Korean Fried Chicken (ft. Air Fryer)

lb (900 grams) chicken wings

cooking spray

tbsp salt

tbsp sugar

chicken bouillon powder

garlic powder

onion powder

cayenne pepper

tbsp white vinegar

black pepper,

(720 milliliters) water

cake flour

potato starch (or cornstarch)

tsp salt

tsp black pepper

tsp baking powder

dry batter

cold water (or cold carbonated water)

Korean chili paste (gochujang)

tbsp ketchup

soy sauce

Korean chili pepper flakes (gochugaru)

tbsp minced garlic

corn syrup

water

tbsp honey

oyster sauce

(120 milliliters) water

Vietnamese dried chili

In a large mixing bowl, combine the salt, sugar, chicken bouillon powder, garlic powder, onion powder, cayenne pepper, vinegar, black pepper, and water. Once it’s all combined, add all the chicken wings. Cover and keep it in the fridge for about 2 hours or overnight.

Make the dry batter. In a large mixing bowl, add the cake flour, potato starch, salt, black pepper, and baking powder. Whisk all together.

Make the wet batter. In a separate bowl, whisk together the dry batter and cold water.

Make Brine and Batters

Remove the wings from the brine.  Dredge them in the flour mixture. Shake off the excess and dip into the wet mixture. Make sure you coat them all over and back into the dry batter. Place them on a baking tray.

Coat the bottom of the air fryer basket with cooking spray. Spray the wings with cooking spray, making sure there are no dry spots. Place the wings in a single layer. Do NOT overcrowd the basket and work in batches. 

Cook at 180℃ (355℉) for about 10 minutes. Flip and cook the other side for another 10 minutes. Depending on the size of the wings or the air fryer, the cooking time might vary a little bit, so please check if you need more minutes to cook. 

Coat and Air Fry Wings

Make the iconic red sauce. In a small saucepan, whisk together Korean chili paste, ketchup, soy sauce, Korean chili pepper flakes, sugar, minced garlic, corn syrup, and water.

Bring it to a boil over medium heat. Once it comes to a boil and it starts bubbling, remove from the heat and set aside. Depending on your preference, toss them in the sauce or have it as a dip.

Or make honey soy sauce. In a small saucepan, whisk together soy sauce, honey, oyster sauce, chicken bouillon powder, minced garlic, and water. Add the dried chili. Bring it to a boil over medium heat. Once it comes to a boil and it starts bubbling, remove it from the heat. Brush the wings with the sauce.

Transfer to a serving plate. Serve with KOREAN PICKLED RADISH or beer. Enjoy~!

Make Sauce and Plate

Make these double fried, crunchy, and crispy Korean fried chicken wings covered 2 sauces - sweet gochujang sauce or a sticky soy garlic sauce!

½ Tablespoon soy sauce

½ Tablespoon rice wine vinegar

Season the wings

Season the wings with garlic, ginger, sea salt, and mirin and let it marinate for at least 1 hour.

Prepare the dry batter

Mix the ingredients for the dry batter in a large bowl. Coat each wing thoroughly with the dry mix, being sure to completely cover the entire surface.

Heat the oil and fry the chicken

Pour enough oil to get 1 ½ to 2 inches of depth in a large pot. Heat the oil to 345 degrees F. Add the wings and fry them for 5 to 7 minutes. Work in batches and avoid crowding the pot. Let it drain on a cooling rack and repeat with the remaining wings.

Double fry the chicken

Once done, raise the temperature of the cooking oil to 375 degrees F. Double fry the wings in batches until the exterior becomes crunchy and golden brown. Let it drain on a cooling rack. *See Notes for the benefits of double frying.

Serve

Serve immediately if you wish to eat them plain without sauce. Otherwise, coat with soy garlic sauce or gochujang sauce and serve.

Heat the sauce

Add all the ingredients in a medium pot and bring it to a boil over medium high heat. Reduce it for 2 to 3 minutes or until it&#039;s reduced to your liking. Drip a small amount onto a plate and let it cool to test the consistency. If it&#039;s too thick, add a teaspoon of water at a time to thin it out. While still hot, drizzle the sauce onto the wings and toss to coat.

Soy Garlic Sauce or Gochujang Sauce

Korean Fried Chicken is crispy fried chicken covered in a sweet and spicy sauce! It&#39;s finger lickin&#39; fire!

Sweet and Spicy Korean Fried Chicken (Yangnyeom Chicken)

Oil (For frying)

Chicken Thigh Fillet (Remove skin and fat)

Salt

Pepper (To taste)

tbsp Garlic

pc Egg

Potato Starch

Water (Gradually add)

tbsp Gochujang

tbsp Soy Sauce

tbsp Ketchup

Sugar

tbsp Corn Syrup

Chop the chicken to bite size pieces. 

Place the chicken in a bowl and season with salt, pepper, garlic, and egg. Let sit for at least an hour in the fridge to brine. 

After brining, add potato starch and water to the brined chicken then mix thoroughly. Add water gradually and check for consistency of the batter: Make sure it is not too thick that you can lift the bowl and not too thin that it’s too runny. 

Heat up the oil until 350F, and fry the chicken in batches for 5-6 minutes each. 

Remove the chicken from the oil and let rest for a couple of minutes. 

Smash the chicken to create air holes. Heat up the oil to 375F and place the chicken back for the second fry. Fry the chicken for 2 minutes. 

Remove the chicken from the oil and let cool in a wire rack. 

Make the sauce by combining gochujang, ketchup, soy sauce, sugar, garlic, and corn syrup. 

Simmer the sauce on low for a couple of minutes then quickly toss the fried chicken in the sauce. 

Plate, top with sesame seeds, and serve immediately. Enjoy!
