Candied yams are a classic of the Southern table, but most recipes suffer from a fatal flaw: a sauce that breaks into sugar and grease in the oven. With a couple simple but critical adjustments, we can fix that, for yams that are silky, tender, and glazed in a syrupy lacquer.

Truly Candied Yams (Sweet Potatoes) Recipe

light brown sugar

unsalted butter (2 ounces; 60 grams)

(120 milliliters) water

(15 milliliters) apple cider vinegar

cinnamon

allspice

ginger

In a 9- by 13-inch baking dish, arrange sweet potato rounds in an even layer, overlapping where necessary to fit them all. Set aside.

In a small saucepan, combine brown sugar, butter, water, and salt and bring to a boil, stirring often, until syrup registers 220°F (104°C) on an instant-read thermometer. Stir in cider vinegar, cinnamon, allspice, and ginger, then pour syrup all over potatoes, spooning it over them as necessary to wet them completely.

Cover baking dish with aluminum foil and place in a cold oven. Turn on oven to 250°F (120°C) and allow it to come up to temperature. Cook, stopping to flip and baste potatoes with syrup every 20 minutes, until tender throughout, about 1 hour 15 minutes. (Exact cooking time will depend on your oven, baking dish, and the size of your potatoes, so check frequently.)

Remove foil and continue to cook, flipping and basting potatoes occasionally, until they are very soft and glazed in a rich brown syrup, about 30 minutes longer. Let cool slightly, then serve.

Sweet potato soup balances the sweet and savory with onions, garlic, onions, and leeks, along with a bit of nutmeg and cinnamon. Creamy and satisfying! 

Creamy Sweet Potato Soup

"This will be my first attempt to make, although I don’t have regular yogurt at hand...  can I use vanilla flavored yogurt? Would it still taste as good since it does have sugar too....?"

Cook the onions, celery, leeks, and garlic: Melt the butter in a large, thick-bottomed pot over medium-high heat. Add the chopped onions and sauté for 3 to 4 minutes, then add the celery and leeks and sauté for 5 more minutes until softened. Add the garlic and cook a minute more.

Make and simmer the soup: Add the sweet potatoes, chicken stock, cinnamon stick, and nutmeg. Increase the heat to high and bring to a boil. Reduce to a simmer, and simmer uncovered until the sweet potatoes can be easily pierced with a fork, about 20 minutes.

Blend the soup: Remove the cinnamon stick. Use an immersion blender to purée the soup or work in batches and purée the soup in a standing blender.

Finish the soup: Add the cream and milk to the soup. Heat on medium until the soup is heated through. Add salt and pepper to taste.
Sprinkle with more black pepper and swirl some water-thinned sour cream or plain yogurt over the soup to serve.

Preheat the oven to 400˚F (200˚C). Line a baking sheet with parchment paper.

Cut the sweet potato into ⅛-inch to ¼-inch (3- to 6-mm) slices. In a medium bowl, toss the sweet potato slices with olive oil until fully coated. Add the seasonings and toss to coat. Arrange the slices on a baking sheet without overlapping the potatoes.

Bake for 25 - 35 minutes, flipping halfway, until golden brown. Let the slices cool to room temperature.

Peruvian Pork and Quinoa Soup

pork butt

vegetable, chicken or pork stock (preferably homemade)

cilantro leaves,

Season the pork butt generously with salt and pepper. Place the pork in a roasting pan, cover with foil and roast until tender, at least 4 hours. Dice the pork and reserve 4 cups. Set aside the remaining pork for another use.

Increase the oven temperature to 375 degrees F.

Add the quinoa and 2 1/2 cups water to a medium saucepan and bring to a boil. Lower to a simmer, cover and cook until tender, about 15 minutes.

Toss the yams in some of the oil and season with salt and pepper. Roast the yams in the oven until fork-tender, about 25 minutes. Reserve 2 cups and set aside any remaining yam for another use.

