Apples are a forbidden fruit on the low-carb diet, but this keto apple crisp using zucchini is a clever way to trick your taste buds when you crave apples.

Keto Apple Crisp

zucchini (peeled and sliced about 1/2 inch thick)

lemon juice (can sub half with apple cider vinegar to add apple flavor)

low carb sugar substitute (or 4 Tbsp 2 tsp Truvia)

cinnamon

nutmeg

xanthan gum (optional thickener)

apple extract (optional)

pecans (chopped)

almond flour

coconut flour (or oat fiber)

low carb sugar substitute (or brown sugar substitute)

butter

In medium bowl, combine zucchini, lemon juice, sweetener, cinnamon and nutmeg until well blended. For a stronger apple taste, stir in apple extract too. Pour mixture into a greased 9 x 9-in. baking dish.

For topping, combine pecans, almond flour, oat fiber, sweetener and cinnamon in a bowl then cut in butter until crumbly. Sprinkle over the zucchini mixture.

Bake at 350 F for 45-50 minutes or until zucchini is tender.

Don&#39;t tell anyone, but this hot Zucchini Crumble recipe is like apple pie, but with veggies! Sweet, caramel zucchini with a crunchy cinnamon crumble on top, this is the perfect comfort food dessert!

Zucchini Crumble

zucchini (peeled and diced)

lemon juice

sugar

brown sugar (packed)

all-purpose flour

quick cook oatmeal

unsalted butter (cubed)

In a large bowl, combine the peeled and diced zucchini with lemon juice, sugars, cinnamon, nutmeg and flour. Pour into a 2 qt. baking dish.

In a bowl, combine all the crumble top ingredients. Using your hands, combine butter with dry ingredients until crumbly (this takes a few minutes). Sprinkle over the top of the zucchini mixture and press firmly.

Bake in a 375°F oven for 45 minutes. Remove from oven and enjoy warm with a scoop of ice cream or fresh whipped cream!

Delicious!!! Had so many zucchini from our garden ,  this sounded like a good recipe to try.  Will make again.

It comes out fairly sweet but you can reduce the sugar.
