Let puff pastry dough sit for 15 minutes at room temperature. Heat oil in a skillet over medium-high. Add beef and onion; cook and stir, breaking ground beef into crumbles, until starting to brown, about 3 minutes. Flip empanadas and continue cooking until light golden brown, about 5 minutes more. Repeat with remaining empanadas.