Heat the remaining 1/3 cup oil in a large saucepan over medium heat. Add the carrot, onion and 1 teaspoon of salt and saute until translucent. Add the garlic, coriander and turmeric and cook for 5 minutes on medium heat. Add the stock and bring to a simmer.

Add the cooked quinoa, the 4 cups pork and 2 cups yams. Adjust the seasoning with salt and white pepper to taste, then add the lime juice and garnish with cilantro. 

I’m returning to this recipe to make again and I see a 1 star review so I feel I must speak up so anyone interested in this recipe is not deterred. I loved this recipe. So delicious. I will put less quinoa next time so the consistency is less like chili and more like soup but everything else about this dish was fabulous.

This recipe is just yummy! I did however revise it a bit. To this recipe I add sliced apples and a half cup of dried cranberries. Everyone loved it at our party and asked for more and the recipe. 

It is my go to candied yams recipe, I use it as my base then make adjustments to create traditional baked holiday candied yams:  <div>I add 1/2 tbsp of cinnamon &amp; nutmeg.  I cook until the ingredients are melted and bubbly, then I transfer into a baking dish and finish off in the over. I prefer baked candied yams. But either way totally works! </div><div>When people ask me for a good &amp; easy candied yam recipe, THIS is the one I give them. So simple, so easy and soooo good!</div><div>FYI: when I want a twist, I add 1 cup of crushed pineapple  (yes pineapple) it gives it a really yummy spark. Don't knock it till ya try it :)</div>

Remove the kale leaves from the thick stems, then chop into bite-size pieces. In a medium bowl, top the kale with the olive oil. Mix the seasonings and add to the kale. Toss until fully coated.

6-Ingredient Breakfast Hash (Paleo, AIP, Whole30)

Tbsp avocado oil

Preheat large skillet over medium heat. Add avocado oil and heat until glimmering.

Add ground beef to pan, breaking up into small pieces. Cook for 5-7 minutes, stirring occasionally, or until almost cooked through. Remove from pan and set aside.

Using grease left in the pan, sauté the yam for about 5 minutes. Add onion and mushrooms and sauté until onions and mushrooms are softened, and the yam starts to get crispy, another 5-7 minutes. The less you stir, the crispier it gets.

Add the ground beef back to the pan, and add the chopped kale and Breakfast Seasoning. Cook, stirring occasionally for about 5 minutes or until kale starts to wilt.

Serve warm. Top with a fried or poached egg, if desired.

Be sure to use parchment paper to line the pan. As they caramelize, the sweet potatoes release their natural sugars, which can be a pain to clean if you don’t line the pan. With parchment, you can just throw the paper away, making cleanup super easy.Line a baking pan with parchment paper, and set aside. Start with thin, evenly shaped sweet potatoes. Slice the knife into each sweet potato 8-10 times per potato, going about a third of the way down with each cut. Place potatoes in the pan, then place the pan on the oven center rack. Now turn the oven on to 450 F. Bake 30 minutes, then turn (unless they are very small, they’re probably not done yet) and continue to bake until sweet potatoes are soft and you can see that some of the natural sugars have spread onto the parchment paper (see photo). This means the potatoes are starting to caramelize. Sweet potatoes can be served immediately, or you can refrigerate or even freeze for a later date. Healthy Air Fryer Sweet Potato Fries are a low calorie side made easy in an air fryer. Deliciously crispy and fried without the oil.

Healthy Air Fryer Sweet Potato Fries

sweet potato (6 ounces)

garlic powder

tsp sea salt

tsp black pepper

avocado oil spray

Scrub and wash the sweet potato. Slice the sweet potato (with the skin on) to 1/4-inch thickness into fries.

Lightly spray the fries with avocado oil spray. Avocado oil is recommended for temperatures about 350 F.

Sprinkle with garlic powder, salt, pepper and toss to combine. Add the sweet potato fries to the air fryer basket.

Heat the airfryer to 400 F. Note - some air fryers require preheating, mine does not. Cook 7 minutes then toss the basket and cook another 6-7 minutes.

