aside to rise in a warm place for 1 hr.

Meanwhile, drain the apricots. In a mixing bowl, cream the butter and muscovado sugar until fluffy. Mix in the apricots, flour, raisins, walnuts and orange zest.

Turn the risen dough out onto a lightly floured surface. Roll it out to a rectangle, about 25 x 33cm. Evenly spread over the apricot mix, then roll out the marzipan and lay it on top. Roll up the rectangle tightly so it looks like a Swiss roll. Roll slightly, then cut lengthways along the roll, leaving 1 end joined. Twist 2 lengths together, then shape into a ring on a baking sheet lined with baking parchment. Set aside to rise for 1 hr.

Heat oven to 200C/180C fan/gas 6. Bake the twist for 30 mins until risen and dark golden. Towards the end of the baking time, gently warm the apricot jam in a small pan. Brush the freshly baked loaf with the warm jam to glaze it, then set it aside to cool. Once cooled, drizzle the twist heavily with the runny icing.

This quick and easy festive no-cook salmon wreath makes a perfect starter and is ready in only 30 minutes.

Smoked salmon wreath recipe

(1 bunch) radishes, trimmed, washed, thinly sliced

sliced smoked salmon

Extra virgin olive oil, to drizzle

Crème fraîche, to serve

Salmon roe, to serve

Step 1

Use a mandoline to very thinly slice the fennel lengthways. Place in a large bowl with the juice of 1 lime. Add a large pinch of salt, toss to combine and set aside to pickle.

Step 2

Cut shallots into 8cm lengths and thinly slice lengthways. Place in a bowl of iced water for 2-3 minutes or until lightly curled. Drain well. Roughly mash the avocados in a bowl. Add the juice from the remaining limes, season and stir to combine.

Step 3

Drain fennel. Arrange avocado in a heaped circle around the edge of a large plate. Arrange pickled fennel, cucumber, radish, shallot and salmon over the top. Drizzle with oil and season with pepper. Dollop on crème fraîche and salmon roe. Scatter with the dill and micro herbs. Serve immediately with crackers or bread, if you like.

It’s also alcohol free, so it’s ideal for the whole family. If you want to add a touch of Kirsch or a cherry liqueur, then just drizzle a little over the rolls once they’re laid in the wreath shape (before you top with the cream). 
If you want to make this wreath dessert ahead of time,  just cover loosely with plastic wrap and place in the fridge for up to 6 hours. This Black Forest wreath is made with store-bought Coles mini chocolate sponge rolls and morello cherries.

Easy Black Forest wreath recipe

jar Pitted Morello Cherries

20.00 gm caster sugar

milliliters (1 1/2 cups) thickened cream

185 milliliters (3/4 cup) double cream

pkt Mini Choc Sponge Rolls

Drain the cherries, reserving 125ml (½ cup) of the syrup. Place the reserved syrup in a small saucepan. Add the sugar and cook, stirring, over a low heat until the sugar dissolves. Increase the heat to high and bring to the boil. Simmer for 2 minutes or until reduced slightly. Remove from the heat and set aside to cool completely.

Use electric beaters to beat the thickened cream and double cream in a bowl until firm peaks form. Spoon mixture into a large piping bag fitted with a 1.5cm fluted nozzle.

Cut each mini roll into three even portions. Arrange the slices, cut-side up, in a wreath shape on a large round platter.

Step 4

Pipe a peak of cream onto each cake slice, then pipe peaks of the remaining cream onto any gaps between the cakes to completely cover. Top with the drained cherries and drizzle with the cherry syrup.
