Thai glass noodle salad with shrimp is one of the easiest and freshest Thai salads you can make. In less than 20 minutes, you can have yourself a very tasty and healthy recipe! The recipe uses glass noodles, cooked shrimp, and a handful of fragrant herbs making this salad one of the most refreshing light, and satisfying salads you’ll have ever eaten. You can eat it year-round too.

Easy Thai Glass Noodle Salad with Shrimp, (Yum woon sen)  ยำวุ้นเส้น

Thai Glass Noodle salad

oz shrimp, peeled deveined, tail

Roma tomato, ½ cup

Glass noodles 2 rolls or around 2 oz total

onion

Shallot ½ cup, about 2 large ones

Celery leaf 1/2 cup

Lime 3.5 tbsp

Fish sauce 2.5 Tbsp

Chili flakes 1-2 Tbsp (garnish/optional)

Fresh chilis (garnish/optional)

Peanuts (garnish/optional)

Sugar (garnish/optional)

Boil a pot of water in a stockpot. Once the water boils, add the raw shrimp. Peel the shells and veins if necessary. Leaving the tails on is fine. Cook for 3-4 minutes until the shrimp turn light salmon color. Remove with a strainer, rinse in cold water and set aside on a plate until ready.

Next, soak the glass noodles in the same shrimp water for between 4-8 minutes until the noodles soften. Please note, you are essentially soaking the glass noodles in the simple shrimp stock giving this recipe that little extra something special! A little tasty kitchen tip for ya! Once the noodles are soft, use a strainer to scoop out the noodles then rinse them in cold water for a minute, set aside while you prep the other ingredients.&nbsp;

Chop up all the herbs and vegetables and squeeze your lime for fresh juice. Grab your fish sauce. I used the 3 Crab brand for this recipe but anything you have is fine, just add a little bit at a time to see how the flavor suits you. Add more if need be.&nbsp;

In a medium bowl, combine the fish sauce, lime juice, chili flakes (optional). Stir those ingredients together then add the shrimp, herbs, and vegetables and mix well. Then add the glass noodles last and mix it all together again. Taste your delicious creation, adjust with more fish sauce, lime juice, fresh and ground chilis as needed. Let the salad rest for 5-10 minutes while you set the table.

Serve this delicious and easy Thai glass noodle salad cold. Garnish with peanuts, a dash of sugar, and or chilis. Again, these are optional. ENJOY and don’t eat too much. Or do so with guilt-free pleasure. (:&nbsp;

Thai Glass Noodle Salad with Shrimp (Yum Woon Sen)

green onion, sliced into 1/4 inch pieces

½ cup shallot, thinly sliced

mint leaves, chopped into large pieces

cilantro,

celery stems,

celery leaf, sliced into 1 inch pieces

lime juice

fish sauce

Chili flakes

Fresh chilis, chopped small

Peanuts, lightly crushed

Sugar

Bring 3-4 cups of water to a boil in a large pot to cook the shrimp. Add the raw shrimp and cook for 2 minutes or until the shrimp turn a light salmon color. Remove with a strainer, rinse in cold water and set aside on a plate until ready.

Next, use the hot shrimp water to soak the glass noodles in a large bowl. Soak for 4-5 minutes or until the noodles soften. The shrimp stock gives this recipe that little extra flavor! Once the noodles are soft, use a strainer to scoop out the noodles, then rinse in cool water for a minute and set aside while you prep the other ingredients.&nbsp;

Make the dressing by combining the fish sauce, lime juice, and chili flakes in a large mixing bowl and mixing well.

Add all the chopped fresh ingredients to the bowl. Stir those ingredients together.

Add the shrimp to the salad mixture, and mix well.

Lastly, add the glass noodles to the salad. Use your clean fingers to massage the ingredients together.

Add chili flakes and any of the suggested ingredients. Adjust with more fish sauce, lime juice, and fresh and ground chilis as needed.

Let the salad sit to marinade for 3-5 minutes while you clean up and set the plate for serving. Serve this delicious and easy Thai glass noodle salad cold. Garnish with peanuts, a dash of sugar, and or chilis. ENJOY!

This was a perfect salad to make for myself and leftovers for hubby.  It came together easily and I used chicken as my protein but I have had the shrimp and that is equally yummy in this salad:). Glass Noodles

cucumber

tbsp peanuts (reserve some for garnish)

cilantro (reserve some for garnish)

mint leaves (reserve some for garnish)

tofu

garlic

ginger

Thai chili pepper

lime

soy sauce

tbsp sugar

In a large bowl, soak the glass noodles in warm water for about 3 minutes.

Once the noodles are ready, drain and rinse them under cold water to remove excess starch. Soak them in an iced bath to prevent sticking.

Prepare the Glass Noodles:

Peel the carrot and cucumber. Using a julienne peeler or a sharp knife, cut them into thin, matchstick-like strips.

Chop the cilantro and mint leaves roughly.

Place the prepared vegetables and herbs in a mixing bowl and set aside.

Prep the Vegetables and Herbs:

Cut the tofu into small cubes or slices according to your preference.

Heat a non-stick pan over medium heat and add a small amount of oil.

Gently fry the tofu until golden brown and slightly crispy on all sides. Remove from heat and set aside.

Cook the Tofu:

Peel and finely mince the garlic and ginger.

Remove the seeds from the Thai chili pepper and finely chop it.

In a small bowl, combine the minced garlic, ginger, chopped chili pepper, lime juice, soy sauce, and sugar. Stir well until the sugar dissolves.

Make the Sauce:

In the mixing bowl with the vegetables and herbs, add the cooked glass noodles and fried tofu.

Pour the sauce over the salad and toss gently to ensure everything is evenly coated with the flavorsome dressing.

Sprinkle the peanuts over the top for an added crunch.

Transfer the glass noodle salad to a serving dish or plate. Garnish with additional cilantro and mint leaves, if desired. Serve it immediately and relish the refreshing combination of textures and flavors.