Remove from the airfryer and enjoy!

Sweet potato puree can be made in 15 minutes! Serve it as a side dish, use it in baking, swirl it into oats, add it to smoothies and more.

How to Make Sweet Potato Puree

sweet potato, peeled and cut into 1-2 inch cubes.

Peel your sweet potatoes and cut them into 1-2 inch cubes. Try to keep the size uniform so they cook evenly.

Add a steamer basked to a pot filled with 2 inches of water. Add in the sweet potato, cover and bring the pot up to a simmer. Once the steam is visible, cook for 10-15 minutes until the potatoes are easily pierced with a fork.

With a spoon, transfer the potatoes to a food processor fitted with the S blade. Process until the potatoes are completely broken down and a smooth puree forms, scraping down the sides as needed.

You would think that it would be just boiling and mashing.  But I have never had such creamy dreamy mashed sweet potatoes before.  Thank you for your upgrading my mash!!! Yummy!

Prepare Ingredients for Shirataki Chicken

First of all, prepare all the ingredients for shirataki chicken noodles. Cut your chicken into small pieces and chop an onion. Slice your mushrooms and cut asparagus as well.

Coconut Oil and Onion

On the cooking pan, add coconut oil and let it melt. Add your chopped onion and let it caramelize.

African Yam - Fried Puna Yam

Yam (Puna)

all-purpose flour

Egg (large)

cayenne (or

Salt (to taste)

Garlic powder

Curry powder

Black Pepper

Peel the yam and cut into rectangles about one inch wide and half-inch thick. Rinse and drain

Put the yams inside a pot, add water about the level of the Yam. Season with salt also and let it cook for about 7 minutes.

Drain the excess water and transfer the yams to a bowl of cold water to stop the cooking process. Drain again and set aside.

Crack the eggs in a bowl, add the Cayenne Pepper (optional) and salt to taste. Whisk together set that aside.

In a separate bowl, combine the Flour, Garlic powder, Curry powder, Thyme, Black Pepper and bouillon and mix together.

Dip the yam (one at a time) in the egg and Flour mixture respectively making sure the yam is well coated.

Preheat the oil over a medium to high heat and place the coated yams inside fry the Yam turning halfway between until golden brown.

Serve with your favorite sauce or eat as is. ENJOY!

Candied Sweet Potatoes with Brown Sugar and Pecans

Preheat the oven to 375° F.  Lightly spray a 9x13-inch baking dish with non-stick cooking spray.

Wash and peel the sweet potatoes.  Slice them into 1/4 inch slices and place them in the baking dish.

In a medium-sized pot, combine the butter, brown sugar, cinnamon, ginger, and salt.  Heat over medium until just boiling.  Remove from the heat and pour over the sweet potatoes.  Cover the dish with aluminum foil and bake for 45 minutes or until the sweet potatoes are tender.

To make the topping, stir together the melted butter, brown sugar, flour, and pecans.

Remove the sweet potatoes from the oven and remove the foil.  Sprinkle the topping mixture over the potatoes and cook for an additional 15 minutes.

Fill a large pot with water and bring to a boil. Add in the diced taro and yam. Boil until taro and yam have softened, about 10-15 minutes. Drain into a colander and set aside.

Next, make the tapioca jellies. Put the tapioca starch and pink pitaya powder into a medium bowl and add in the hot boiling water. Use a spatula to mix until a dough forms.  If the dough feels too dry, add in a little water at a time. The consistency should feel like playdough.

Use your hands to knead the dough and transfer it onto a flat surface. Roll into a long coil and cut into desired shape. Or flatten with a rolling pin and use a small cookie cutter to cut out shapes (like I did with the stars). Dust with additional tapioca starch if it&#039;s too sticky.

Fill a small pot with water and bring to a boil. Add in the tapioca jellies and cook for about 6-7 minutes, until they float to the top. Strain out the jellies and set aside in a clean bowl.
