Learn how to make this classic fried rice dish at home!

Yangzhou Fried Rice (揚州炒飯)

Thai rice

water

oz carrot

oz peas

oz char siu

oz shrimp

scallions

salt

tbsp light soy sauce

tbsp oil

Wash and cook rice

Prepare ingredients

Boil ingredients

In a medium-sized pot, add water and bring to a boil.

Stir fry rice and eggs

Heat up the wok to high heat for one minute before adding oil. The oil is ready when you see it is rippling.

Stir fry main ingredients

After 2.5 to 3 minutes of frying the rice and eggs on high heat, turn down the heat and add salt and light soy sauce.

Taste test & plate

Taste to adjust the flavors and plate once it's to your taste! This is usually served in a large serving bowl or plate and everyone can take the amount they want.

Turn day-old rice into a hearty and tasty one-pot meal! This Yangzhou Fried Rice is quick and easy to make yet so delicious and filling. Perfect for busy weeknight dinners!

Yang Chow Fried Rice

rice

onion,

garlic,

shrimp,

sweet peas, thawed

soy sauce

green onions, chopped

salt and pepper

eggs, lightly beaten

Prepare rice

In a bowl, break cold cooked rice to separate grains.

Heat oil

Heat wok or wide pan over high heat. When the pan is very hot, add 1 tablespoon of the oil and swirl around the bottom of the pan to coat. Heat oil until shimmering.

Saute onions and garlic

Add onions and garlic and cook until softened.&nbsp;

Brown sausage

&nbsp;Add sausages and cook for about 2 to 3 minutes or until heated through.

Cook shrimp

Add shrimp and cook until color changes to pink.&nbsp;

Cook green peas

Add green peas and cook until heated through. Remove the mixture from the pan and keep warm.

Heat

In the pan, add the remaining 1 tablespoon oil and heat until almost smoking.&nbsp;

Cook rice

Add rice and cook, spreading the rice on the&nbsp;entire cooking surface of the&nbsp;pan, for about 45 seconds or until grains start to sizzle and then toss to redistribute. Repeat a few times until rice is heated through.

Add sausage and shrimp mixture

Add sausage and shrimp mixture, soy sauce, and green onions. Toss gently to combine.&nbsp;

Cook eggs

Make a large well in the middle of rice and add the eggs. Allow the eggs to set for about 30-40 seconds and then break into pieces with back of the spoon.&nbsp;

Season

Season with salt to taste and generously with pepper.

Continue to cook

Continue to cook for about 1 to 2 minutes and then stir into the rice. Serve hot.

How to Make Yang Chow Fried Rice

✅Ingredients

4 cups cold day-old rice

1/2 pound (about 5 to 6 pieces) Chinese sausages, diced
1/4 pound shrimp, peeled and deveined
1 cup frozen sweet peas, thawed
2 tablespoons soy sauce
¼ cup green onions, chopped
salt and pepper to taste
2 eggs, lightly beaten
